1/2 cup shredded white cheddar cheese
1/2 cup shredded provolone cheese
1/2 cup cooked lobster meat or 1 can (6-1/2 ounces) flaked canned lobster meat, drained
1/3 cup finely chopped sweet red pepper
2 tablespoons finely chopped green onion (white portion only)
2 tablespoons mayonnaise
Dash seafood seasoning
2 packages (1.9 ounces each) frozen miniature phyllo tart shells
Paprika, optional

Steps:

  • Preheat oven to 350°. In a small bowl, combine the first 7 ingredients. Spoon into tart shells. Place on an ungreased baking sheet. Bake until shells are lightly browned and filling is heated through, 12-15 minutes. If desired, sprinkle with paprika before serving.

2 tubes (8 ounces each) refrigerated crescent rolls
6 ounces Brie cheese, rind removed
1 cup whole-berry cranberry sauce
1/2 cup chopped pecans

Steps:

  • Preheat oven to 375°. Unroll one tube of crescent dough into one long rectangle; press perforations to seal. Cut into 24 pieces; lightly press each piece onto the bottom and up sides of an ungreased mini-muffin cup. Repeat with remaining crescent dough., Place about 1 rounded teaspoon cheese in each cup; top with cranberry sauce and sprinkle with pecans. Bake 10-15 minutes or until golden brown. Serve warm.

24 mini phyllo tart shells
¼ pound ripe Brie cheese, cut into 24 small chunks
1 ripe pear, cut into small dice
2 sprigs fresh thyme
2 tablespoons honey, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a jelly roll pan with parchment paper.
  • Arrange tart shells onto prepared pan. Put a piece of Brie cheese into each shell. Sprinkle diced pear and a couple thyme leaves into each shell and drizzle with honey.
  • Bake in preheated oven until cheese is melted and tarts are golden, 12 to 15 minutes.

4 ounces plain flour
Salt
1 ounce butter
1 ounce lard
1 tablespoon freshly grated Parmesan cheese, optional
Cold water
1 pound tomatoes
2 tablespoons olive oil
1 medium onion, finely chopped
1 clove garlic, finely chopped
1 tablespoon oregano
Salt and freshly ground black pepper
6 anchovy fillets, chopped or small can of tuna or 4-ounce piece fresh tuna
1 ounce strong Cheddar, grated
2 large eggs
1/4 (1/2 cup) pint single cream
1 ounce stoned black olives, chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Sift the flour and salt together and rub in the butter and lard until the mixture resembles bread crumbs. Add the cheese and bind with a little cold water. Chill for 30 minutes and then roll out to line an 8-inch flan dish. Chill again for 30 minutes.
  • Cover with foil and baking beans and bake blind in the oven for 10 minutes. Remove foil and baking beans and cook for a further 5 minutes. (If continuing with the recipe leave the oven on.)
  • Peel the tomatoes, seed, slice, strain and save the juice.
  • In a small pan heat the oil over a low heat and saute the onion until soft, add the garlic and oregano and cook for 1 minute. Add the tomato juice, season and cook until the juice is almost absorbed. Put this in the pastry case (shell) and cover with the fish. (If you are using fresh tuna cook it in a pan with a little more oil for about 2 minutes turning as necessary, then flake it.) Cover with the tomatoes and grated cheese. Whisk the eggs with the cream and pour over the tomatoes, scattering the olives on top. Bake in the oven for 15 to 20 minutes.
  • Serve hot or cold with a green salad, or a salad of green beans, or deep fried French Beans which you have dipped in batter

WARM BRIE WITH FUJI APPLE, PEAR AND MELBA TOASTS



Warm Brie with Fuji Apple, Pear and Melba Toasts image

1 large Fugi apple
1 large red or brown skinned pear, slightly underripe
A wedge lemon
1 pound individual wheel brie cheese
24 sesame Melba toast rounds, any brand

Steps:

  • Quarter apple and pear lengthwise and cut into each quarter on an angle to remove the core. Slice apple and pear into 1/4-inch thick slices. Squeeze a little lemon juice over the fruit to slow browning.
  • Cut the top rind off the brie and place in the microwave on high for 60 seconds. Depending on the ripeness of the cheese, it will take 60 to 90 seconds on high to heat and melt. If brie is not yet soft and hot after 1 minute, place it back in microwave for another 30 seconds on high.
  • Serve the softened, warm brie with a platter of fruit and Melba toasts for dipping and spreading. Reheat brie if it tightens up for 20 to 30 seconds at a time on high.

LEMON BERRY TARTLETS

1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
1/4 cup lemon juice
2 teaspoons grated lemon peel
1 cup frozen creamy whipped topping, thawed
6 mini graham cracker pie crusts
1/2 cup Smucker's Orchard's Finest Northwoods Blueberry Preserves

Steps:

  • 1 WHISK sweetened condensed milk, lemon juice and lemon peel until blended and mixture begins to thicken. Fold in whipped topping.
  • 2 DIVIDE evenly between the 6 mini pie crusts. Press down in center with a spoon to make a depression about 1-inch deep. Refrigerate for 2 hours or until firm. Make depression again a little bit deeper. Fill each tartlet with a heaping tablespoon of preserves. Serve immediately.

8 sheets phyllo dough (based on 18 by 14-inch sheets which are often sold in packs of 18 to 20)
1/2 cup melted butter
2 lobster tails, poached and finely chopped
1 small wheel (about 8-ounces) brie cheese, cut into small pieces
1 teaspoon chopped fresh parsley leaves
2 teaspoons chopped fresh chives
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F. If phyllo was frozen, make sure it is completely defrosted before handling it. Once removed from package, you will need to cover phyllo with waxed paper and a damp towel to prevent it from drying out. Lay out each dough sheet and brush on butter. Fold in half, brush again, fold in half, cut in half. (Each dough sheet should yield 2 rectangles, roughly 4 by 4 inches, so you will have 16 squares.) In mixing bowl, combine lobster, cheese, parsley and chives and season with salt and pepper. Place mixture on each square of dough. Bring up corners into smaller square packet and brush more butter on top. Bake in oven until golden brown.

1 French baguette, sliced 1/2 inch thick diagonally
12 ounces good French Brie, cut into 4 wedges
6 tablespoons honey
3 tablespoons roasted and salted pistachios
4 ounces mache leaves (8 to 10 ounces with roots attached)
1 tablespoon syrupy aged balsamic vinegar
3 tablespoons good olive oil
Kosher salt and freshly ground black pepper
1 large Granny Smith apple, cored and thinly sliced

Steps:

  • Preheat the oven to 350 degrees. Place the sliced bread on a sheet pan and bake for 6 to 8 minutes, until crisp.
  • Arrange the 4 wedges of Brie snugly in one layer in a glass or ceramic baking dish. Drizzle the honey over the wedges and then scatter the pistachios over the top. Bake for 3 to 5 minutes (depending on the ripeness of the Brie) until the Brie just begins to ooze but isn't melted. Be careful-it happens fast!
  • Place the mache in a large bowl and toss it gently with the balsamic vinegar and olive oil. Sprinkle with salt and pepper. Divide the salad among 4 large salad plates and place a piece of the warm Brie with the pistachios in the center of each plate. Place a quarter of the apple slices on each plate fanned out on one side of the Brie. Place 2 or 3 slices of toasted baguette on the other side of the Brie and sprinkle generously with salt and pepper. Drizzle with the honey still in the baking dish and serve immediately.

CORN AND LOBSTER TART

Lobster and corn. It does not take much more than those eminently compatible ingredients to recognize summer. You hardly need a recipe to prepare steamed or broiled lobsters and serve them with corn on the cob. But you do need more than pocket change. Here, you can satisfy four at lunch or six with a first course at dinner, relying on a single, modest lobster. This quiche-like tart, meant to accompany a glass of chilled chardonnay, can be served warm or at room temperature.

Pastry for a 9-inch tart
Flour for rolling
1 tablespoon unsalted butter
1/2 cup finely chopped onion
1½ cups fresh corn kernels (from about 2 ears)
1 tablespoon finely chopped fresh tarragon
Pinch cayenne
3/4 cup whole milk
2 large eggs, beaten
1/4 cup heavy cream
1 1 1/4-pound lobster boiled or steamed, shucked and diced
Grated zest of 1 lemon
Salt and ground black pepper

Steps:

  • Heat oven to 425 degrees. Roll out pastry on a lightly floured surface and fit into a 9-inch straight-sided tart pan or a pie pan. Prick bottom, line with foil and add pastry weights. Bake 10 minutes, until pastry starts to look dry. Remove foil and weights and bake 5 or so minutes more, until pastry is lightly colored. Remove from oven but leave oven on.
  • Melt butter in a saucepan. Add onion and cook on low until soft but not brown, about 5 minutes. Stir in corn, tarragon and cayenne. Stir in milk. Bring to a simmer. Remove from heat. In a bowl, beat eggs and cream together and slowly stir into the pan. Add lobster. Stir in lemon zest and season with salt and pepper.
  • Ladle mixture into prepared tart shell. Bake 10 minutes. Reduce heat to 350 degrees and bake about 20 minutes more, until top is firm to the touch and very lightly browned, and a knife inserted in the filling comes out clean. Remove from oven and let rest 10 minutes before serving.

12 miniature tart shells, frozen
1 (200 g) package brie cheese
red pepper jelly

Steps:

  • Bake shells according to package directions. Let cool.
  • Divide cheese in 12 pieces of equal size. Place in cooked shells.
  • Bake in a 350°F oven for 15 minutes until cheese is melted.
  • Top each tart with 1 Tsp of red pepper jelly.
  • Serve and enjoy!
  • Tip:.
  • You might prefer to remove the rind off the cheese.
  • Shells can be baked and stored in the freezer for up to 1 week.
  • Cranberry sauce is a good substitute for red pepper jelly.
  • Ready to serve miniature croustades found at the Supermarket are ideal containers for these tarts and a wide range of other fillings. No baking required before filling.
