This healthy lemon chicken salad is kissed with lemon zest, fresh dill, red onion, all combined with a touch of creamy Greek yogurt!

2 1/2 cups cooked and diced chicken breast (rotisserie is great)
2 tablespoons finely minced red onion
1 teaspoon, heaping, grated lemon zest
1/4 cup plus 2 tablespoons plain, full-fat Greek yogurt
1/4 teaspoon, heaping, salt
Pinch or two black pepper
2 teaspoons olive oil
1 tablespoon, heaping, chopped fresh dill
Pita bread, crackers or fresh greens to serve with

Steps:

  • Begin by gathering and prepping all of your ingredients according to the ingredient list above to have ready and organized for use.
  • Add the diced chicken, plus the remainder of the ingredients up to and including the olive oil, to a medium size bowl and gently toss/fold to coat everything.
  • Sprinkle in the dill, and fold once more to incorporate. Check the seasoning, and add any additional salt/pepper, if needed.
  • Cover the salad and chill until ready to serve. When ready to enjoy, stuff the chicken salad into pita pockets with some greens, or serve with crackers on the side, or even over chopped greens.

4 boneless skinless chicken breasts , cut into strips
zest and juice of 1 lemon
1 tsp dried or a few sprigs of fresh thyme
3 tbsp oil
150g bag of mixed salad leaves or 2 heads of Little Gem, pulled apart
1 small red onion , halved and thinly sliced
squeeze of garlic paste or 1 garlic clove , crushed
handful pitted black olives , halved

Steps:

  • Put the chicken pieces into a bowl, add the lemon zest, thyme, plenty of black pepper and salt to taste, then mix well with your hands. Heat 1 tbsp oil in a pan then fry the chicken for 8-10 mins, until golden and cooked through. Meanwhile, spread the leaves and onion over a large platter or in a big salad bowl.
  • Add the garlic paste and olives to the pan, then fry for 1 min more. Spoon the chicken and olives onto the leaves. Take the pan off the heat then add the rest of the oil and lemon juice. Stir together well, scraping off any bits from the bottom of the pan. Check the seasoning, then pour over the chicken and salad. Serve with crusty bread.

1/3 cup Miracle Whip
1/3 cup sour cream
1-1/2 teaspoons lemon juice
3/4 teaspoon grated lemon zest
1/2 teaspoon salt
1/4 teaspoon dried tarragon
1/8 teaspoon pepper
2 cups diced cooked chicken
1/2 cup thinly sliced celery
1/2 cup chopped green pepper
1 large red apple, cut into 1/2-inch pieces

1 honeydew melon
6 cups cubed, cooked chicken meat
2 cups chopped celery
2 cups seedless grapes
1 (8 ounce) can sliced water chestnuts
½ cup sour cream
½ cup plain yogurt
1 ½ teaspoons curry powder
salt and pepper to taste

Steps:

  • Cut melon in half, and remove seeds. With a melon baller, scoop out melon balls; place in a large salad bowl.
  • Add chicken, celery, and grapes to melon. Add water chestnuts if desired.
  • In a small bowl, mix together, sour cream, yogurt, and curry powder. Gently stir into salad. Season with salt and pepper to taste. Serve.

4 boneless chicken breats
2 tsp sesame oil
1 T rice vinegar
1/2 homeydew
1 T oil
1 egg white
1T cornstarch
1T chopped gr onion
SAUCE
Juice and zest of each 1 lemon and l lime
3-4 T sugar
1/2 c water
2 t cornstarch

Steps:

  • Marinate chicken in oil, rice vin. S&P. Leave about 15 min. Cube meon, and sprinkle with lemon juice. Beat egg white, 1 T cornstarch, and add to chicken. Heat oil and saute chicken. SAUCE Combine citrus juice and zest with sugar and water. Heat gentlym, stirring to dissolve sugar. Mix 2 tsp cornstarch with little liquid, and stir into sauce. Cook til thickened. Slice chicken diagonally. Serve with melon and sauce
