Steps:
- Preheat oven to 350 degrees.
- Put pecans, butter, brown sugar, 1 teaspoons salt, and 1/4 teaspoons cayenne pepper into a medium bowl; toss to combine. Spread in a single layer on a rimmed baking sheet. Bake until fragrant and sugar has melted, about 5 minutes. Let cool completely.
- Process cream cheese, cheddar, and cream in food processor until well combined. Transfer to medium bowl. Stir in scallions, remaining 1/2 teaspoons salt, and remaining pinch cayenne pepper.
- Spoon cheese mixture into 2 round baking dishes (6-7" in diameter and about 1" deep). Arrange glazed pecans on top. Bake until dip is just heated through, about 10 minutes.

WARM BLUE CHEESE DIP WITH GARLIC AND BACON
Even people that don't like blue cheese love this wonderful hot dip. It can be served with vegetables, but I find that people like it best with French bread.

Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from skillet, drain on paper towels and crumble.
- Place garlic in hot bacon grease. Cook and stir until soft, about 1 minute. Remove from heat.
- Preheat oven to 350 degrees F (175 degrees C). Place cream cheese and half-and-half in a medium bowl. Beat with an electric mixer until blended. Stir in bacon, garlic, blue cheese and chives. Transfer mixture to a medium baking dish.
- Bake covered in the preheated oven 30 minutes, or until lightly browned.

PECAN BLUE-CHEESE SPREAD
I bought my Cuisinart back in 1983. This is the very first recipe I made in it, and have made it many times since.

- Place nuts in food processor and process until finely chopped; it takes about 10 seconds.
- Add both cheeses.
- Process until very smooth; again, it should only take about 10 seconds.
- Pack into a bowl and refrigerate until serving; this is best if allowed to chill for a few hours.
- A dribble of brandy or port added when you add the cheeses doesn't hurt.
BLUE CHEESE AND PECAN STRUDEL

- Make the clarified butter: Melt the butter in a small saucepan over medium-low heat and cook until the bubbling starts to slow down; remove from the heat and let cool. Skim the white foam off the surface and discard. Spoon the remaining butter into a bowl, discarding the solids at the bottom of the saucepan.
- Whisk the egg white, cream cheese and 1/4 teaspoon pepper in a medium bowl until smooth. Gently fold in the blue cheese and candied pecans with a rubber spatula.
- Lay out 1 sheet of phyllo on a large cutting board or work surface with a long side in front of you. (Keep the remaining phyllo covered with a slightly damp towel to prevent it from drying out.) Brush the phyllo lightly with some of the clarified butter. Sprinkle evenly with 2 teaspoons breadcrumbs. Repeat to make 5 more layers (phyllo, clarified butter, breadcrumbs), stacking the phyllo as you go. (Reserve some clarified butter to brush on the strudel before baking.)
- Spoon the cheese mixture in a strip down the length of the phyllo, about 1 inch from the long side closest to you. Starting from that side, roll up the phyllo to make a thin log. Wrap the log in plastic wrap or cover with a towel and refrigerate until the filling is firm, at least 1 hour.
- Position a rack in the lower third of the oven and preheat to 400 degrees F. Place the phyllo roll seam-side down on a parchment-lined baking sheet. Brush all over with the remaining clarified butter. Sprinkle with pepper. Bake, rotating the pan halfway through, until the phyllo is crisp and golden brown, about 25 minutes. Let cool about 15 minutes, then transfer to a cutting board to slice. Lightly drizzle the slices with honey and serve warm or at room temperature.

- Beat cream cheese in medium bowl until smooth. Beat in dressing. Stir in 1 cup pecans and crumbled blue cheese. Season to taste with salt and pepper. Transfer dip to decorative bowl. Sprinkle remaining pecans around edges of dip. (Can be made 1 day ahead. Cover and chill.)
- Set dip in center of platter. Surround with cut-up vegetables and fruits; serve.
