WARM APPLE SAUTE WITH ICE CREAM

Steps:
- 1. Preheat a large skillet over medium heat. Add butter and stir until melted. Add apple slices and saute 6 to 8 minutes.
- 2. Add brown sugar, lemon juice, cinnamon, nutmeg and dried cranberries. Cook for 2 minutes more.
- 3. Scoop the ice cream into dessert bowls and top with the warm apples. Refrigerate any leftovers. May substitute raisins for cranberries if you prefer.
SAUTEED APPLES
This is great for any meal, but is great for breakfast. The syrup from the apples is great on homemade waffles. You may add raisins to the sauce if you wish.

- In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes.
- Dissolve cornstarch in water; add to skillet. Stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from heat and serve warm.

ICE CREAM TOPPED WITH APPLESAUCE AND CINNAMON

- Warm the Applesauce on the stove or in a microwave. Place the ice cream in a dish. Top with the Applesauce, sprinkle with cinnamon and top with whipped cream if desired.
- Throw the apples, apple juice and lemon juice into a pan and bring it to the boil over medium-high heat. Lower the heat and simmer until the apples are soft, about 15 minutes. Stir through the sugar and mix until melted. Add the cinnamon and stir through.
- Puree the mixture in a food processor, blender or food mill. If not using right away, leave to cool and then refrigerate.
ROASTED APPLESAUCE
The apples and sugar caramelize on the bottom of the pan as they roast, giving the finished applesauce a marvelous depth of flavor.

- Preheat oven to 425 degrees. Combine water, sugar, lemon juice, and salt in a 9-by-13-inch baking dish.
