3 Tbsp butter
4 large apples (cored, peeled and sliced)
1/4 c brown sugar
1 Tbsp lemon juice
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 c dried cranberries
vanilla ice cream

Steps:

  • 1. Preheat a large skillet over medium heat. Add butter and stir until melted. Add apple slices and saute 6 to 8 minutes.
  • 2. Add brown sugar, lemon juice, cinnamon, nutmeg and dried cranberries. Cook for 2 minutes more.
  • 3. Scoop the ice cream into dessert bowls and top with the warm apples. Refrigerate any leftovers. May substitute raisins for cranberries if you prefer.

This is great for any meal, but is great for breakfast. The syrup from the apples is great on homemade waffles. You may add raisins to the sauce if you wish.

¼ cup butter
4 large tart apples - peeled, cored and sliced 1/4 inch thick
2 teaspoons cornstarch
½ cup cold water
½ cup brown sugar
½ teaspoon ground cinnamon

Steps:

  • In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes.
  • Dissolve cornstarch in water; add to skillet. Stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from heat and serve warm.

1/2 cup Applesauce, recipe follows
2 to 3 scoops vanilla or caramel (or both) ice cream
1 pinch cinnamon
Whipped cream, for topping, optional
6 pounds mixed apple varieties (Gala, Honeycrisp, Golden Delicious), peeled, cored and cut into eighths
1 cup apple juice or water
Juice of 1/2 lemon
1/2 cup light brown sugar
1 teaspoon cinnamon

Steps:

  • Warm the Applesauce on the stove or in a microwave. Place the ice cream in a dish. Top with the Applesauce, sprinkle with cinnamon and top with whipped cream if desired.
  • Throw the apples, apple juice and lemon juice into a pan and bring it to the boil over medium-high heat. Lower the heat and simmer until the apples are soft, about 15 minutes. Stir through the sugar and mix until melted. Add the cinnamon and stir through.
  • Puree the mixture in a food processor, blender or food mill. If not using right away, leave to cool and then refrigerate.

6 tablespoons packed light-brown sugar
1 teaspoon fresh lemon juice
Pinch of coarse salt
2 tablespoons unsalted butter, cut into small pieces
3 pounds small assorted apples, such as Gala, McIntosh, or Fuji (about 10)
1/2 teaspoon ground cinnamon
Pinch of freshly grated nutmeg
Pinch of ground cloves

Steps:

  • Preheat oven to 425 degrees. Combine water, sugar, lemon juice, and salt in a 9-by-13-inch baking dish.
  • Scatter butter pieces over mixture, and top with apples. Roast until apples are very soft, 30 to 40 minutes.
  • Working in batches, pass apple mixture through the medium disk of a food mill and into a bowl. Stir in spices. Serve warm, at room temperature, or chilled.
