I got this recipe from a winery at a tasting. It is so delicious on French bread with some wine. For a chunkier consistency, you can fold in additional chopped walnuts at the end. I couldn't stop eating it at the tasting and neither could any of the other tasters!

1 cup walnuts
½ cup minced shallots
½ cup unsalted butter
¼ pound shiitake mushrooms, chopped
¼ pound crimini mushrooms, chopped
¼ pound portobello mushrooms, chopped
1 tablespoon roasted garlic puree
¼ cup chopped fresh Italian parsley
1 tablespoon chopped fresh thyme
½ teaspoon salt
½ teaspoon white pepper
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread walnuts in a single layer on a cookie sheet. Toast for 10 minutes, or until fragrant and lightly browned.
  • In a large saute pan, cook shallots in butter over medium heat until translucent. Then add chopped mushrooms, garlic, parsley, thyme, salt, and pepper. Cook, stirring often, until most of the liquid has evaporated.
  • Process toasted walnuts and olive oil in a blender or food processor until mixture forms a thick paste. Spoon in the cooked mushroom mixture, and process to desired texture.
  • Pack mixture into well-oiled ramekins or bowl. Cover with plastic wrap, and refrigerate for a few hours or overnight.

The words "vegetarian," "pate" and "caviar" don't necessarily go together, but this creamy, flavor-packed appetizer spreads like pate, and the tart bursts of pomegranate seeds are a little like caviar. This vegetarian (in fact, vegan) dish is inspired by the country of Georgia's dish pkhali, a spinach spread that can also be made with beets or mushrooms.

1 1/2 pounds fresh spinach (not baby), large stems removed
3/4 cup walnuts, plus more, chopped, for garnish
1/2 cup loosely packed fresh cilantro leaves
1/4 cup loosely packed fresh tarragon leaves
1/4 cup loosely packed fresh dill fronds
2 tablespoons white wine vinegar
3 scallions, roughly chopped
2 small cloves garlic, smashed
Kosher salt
1/4 teaspoon ground coriander
Pinch cayenne pepper
2 tablespoons pomegranate seeds
Crackers or crudites, for serving

Steps:

  • Special equipment: 5-inch ramekin
  • Bring a large pot of water to a boil. Line a 5-inch ramekin with plastic wrap, leaving at least a 2-inch overhang; smooth out the plastic in the ramekin as much as possible.
  • Add the spinach to the pot of water, stir to submerge and cook until wilted and tender, about 2 minutes. Drain and let cool completely. Squeeze every last drop of water out of the spinach, then finely chop. Transfer to a medium bowl.
  • Process the walnuts, 1/3 cup warm water, cilantro, tarragon, dill, vinegar, scallions, garlic, 1 1/4 teaspoons salt, coriander and cayenne in a food processor until the mixture is the consistency of mayonnaise.
  • Add the walnut-herb mixture to the bowl with the spinach, and stir to combine thoroughly. Spoon into the prepared ramekin, and pat down with the back of the spoon to compact. Cover with the plastic overhang, and refrigerate at least 4 hours up to overnight.
  • To serve, unwrap and invert onto a serving platter. Garnish with pomegranate seeds and chopped walnuts. Serve with crackers or crudites.

EGGPLANT-WALNUT PATÉ

1 large eggplant
1 cup walnut pieces
2 teaspoons fresh gingerroot, peeled, grated, and finely chopped
2 cloves garlic, mashed
1 tablespoon extra-virgin olive oil
1/8 teaspoon ground allspice
Salt and hot pepper sauce to taste

Steps:

  • 1. Preheat oven to 450 degrees F. Pierce the eggplant with a fork in several places and bake until very soft, about 45 minutes. 2. While the eggplant is baking, grind the walnuts in a food processor until very fine, and set aside. 3. Remove the eggplant from oven, slash to let steam escape, drain off any liquid, and scrape the pulp into a food processor with the gingerroot, garlic, and olive oil. Process until smooth. 4. Add the ground walnuts and allspice, and process until smooth. 5. Season to taste with the salt and hot pepper sauce. Spoon into a small loaf dish and chill several hours or until firm.

1 large yellow onion, halved and thinly sliced into half moons
2 fresh thyme sprigs
3/4 lb cremini mushrooms (4-1/2 cups) or 3/4 lb baby bella mushroom, cut into medium dice (4-1/2 cups)
1/2 lb shiitake mushroom, stems removed, caps cut into medium dice (2 cups)
kosher salt and freshly ground black pepper
2 tablespoons dry sherry
1 cup walnuts, toasted
1 small clove garlic, minced
1/2 teaspoon fresh lemon juice, more to taste
1/4 teaspoon finely grated lemon zest
2 hard-cooked eggs, peeled and roughly chopped
extra-virgin olive oil, for drizzling
flaky sea salt, for garnish
thinly sliced scallion greens or chives, for garnish

Steps:

  • Melt the butter in a 12-inch skillet over medium heat. Add the onion and thyme and cook, stirring occasionally, until the onion is dark brown, 15 to 20 minutes-it should be darker than golden, but not black. Stir in the cremini and shiitake, 1/2 teaspoons salt, and 1/2 teaspoons pepper; cook, stirring occasionally, until the mushrooms are soft and golden and the liquid they release has evaporated, 8 to 10 minutes. Add the sherry and cook, scraping up the browned bits from the pan, until almost evaporated, about 1 minute. Let the mixture cool to room temperature.
  • Transfer half of the mushroom mixture to a food processor. Add the walnuts, garlic, lemon juice, zest, 3/4 teaspoons salt, and 1/2 teaspoons pepper. Process until smooth, stopping occasionally to scrape down the sides of the bowl. Add the remaining mushroom mixture and the eggs. Pulse until coarsely chopped. 1/4 cup balsamic vinegar, divided
1 (8-ounce) package cremini mushrooms
1 tablespoon shallots, diced
2 garlic cloves, minced

1/4 teaspoon salt
1/8 teaspoon white pepper
baked tortilla chips or pita bread to serve

Steps:

  • Preheat oven to 350ºF. Combine water and lentils in a small saucepan; bring to a boil. Reduce heat; simmer 20 minutes or until lentils are soft. Combine 2 tablespoons vinegar, mushrooms, shallots, and garlic in a bowl. Place mushroom mixture on a jelly-roll pan, and bake at 350ºF for 15 minutes. Combine lentils, mushroom mixture, 2 tablespoons vinegar, walnuts, basil, salt, and pepper in a food processor; process until smooth. Serve with baked tortilla chips or pita bread, if desired.

I found this recipe on the safe.org.nz site and found it too dry - the addition of low fat cream cheese made it just what I wanted - I take it to work to spread on toasted bagels for lunch. I use two 400g tins of lentils, rinsed and drained. I guess it could be made vegan by swapping the cheese for tofu.

I was inspired to make this after both seeing a recipe on Mirj's blog, and trying a walnut-lentil pate at Angelica Kitchen. This is a completely vegan version. Regular paprika works too, but the smoked paprika really makes this zing! The long time the onions take is worth it.

4 large onions, chopped
2 -3 tablespoons olive oil
1 cup brown lentils (dry)
3/4 cup shelled walnuts
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1/2 teaspoon smoked paprika

Steps:

  • Chop up the onions in a food processor. I like mine super-fine for this.
  • Heat the oil in a large pan, and let the onions cook for a VERY long time, about an hour, until they're very brown.
  • While the onions are cooking, cook the lentils. Lightly salt about a quart of water and soak the lentils for about 20-25 minutes until soft but not too soft.
  • Grind the walnuts in a food processor until finely ground, but not hard enough to make the oils separate.
  • Add the onions, and all the olive oil they sauteed inches Pulse a few times.
  • Add the lentils and sea salt, pepper, and paprika and pulse until desired consistency is reached.
  • Serve with rice crackers, celery, and carrot sticks or other goodies good for dipping.

1 tablespoon fresh lemon juice (1 lemon)

Steps:

  • Soak walnuts in water for 6-8 hours.
  • Drain them and add remaining ingredients to food processor. Process into paste. Stop occasionally to scrape down the sides with a rubber spatula. Salt to taste.
  • Transfer to a serving dish and serve with crackers. I like Whole Foods 365 brand sesame crackers.
  • If not eating right away, store in a sealed container in the refrigerator for up to 5 days (if it will last that long!).

1 cup sliced cremini mushrooms
1 cup sliced shiitaki mushrooms
½ ounce dried chanterelles, soaked in ½ cup boiling water for 30 minutes
1 cup red wine
1 teaspoon sea salt
2 teaspoons coarsely chopped fresh sage
1 teaspoon coarsely chopped fresh thyme
2 teaspoon coarsely chopped fresh rosemary
1 teaspoon ground nutmeg
½ teaspoon ground pepper
1 Tablespoon nutritional yeast
1 cup walnuts, toasted
1 Tablespoon tamari soy sauce
2 teaspoons balsamic vinegar
2 ½ cups water
2 teaspoons powdered agar agar, or 2 Tablespoons agar agar flakes

Steps:

  • 1. To prepare the toasted walnuts, first soak in two cups of warm water for 30 minutes. Drain. Place nuts on a baking sheet and bake in a 350° oven for 30 minutes, or until dry and light brown. Rotate every 10 minutes. Allow nuts to cool to room temperature before serving. 2. In a large nonstick skillet or sauté pan, cook the red onion, garlic, and mushrooms in the red wine, the chanterelle soaking liquid, and sea salt over medium heat, stirring often, until all the moisture has evaporated. Add the chanterelles and cook until heated through. Remove from the heat. Add the sage, thyme, rosemary, nutmeg, pepper, and yeast and stir well to incorporate. Transfer to a blender. Add the walnuts, tamari, vinegar, and 1½ cups of the water. Blend until smooth. 3. In a small saucepan, bring the remaining 1 cup water to a boil. Whisk in the agar agar and turn the heat to low. Continue whisking until the agar agar is thoroughly dissolved, about 5 to 7 minutes. Add to the mushroom mixture and blend until incorporated. 4. Test the paté to ensure that it sets up by refrigerating 1 tablespoonful for 10 minutes. If the test paté isn't firm by then, dissolve another 2 tsp agar agar powder or 1 Tbsp agar agar flakes in boiling water and add to the paté. Spread in an 8 x 5-inch loaf pan or 8-cup mold. Refrigerate for at least 2 hours. Unmold and cut into slices and serve.

Process until smooth, adding the vegetable broth 1 tablespoon at a time as needed. Continue to puree the ingredients until the pate resembles a smooth, thick and spreadable paste. 1 cup dark red kidney beans, soaked overnight and rinsed well
2 cups water
1/4 white onion, minced
1 bay leaf
3/4 cup walnuts, lightly toasted
4 tablespoons butter
1/2 teaspoon chopped garlic
Salt and freshly ground black pepper
1 tablespoon freshly chopped dill
1 tablespoon freshly chopped mint or basil leaves
1 tablespoon freshly chopped flat-leaf parsley
1/4 cup pomegranate seeds, about 1/2 of a pomegranate, plus more for garnish
Toasted walnuts, for garnish

Steps:

  • Bring beans and water to a boil with onion and bay leaf. Simmer until tender. Drain well and discard bay leaf. In a food processor fitted with a metal blade, puree with walnuts, butter, chopped garlic, salt and pepper, to taste, until smooth and creamy. Mix chopped herbs together and blend half of them into the beans.
  • Season well and spread onto a small baking sheet, lined with plastic wrap. Cool completely.
  • Sprinkle generously with pomegranate seeds and remaining fresh herbs then roll into logs, using the plastic wrap to help roll. Wrap tightly and chill again.
  • Slice and garnish with walnuts and pomegranate seeds.

8 ounces white mushrooms, sliced
1 onion, chopped
1 cup walnuts

  • Heat oil over medium heat and saute onions and mushrooms for 2 minutes.
  • Add water, cover pan, and cook for 8 minutes over medium heat.
  • There should be a small amount of water left in the pan at this time.

2 c. Whole milk
2 tbsp. Olive oil or butter
1 tsp. Olive oil or cooking spray
3 cloves garlic, chopped
1 med. Onion, diced
1 pkg.(½ cup) Walnuts, toasted
3 oz. Raisins
3 oz. Black olives
1 ¼ c. Merlot
1 tsp each (dry): Rosemary
Thyme
Tarragon
Parsley
Sage
½ tsp. Each salt and pepper
Additional walnuts and raisins for garnish (optional)
Crumbled bleu cheese for garnish (optional)

Steps:

  • Drain chicken livers and soak in milk for about 15 minutes. Drain milk and discard. Heat olive oil or butter in skillet over med-high heat. Add garlic, onion and liver. Sautee' until liver is only slightly pink, and onions are soft. Drain excess liquid. Meanwhile, place 1 cup of the merlot and the raisins in a small saucepan, and bring to a boil. Cover and reduce heat to low for about 10 minutes or until raisins are soft. Drain merlot and discard. In food processor, combine liver and onion mixture, toasted walnuts, raisins, black olives, ¼ cup of merlot, the dry herbs, and salt and pepper. Process until smooth. Coat the inside of a 5 inch custard dish, or jello mold with olive oil or cooking spray. Line with plastic wrap. Spoon liver mixture into dish. Fill to the edge of dish, and smooth with back of spoon. Cover, and refrigerate overnight, or minimum 4-5 hours, until mixture is "set". Remove cover, and place saucer or cake plate over the custard dish and flip upside down. Remove custard dish and plastic wrap. Garnish with additional walnuts, raisins and bleu cheese, if desired. Serve with crackers or fresh vegetables.

1 cup walnut pieces
1 1/2 cups cooked cannellini beans or 1 15 oz. can, drained
2 Tbls. lemon juice
2 cloves garlic
2 Tsp. olive oil

Steps:

  • Bake walnuts in 350 degree oven for 7-10 minutes until browned. Transfer to food processor, add beans, lemon juice, garlic, oil and 1/4 cup water (optional - I didn't add and liked the thicker texture). Puree until smooth. Serving suggestion: spread whole wheat bread slices with walnut pate, top with roasted red pepper or fig or pear and add arugula or spinach.

This recipe happened by accident actually. I was experimenting with walnuts to create a walnut cheese. It tasted very good but the colour was nothing like cheese. Then I realised this tasted much more like pâté, especially if I change and add a few ingredients as well. And it worked amazingly well. This is one of my best recipes EVER, you should definitely try it - even if you don't like pâté, you will love this vegan walnut pâté.

INGREDIENTS: 75g walnuts 150ml water 2 tbsp corn starch 2 1/2 tbsp nutritional yeast 2 tbsp lemon juice 1 tbsp olive oil 2 1/2 tbsp soy sauce (unsweetened) 1/2 tsp miso paste 1/3 tsp garlic powder 1/3 tsp onion powder 1/3 tsp smoked paprika Pepper to t

Steps:

  • METHOD: This is really super easy! Add all ingredients to a food processor and blend for a couple of minutes until you get a very smooth paste. Then pour the mix into a pan on high to medium heat and heat up. Make sure you stir constantly so it doesn't burn. After a while the mixture will change consistency and turn into a paste. Cook for a couple of minutes longer and then transfer it to a flat dish. Pat down and even out with a spoon so you get a smooth surface. Let set in the fridge for 1.5 to 2 hours. 1 tablespoon freshly squeezed lemon juice
1 teaspoon extra-virgin olive oil
1 teaspoon tamari
1/4 teaspoon garlic powder
dash salt
1 tablespoon minced onion
1 tablespoon minced fresh parsley

Steps:
