This inventive combination of ingredients -- pate and fresh figs -- makes for scrumptious mini sandwiches.

4 thin slices white bread, crusts removed
3 tablespoons unsalted butter, preferably Danish, softened
4 leaves green-leaf lettuce, stemmed
16 slices (1 1/2 inch square, about 1/3 inch thick) duck liver pate with port jelly
4 fresh or dried black or white figs, quartered lengthwise
16 Candied Walnuts

Steps:

  • Spread 1 side of each bread slice with butter. Top each with a lettuce leaf; cut into quarters. Top each quarter with a slice of pate, a fig quarter, and a walnut.

Number Of Ingredients 5

1 cup walnut pieces
1 1/2 cups cooked cannellini beans or 1 15 oz. can, drained
2 Tbls. lemon juice
2 cloves garlic
2 Tsp. olive oil

Steps:

  • Bake walnuts in 350 degree oven for 7-10 minutes until browned. Transfer to food processor, add beans, lemon juice, garlic, oil and 1/4 cup water (optional - I didn't add and liked the thicker texture). Puree until smooth. Serving suggestion: spread whole wheat bread slices with walnut pate, top with roasted red pepper or fig or pear and add arugula or spinach.
