2 pounds fresh green beans, washed and trimmed
2 tablespoons butter
1 cup chopped walnuts
2 tablespoons walnut oil
2 tablespoons minced fresh parsley
ground black pepper to taste
salt to taste

Steps:

  • Place the walnuts on an ungreased baking sheet. Bake at 350 degrees F (175 degrees C) for 5 to 8 minutes.
  • Cook beans in large pot of boiling salted water until just tender, about 5 minutes. Drain. Rinse beans with cold water, and drain well. Can be prepared 6 hours ahead. Let stand at room temperature.
  • Melt butter or margarine with oil in heavy large skillet over high heat. Add beans and toss until heated through, about 4 minutes. Season with salt and pepper. Add walnuts and parsley and toss. Transfer to bowl and serve.

1 3/4 pounds green beans, trimmed
1/2 cup sliced shallots
2 tablespoons walnut or olive oil
1/2 teaspoon finely grated lemon zest
1/2 cup Diamond of California® shelled walnuts
1/3 cup dried cranberries
1/4 cup water
2 tablespoons fresh lemon juice
1/4 cup Italian parsley leaves (optional)
Lemon wedges (optional)

Steps:

  • Preheat oven to 400°F. Combine green beans with shallots, oil and lemon zest on heavy large rimmed baking sheet; toss well to combine. Spread beans out into single layer and season with salt and pepper. Roast the beans in the oven until just beginning to brown, about 10 minutes. Stir the beans well and sprinkle with walnuts and cranberries. Continue to roast until beans are almost just tender, about 6 minutes longer. Add the water and lemon juice and continue roasting until the liquid evaporates and the green beans are lightly glazed, about 4 minutes longer. Garnish with parsley and lemon wedges if desired and serve.

2 lbs fresh green beans, trimmed and cut into 1 1/2 inch pieces
3 tablespoons butter
2 -3 roasted garlic cloves, minced
1 tablespoon fresh thyme or 1 teaspoon dried thyme
2 -3 tablespoons brown sugar (add enough depending on how sweet you like it)
2 1/4 teaspoons soy sauce
2 1/4 teaspoons Worcestershire sauce
4 slices cooked bacon, cut into 1 inch pieces
4 -5 tablespoons walnuts, toasted & sliced

Steps:

  • Place beans in large saucepan and cover with water.
  • Bring to a boil; cook, uncovered, for 8-10 minutes or until crisp-tender.
  • Meanwhile, melt butter in large skillet over low to medium heat.
  • Saute garlic for a couple of minutes until tender being careful not to burn; add the thyme.
  • Stir in the brown sugar, soy sauce and Worcestershire sauce.
  • Cook for a couple of minutes until sugar is dissolved.
  • Drain beans; add to the skillet.
  • Cook and stir for 2 minutes or unitl heated through.
  • Sprinkle with the bacon and walnuts; toss to coat.

1 pound fresh green beans, trimmed
1 tablespoon olive oil
¼ cup coarsely chopped walnuts
1 lemon, zested and juiced
1 teaspoon fresh thyme leaves
salt and freshly ground black pepper to taste

Steps:

  • Bring a large pot of water to a boil and drop in the green beans. Simmer over medium-high heat until beans are just barely cooked and still bright green, about 2 minutes. Drain immediately and rinse under cold water. Drain and set aside.
  • Heat oil in a skillet over medium heat. Add drained beans, nuts, lemon zest, lemon juice, and thyme. Continue to cook until most of the juice has evaporated, about 3 minutes. Season with salt and fresh ground pepper. Serve immediately.

Number Of Ingredients 8

2 lb green beans, whole & fresh
1/2 c walnut pieces
1 medium onion, sliced in strips lenghtwise
6 slice bacon, cut in 1/2 inch pieces (easier to cut if partially frozen)
1/2 tsp salt
1/2 tsp sugar
1-2 tsp Worcestershire sauce or soy sauce (I prefer Worcestershire; use 1 tsp for soy sauce)
1 tsp Tony Chachere's seasoning or your own Creole seasoning

Steps:

  • 1. Rinse beans, drain, and snip off stems ONLY.
  • 2. Place in saucepan and cover with water. Add salt and sugar. Bring to a boil over medium heat and cook for 3 minutes.
  • 3. Remove from heat and IMMEDIATELY bathe in cold water. Drain. Set aside.
  • 4. On medium fire, heat large skillet. Cook bacon until fat has covered the bottom of pan.
  • 5. Add walnut pieces and onion strips to the bacon and continue cooking until the bacon is crisp and onions are beginning to turn clear.
  • 6. Add green beans to the mixture, sprinkle with soy sauce OR Worchestershire sauce, and Tony's Seasoning. Using a spatula, gently scoop and turn veggies until well blended.
  • 7. Continue cooking over LOW heat for about 5 minutes. The beans should remain firm.
  • 8. Serve on a platter, arranging beans all in the same direction. Spoon bacon, walnut, and onion mixture on the top and around the edges. Use tongs for serving.
