We have lots of great cooks in our clan, so adding to our collection of family recipes is a tradition. I came up with these moist nut-covered brownies while doing my Christmas baking. Now everyone requests them.

Number Of Ingredients 13

3/4 cup butter, cubed
4 ounces unsweetened chocolate, chopped
4 large eggs
2 cups sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
WALNUT CRUNCH TOPPING:
3/4 cup packed brown sugar
1/4 cup butter, cubed
2 large eggs, lightly beaten
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
4 cups chopped walnuts

Steps:

  • In a microwave, melt butter and chocolate; stir until smooth. Cool slightly. In a large bowl, beat eggs and sugar; stir in vanilla and chocolate mixture. Stir in flour until well blended. Pour into a greased 13x9-in. baking pan; set aside., For topping, in a small saucepan, combine brown sugar and butter. Cook and stir over low heat until butter is melted. Stir in the eggs, flour and vanilla until well blended. Stir in nuts. , Spread evenly over brownie batter. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out with moist crumbs (do not overbake). Cool completely on a wire rack.

2 cups sugar
3/4 cup baking cocoa
1/2 teaspoon baking soda
2/3 cup vegetable oil, divided
1/2 cup boiling water
1-1/3 cups all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt
2 large eggs, room temperature
1 cup chopped walnuts

Steps:

  • In a bowl, combine the sugar, cocoa and baking soda. Add 1/3 cup oil and water; beat until smooth. Beat in the flour, vanilla, salt, eggs and remaining oil. Stir in walnuts , Spread into a greased 13x9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into bars.

Number Of Ingredients 8

5/8 cup unsalted grass-fed butter
3/4 cup dark unsweetened cocoa
3/4 cup sugar alcohol (xylitol)
2 large eggs, at room temperature
1/2 cup plus 2 tablespoons almond flour
1 1/4 cups walnuts, lightly chopped
1 teaspoon vanilla extract
1/2 teaspoon kosher salt

Steps:

  • Preheat oven to 350 degrees.
  • Grease an 8" x 8" cake pan with nonstick cooking spray and line with parchment, leaving a 2-inch overhang on all sides. Grease parchment.
  • Fill a medium pot with 2 inches of water and bring to a brisk simmer. Into a bowl that fits snuggly on top of the pot, combine butter, cocoa powder, and xylitol. Cook, stirring frequently, until butter is melted and xylitol is dissolved. Whisk until smooth. Remove from heat and add eggs, almond flour, walnuts, vanilla, and salt. Stir to combine. Transfer to prepared pan and smooth top.
  • Transfer to oven and bake until a toothpick inserted into the center comes out nearly clean, about 15 minutes. Note that the brownies will still look slightly underdone. For a truly fudgy texture be careful not to overbake! Remove from oven and let cool on a rack. Remove from pan and cut into squares.

2 ounces unsweetened chocolate (2 squares)
8 tablespoons (1 stick) unsalted butter
2 eggs
1 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup all-purpose flour
1/2 cup chopped walnuts

Steps:

  • Position the oven racks so that one rack is in the center of the oven. Preheat the oven to convection bake at 325°F. Butter an 8-inch square pan.
  • Place the chocolate and butter together in a small, heavy saucepan over the lowest heat and stir until melted together.
  • With an electric mixer, beat the eggs, sugar, vanilla, and salt on low speed in a mixing bowl until light. Add the chocolate and butter mixture. Stir in the flour and walnuts. Pour the batter into the baking pan.
  • Bake on the center rack for 20 to 25 minutes, until the brownies are just barely set. Remove from the oven and cool completely before cutting.
