1 cup butter, softened
2-1/4 cups sugar, divided
2 large eggs, room temperature
1/2 cup honey
2 tablespoons lemon juice
4 cups all-purpose flour
2-1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1 cup finely chopped walnuts, toasted

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and 1-1/2 cups sugar until light and fluffy, 5-7 minutes. Beat in eggs, honey and lemon juice. In another bowl, whisk flour, baking soda, cinnamon, salt and ginger; gradually beat into creamed mixture. Stir in walnuts., Shape dough into 1-in. balls; roll in remaining sugar. Place 2 in. apart on ungreased baking sheets. Bake until golden brown, 7-9 minutes. Cool on pans 1 minute. Remove to wire racks to cool. Store in an airtight container.

1 (16 ounce) carton Cool Whip (or use reduced fat)
1 (8 ounce) package cream cheese, softened (or use reduced fat)
1 (20 ounce) can crushed pineapple, drained
1 cup walnuts, chopped

Steps:

  • Mix Cool Whip and cream cheese with a mixer. Fold in pineapple and walnuts. Pour into a dish, garnish with chopped walnuts and chill overnight.
  • FOR VARIATIONS: a small package of pistachio pudding (or any other flavor you like), and some small marshmallows can be added to the ingredients above and its taste is excellent, too.
  • Another option is to add a small package of lime or lemon jello dissolved in a cup of boiling water. Let it set and add the ingredients above. Serve and decorate with some cherries on top.

2 eggs
2 cups packed brown sugar
2 teaspoons vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped walnuts

Steps:

  • In a bowl, beat the eggs, brown sugar and vanilla. Combine the flour, baking soda and salt; add to the egg mixture. Stir in walnuts. , Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 20-25 minutes or until bars pull away from edges of the pan. Cool on a wire rack.

CUSTARD CREAM

This recipe is both easy to make and very tasty. Adapted from Larousse Gastronomique. The custard is pourable, but noticeably thickened (similar to yoghurt). The amount of sugar gives it a reasonably sweet taste, but the original recipe is even sweeter, so adjust to taste :) You can use powdered sugar, but it's not absolutely necessary, the sugar will dissolve quite nicely in the milk. Cane sugar can also be used, but be sure to use a bit less of it. You can also use an extra egg yolk (instead of the corn starch).

250 ml milk
100 g sugar
3 egg yolks (slightly beaten)
1 teaspoon cornstarch
vanilla extract (or other flavouring, to taste)

Steps:

  • Put the milk over moderate heat in pan of suitable size (you don't want too much surface area, to prevent too much milk from evaporating).
  • Combine the egg yolks, sugar and corn starch in a heavy-bottomed pan. When the milk boils, turn down the heat.
  • Combine the milk with sugar/egg-yolk mixture bit by bit, making sure the mixture is completely dissolved in the milk. Now add the vanilla extract or other flavouring.
  • Now turn on the heat (not too high, but you don't have to be extremely careful either) and keep stirring until the mixture starts to boil again and then turn off the heat. I like to use a whisk, which helps to mix everything well and make the custard slightly fluffy.
  • If you feel the custard is too fluid even after it has boiled you can consider adding a bit more corn starch, but be very sure to mix it with some milk first, and be sure to not let the custard continue boiling for too long.
  • Pour the custard into serving dishes. The custard can be served while hot (but wait a few minutes, or you'll burn your mouth) or after letting it cool down (it will thicken slightly while cooling down).

1 cup graham cracker crumbs
3/4 cup sugar
1 teaspoon baking powder
2 eggs, separated
3 ounces walnuts, chopped
1 teaspoon vanilla
1 pinch salt

Steps:

  • Preheat oven to 350 degrees.
  • Butter and flour 8 x 8 inch baking pan.
  • In a large mixing bowl. Mix graham crackers crumbs, sugar and baking powder.
  • Beat egg yolks lightly, add to the dry ingredients and stir. Stir in walnuts and vanilla. Mix well.
  • Beat egg whites in a separate bowl with a pinch of salt until stiff. Gently fold into the graham cracker mixture. Pour into baking pan.
  • Bake untill golden brown, about 25 minutes.
  • Let cool in pan, cut into bars.
  • Serve with Ice cream or Whipped Cream on top.
