Walla Walla Onion Pie Recipe - (4/5) image

Number Of Ingredients 11

4 Walla Walla sweet onions or any sweet onions, thinly sliced
1 tablespoon olive oil
3 tablespoons butter
2 eggs
1 cup half and half
2 tablespoons flour
1 teaspoon. salt
1/8 teaspoon pepper
pinch of nutmeg
4 tablespoons Swiss cheese, grated
2 tablespoons fresh parsley, chopped, plus more to taste

Steps:

  • Pre-heat oven to 375°F. Prepare a 9-inch pie crust by lining it with parchment paper and filling it with beans or pie weights, then partially bake your pie crust for about 15 to 20 minutes in a 375°F oven. (Once you use and cook the beans as pie weights, they will no longer be edible, but you can continue to use them over and over as pie weights.) The pie crust should still be blonde but slightly golden on the edges, the middle should still be mostly raw. Remove from oven, remove pie weights, and set aside. Sauté onions in oil and butter over low heat until golden yellow. Beat together eggs, half and half, flour, salt, pepper, and nutmeg, then add onions and half of the grated cheese. Pour into curst; sprinkle remaining cheese on top. Place pie pan on baking tray and bake at 375°F for 25 to 30 minutes or until golden brown. Garnish with parsley and serve.

When I lived in Washington, we had these regularly when the Walla Walla "sweets" came in. They are deliciious and it's so simple! Makes a great appetizer or side dish.

1 walla walla onion (or sweet onion)
1 tablespoon butter
1 beef bouillon cube (I prefer Trader Joe's)

Steps:

  • Preheat oven to 350°F.
  • Peel outer dry skin from onion and wash.
  • Cut hole in top of onion large enough to put boullion cube and butter.
  • Fill with cube with butter then boullion cube or crystals.
  • Place onion on aluminum foil and wrap around onion with slight "vent" in top.
  • Bake for 1 hour.

Here in Washington state we are lucky to get Walla-Walla onions for a short time and this make a nice busy day casserole. I'm sure you could use any sweet onion and get the same taste. We serve it with boiled Kielbasa and a simple salad.

3 cups chopped onions
1/4 cup butter
1 tablespoon flour
1 cup chicken broth
1 (5 1/2 ounce) can evaporated milk
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup grated cheese
1 cup cracker crumb

Steps:

  • Boil onion chunks for 15 - 20 minutes; drain and rinse well.
  • Melt butter in saucepan on med.
  • Stir in flour, broth and milk, stirring until thickened.
  • Add onions, salt and pepper.
  • Place onion mixture in a 1-1/2 quart casserole dish,.
  • top with cheese and cracker crumbs.
  • Bake at 350°F for 40 minutes.
  • Serves 6.

I found this recipe in the Northwest Best Places Cookbook. I can't wait to make it for my onion loving husband.

4 medium walla walla onions
2/3 lb turkey sausage, casing removed
3/4 cup breadcrumbs
1/3 cup grated cheddar cheese
1 egg, lightly beaten
3 tablespoons milk
2 tablespoons parsley, chopped
1/2 teaspoon sugar
1/4 teaspoon cinnamon
salt and pepper
1 slice bacon, but in 4 pieces (optional)

Steps:

  • Peel the onions, then cut off a thin slice at the top and the bottom.
  • Boil the onions in a pot of hot water for 7 minutes; remove and drain well.
  • Let cool and then by either pushing or cutting with a small knife,remove the centers from the onions, leaving a shell of at least 4 layers. Set aside the onion centers.
  • Set the onion shells in a buttered baking dish.
  • Preheat oven to 350.
  • Fry the sausage in a skillet over medium heat until no pink shows, breaking up the pieces as it cooks.
  • Finely chop the reserved onion centers.
  • Combine the chopped onion, cooked sausage, bread crumbs, cheese, egg, milk, parsley, sugar and cinnamon, salt and pepper.
  • Stir to combine.
  • Stuff the onions shells with this mixture, topping each with a strip of bacon.
  • Bake about 30-40 minutes until stuffing is hot.

This wonderful combination of sweet onions, Swiss cheese, and rice is a tasty side dish for anything from grilled meats to roasted poultry. It is a favorite in our home, and you'll get rave reviews every time you serve it.

¾ cup uncooked basmati rice
5 cups water
¼ cup butter
3 pounds sweet onions, coarsely chopped
1 cup half-and-half cream
1 ½ teaspoons salt
2 cups shredded Swiss cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2-quart baking dish.
  • Bring water to a boil in a large saucepan, and sprinkle in the rice. Stir, reduce heat to low, and simmer the rice until it is half-cooked, about 5 minutes. Drain the rice, and set aside.
  • Melt the butter in a large skillet over medium heat, and cook and stir the onions until translucent but not browned, about 8 minutes. Mix the cooked onions and the butter from the skillet with the rice, and stir in the half-and-half, salt, and 1 3/4 cup of the Swiss cheese. Transfer the mixture to the prepared baking dish, and sprinkle the remaining 1/4 cup of Swiss cheese over the top.
  • Bake uncovered in the preheated oven until the rice is tender and the top is lightly browned, about 1 hour.

2 large vidalia onions, sliced thin
1/2 cup butter
1/2 cup sour cream
1/2 cup of grated parmesan cheese
1 cup Ritz cracker

Steps:

  • Preheat oven to 350 degrees.
  • Melt the butter in a large skillet, add onions and saute until soft.
  • Remove from heat and add sour cream.
  • Mix thoroughly.
  • Scoop half of the onion mixture into a small greased casserole dish.
  • Top with parmesan cheese.
  • Layer with remaining onion mixture and 1/4 cup parmesan cheese.
  • Sprinkle the top with Ritz crackers.
  • Bake for 30 minutes at 350 degrees.
