1 medium cabbage, shredded
2 cups halved seedless red grapes
2 cups miniature marshmallows
1-1/2 cups shredded carrots
1 can (20 ounces) pineapple tidbits, drained
1 large apple, diced
1 cup raisins
1 cup chopped walnuts
1-1/2 cups mayonnaise

Steps:

  • In a large bowl, combine the first eight ingredients. Add mayonnaise; toss to coat.

I came up with this recipe as a way to serve something crunchy and fruity with a touch of sweetness. 8 cups shredded cabbage
1 cup vanilla yogurt
1/2 cup mayonnaise
1/4 cup orange juice
2 tablespoons cider vinegar
2 large red apples, chopped
2 cups green grapes, halved
2 celery ribs, thinly sliced
3/4 cup chopped walnuts, toasted
1/2 cup golden raisins
1/2 cup chopped dried apricots

Steps:

  • Place cabbage in a large bowl. In another bowl, whisk yogurt, mayonnaise, orange juice and vinegar until combined. Pour over cabbage; toss to coat. Stir in remaining ingredients. Refrigerate until serving.

My dad always made this for Thanksgiving and Christmas. He called it Waldorf Salad, but it is really a cabbage salad 'Waldorf style'.

¼ head savoy cabbage, thinly sliced
4 apples, cored and diced with peel
½ cup finely chopped walnuts
6 stalks celery, diced
⅓ cup mayonnaise
1 tablespoon white sugar
½ teaspoon salt

Steps:

  • Use a chef's knife to slice cabbage into thin pieces 1 to 2 inches long. Do not use the large ribs of the cabbage, as they are too strongly flavored.
  • In a large bowl, toss together the cabbage, apples, walnuts, celery, mayonnaise, sugar and salt until evenly coated. Serve immediately or store in the refrigerator for up to one day.

1 large granny smith or other tart green apple, cored but unpeeled
1 large delicious or other red apple, cored but unpeeled
1 large golden delicious apple, cored but unpeeled
2 tablespoon(s) lemon juice
2 cup(s) shredded red cabbage (about 1/4 pound)
2 - stalks celery
1/3 cup(s) mayonnaise
1/3 cup(s) plain yogurt
2 tablespoon(s) cider or apple juice
1 teaspoon(s) dijon mustard
2/3 cup(s) raisins
1/2 cup(s) chopped walnuts

Steps:

  • Dice the apples. Place them in a salad bowl and toss with the lemon juice. Finely shred the cabbage. Dice the celery.
  • In a small bowl, combine the mayonnaise, yogurt, cider and mustard. Add the cabbage, celery, raisins, walnuts and dressing to the apples in the salad bowl and toss to combine. You could also add turkey or chicken to it as well. Enjoy!
