For a creamy, crunchy and sweet dip, just let Neufchatel cheese, honey, chopped apples and walnut pieces do what they do best. This dip's a keeper!

Yield Makes 16 servings, 2 Tbsp. dip and 17 crackers each.

Number Of Ingredients 7

1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened
3 Tbsp. honey
2 Tbsp. lemon juice
1/8 tsp. ground cinnamon
1 large red apple, finely chopped (about 1-1/2 cups)
1/4 cup finely chopped walnut pieces
thin wheat snack cracker

Steps:

  • Beat Neufchatel, honey, lemon juice and cinnamon in small bowl with electric mixer on medium speed until well blended.
  • Stir in apple and walnuts. Cover and refrigerate until ready to serve.
  • Serve as dip with crackers. Garnish with additional apple slices, if desired.

The idea of Waldorf salad was unappealing to me for years. So I experimented with ingredients a bit and finally found a recipe that's incredibly delicious! This is my own spin on the traditional Waldorf salad. The ingredients crisp, filling, and bursting with juicy flavor. Perfect for hot summer days when you don't feel like firing up the stove.

Number Of Ingredients 12

1 Granny Smith apple, cubed
1 Golden Delicious apple, cubed
1 Gala apple, cubed
1 Bosc pear, cubed
3 ribs celery, chopped
¾ cup sweetened dried cranberries
½ cup chopped walnuts
¼ cup chopped pecans
1 cup sour cream
¾ cup mayonnaise
1 tablespoon granulated cane sugar
2 teaspoons fresh lemon juice

Steps:

  • Combine Granny Smith apple, Golden Delicious apple, Gala apple, Bosc pear, celery, cranberries, walnuts, and pecans in a large bowl.
  • Whisk sour cream, mayonnaise, sugar, and lemon juice together in a separate bowl for the dressing.
  • Pour dressing into apple mixture; toss until evenly coated. Chill in refrigerator for at least 15 minutes before serving.

IT'S A WONDERFUL WALDORF



It's a Wonderful Waldorf image

Number Of Ingredients 13

2 Ginger Gold apples (Fuji will substitute)
1 Red Delicious apple
3 tablespoons cider vinegar
1 cup prepared mayonnaise
1 pinch kosher salt
Cracked black pepper
3/4 cup toasted walnuts, crushed
1 cup golden raisins
2 teaspoons curry powder
2 stalks celery, thin bias cut
1/3 cup fresh mint, chiffonade
1/2 red onion, julienned
1 head romaine lettuce, heart only

Steps:

  • Cut apples in half and remove the core with a melon baller. Chop apples into medium-sized pieces, leaving skin on.
  • In a bowl, toss apples with the cider vinegar. Fold in mayonnaise thoroughly. Season with salt and pepper to taste. Fold in walnuts, raisins, curry powder, celery, mint and red onion. Adjust seasoning. Refrigerate for at least 1 hour to allow flavors to incorporate. To serve, arrange 2 leaves of romaine lettuce per plate and spoon salad on top.

1 can (20 ounces) crushed pineapple
3 cups cubed cooked chicken
1 medium red apple, chopped
1 medium green apple, chopped
1 cup chopped walnuts
1 cup sliced celery
1 cup mayonnaise
1 tablespoon poppy seeds
1 teaspoon sugar
1 teaspoon grated lemon zest
1/2 teaspoon vanilla extract
1/2 teaspoon salt
Rolls, croissants or pita bread

Steps:

  • Drain pineapple, pressing out excess juice; discard all but 1/4 cup juice. In a large bowl, combine pineapple, chicken, apples, walnuts and celery. , In a small bowl, combine mayonnaise, poppy seeds, sugar, lemon zest, vanilla, salt and reserved pineapple juice. Pour over chicken mixture and toss well. Chill. Serve on rolls or croissants or in pita bread.

1 (16-ounce) container lemon yogurt
1 cup sour cream
1 cup mayonnaise
1 cup chopped apple
1 cup chopped celery
1 (3-ounce) package real bacon bits
1 sourdough or Hawaiian bread round

Steps:

  • Combine ingredients except bread; refrigerate till serving. Hollow out bread loaf and fill with dip. Serve with bread cubes from hollowing, and fresh veggies.
