CHICKEN WALDORF SALAD

1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup buttermilk
3 tablespoons apple cider vinegar
3 tablespoons chopped fresh dill
3 tablespoons sliced scallions
2 cups shredded rotisserie chicken
2 celery stalks, diced, plus leaves for topping
1 apple, diced
1 cup halved red grapes
1 cup chopped walnuts
1/3 cup golden raisins
Kosher salt and freshly ground pepper
8 Bibb lettuce leaves
Finely chopped chives, for topping

Steps:

  • Whisk the mayonnaise, sour cream, buttermilk, vinegar, dill and scallions in a large bowl. Fold in the chicken, celery, apple, grapes, walnuts and raisins; season with salt and pepper.
  • Divide the chicken salad among the lettuce leaves and top with chives and celery leaves.

6 cups diced apples
1 cup chopped celery
1 cup chopped pecans
1 cup mayonnaise
6 tablespoons white sugar
1 teaspoon lemon juice
¼ teaspoon ground cinnamon
1 cup heavy whipping cream

Steps:

  • Combine apples, celery, and pecans in a bowl.
  • Whisk mayonnaise, sugar, lemon juice, and cinnamon together in a separate bowl until well combined.
  • Whip heavy cream with an electric mixer until soft peaks form; fold into mayonnaise mixture to form a creamy dressing.
  • Fold apple mixture into the dressing until coated; chill in refrigerator for about 1 hour.

2 large red apples, chopped
1/2 cup chopped walnuts
1/4 cup sweetened shredded coconut
1/4 cup raisins
1 cup vanilla yogurt
1 tablespoon honey

Who wouldn't love these ooey-gooey rolls from Jill Defries of Windom, Minnesota? They're fast to assemble using frozen bread dough, and they get their great flavor from cinnamon, brown sugar and chopped walnuts.

Yield 20 rolls.

Number Of Ingredients 8

1 loaf (1 pound) frozen bread dough, thawed
2 tablespoons butter, melted
2/3 cup packed brown sugar
1/2 cup chopped walnuts
1 teaspoon ground cinnamon
1/2 cup heavy whipping cream
2/3 cup confectioners' sugar
1 tablespoon whole milk

Steps:

  • Roll dough into a 20x6-in. rectangle. Brush with butter. Combine the brown sugar, walnuts and cinnamon; sprinkle over dough. Roll up jelly-roll style, starting with a long side. Cut into 20 slices, 1 in. thick. Place in a greased 13x9-in. baking pan. Cover and let rise in a warm place until doubled, about 45 minutes., Drizzle with cream. Bake at 350° for 25-30 minutes or until golden brown. Invert onto a serving platter. In a small bowl, combine the confectioners' sugar and milk; drizzle over rolls. Serve warm.

This red molded salad has a sweet cinnamon flavor highlighted by fresh apples and oranges. A beautiful and refreshing compliment to ham. I usually make this in a lovely crystal bowl instead of the mold, to show off it's gorgeous color.

Number Of Ingredients 6

- 1/2 cup red hot cinnamon candies
- 1/4 cup sugar
- 6 oz. pkg. cherry gelatin
- 2 cups diced peeled apple
- 1 cup diced peeled orange
- 1/2 cup chopped walnuts or pecans

Steps:

  • In medium pan, bring red hots, sugar, and 2 cups water to a boil. Stir occasionally til melted. Put gelatin in large bowl. Pour boiling mixture over gelatin and stir to dissolve. Stir in 1/12 cups cold water. Chill til partially set. Stir in apple, orange and nuts. Pour into a 6 cups mold. Refrigerate until firm.. May be refrigerated covered with plastic wrap for 2 days.
