My son's favorite summer salad. Very light and refreshing on hot days. You can make it with low fat mayo and yogurt if you wish for a low cal version, and you can basically substitute any kind of veggies you want.

1 (12 ounce) package small shape pasta (wagon wheel, small shells etc.)
1 (19 ounce) can chickpeas, drained and rinsed
1/2 cup chopped cucumber
1/2 cup chopped red onion
1/2 cup chopped green pepper
3/4 cup mayonnaise
3/4 cup plain yogurt
1/4 cup chopped fresh dill
1 lemon, juice and zest of
1 garlic clove, crushed
1/2 teaspoon salt
1/4 teaspoon coarse black pepper

Steps:

  • Cook pasta according to directions or till just al dente. Drain pasta.
  • Combine the vegetables and pasta together in large bowl.
  • Whisk the mayonnaise, yogurt, fresh dill, lemon juice and zest, garlic, salt and pepper together.
  • Fold into pasta mixture. Chill in fridge 2 hours or so or till ready to eat.

12 ounces wagon wheel macaroni
1 (16 ounce) can chickpeas, rinsed and drained
1/2 cup celery, chopped
1/2 cup red onion, chopped
1/2 cup green bell pepper, chopped
3/4 cup mayonnaise
3/4 cup plain yogurt
1/4 cup fresh dill, chopped
1 lemon, juice and zest of
1 garlic clove, crushed
1/2 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Cook the pasta in plenty of boiling salted water until al dente. Drain. Rinse with cold water and drain again.
  • Combine the pasta, chick peas, celery, onion and green pepper in a large bowl.
  • Separately whisk the mayonnaise, yogurt, dill, lemon juice and zest, garlic, salt and pepper until blended.
  • Fold the dressing into the pasta mixture and serve.

This easy chickpea salad is one of our favorite salads. I love how quick and simple it is. Eat this straight out of the bowl or use it to top salad greens. We love the combination of lemon and dill, but the salad is just as delicious with other fresh herbs - try basil, parsley, or even fresh mint.

Number Of Ingredients 10

2 (15-ounce) cans chickpeas or 3 cups cooked chickpeas
1 medium thin-skinned cucumber, often called hothouse or English
6 small tomatoes
1 1/2 ounces feta cheese (substitute crumbled goat cheese)
1/4 cup (60 ml) fresh lemon juice (1 large lemon)
1/4 cup (60 ml) extra-virgin olive oil
1 teaspoon Dijon mustard
1/2 teaspoon honey
1/4 cup coarsely chopped fresh dill (feathery fronds and tender stems only)
Salt and fresh ground black pepper

Steps:

  • Open, drain and rinse the chickpeas, and then add to a large bowl.
  • Cut the cucumbers into quarters, lengthwise, and then chop into bite-size chunks. Cut the tomatoes into small wedges. Add the cucumbers and tomatoes to the chickpeas then break the feta cheese into crumbles on top.
  • In a medium bowl, make the dressing. Whisk lemon juice, olive oil, mustard, honey, and the fresh dill together then season with salt and pepper, to taste. Pour the dressing over the salad and toss.

125 g butter, softened
3/4 cup firmly packed brown sugar
1 egg
1 1/2 cups plain flour
1/4 cup self-raising flour
1/4 cup cocoa powder
28 vanilla raspberry marshmallows
375 g dark chocolate melts
1 tablespoon vegetable oil
1/4 cup raspberry jam

Steps:

  • Beat the butter, sugar and egg in a small bowl with an electric mixer until combined. Stir in sifted flours and cocoa, in two batches.
  • Knead dough on a floured surface until smooth. Roll between sheets of baking paper until 3mm thick. Cover and refrigerate for 30 minutes.
  • Preheat the oven to moderate (180°C/160°C fan-forced). Grease oven trays and line with baking paper.
  • Using a 7cm round fluted cutter, cut 28 rounds from dough. Place about 3cm apart on trays.
  • Bake for about 12 minutes. Cool on wire racks.
  • Turn half the biscuits base-side up and place on an oven tray. Use scissors to cut marshmallows in half horizontally. Press four marshmallow halves, cut-side down, onto biscuit bases on tray. Bake 2 minutes.
  • Melt chocolate in a medium heatproof bowl over medium saucepan of simmering water. Remove from heat; stir in oil.
  • Spread jam over bases of remaining cookies and press onto the softened marshmallow. Stand for 20 minutes or until marshmallow is firm. Dip wheels into chocolate and smooth away excess chocolate using a metal spatula. Place on baking paper-lined trays to set.
