GRILLED HAM AND CHEESE WAFFLE SANDWICHES
Sliced ham, Swiss cheese, and arugula sandwiched between cheesy toasted waffles are grilled until melty make a delicious twist on a classic sandwich.

- In a medium bowl stir together the flour, sugar, basil, baking powder, and salt. Add egg, milk, shredded cheese, and oil. Stir just until moistened. Add batter to a preheated, lightly greased waffle iron and bake according to manufacturer's directions. When done, use a fork to lift waffle off waffle iron. Repeat with remaining batter. You should have 8 4-inch waffles.
- For each sandwich, spread waffles with mustard. Layer ham, sliced cheese, and arugula on half of the waffles. Top with remaining waffles, spread side down.
- Heat a griddle or 12-inch skillet over medium heat. Add butter until melted. Add sandwiches. Cook for 4 minutes or until cheese is melted, turning once.
WAFFLE IRON GRILLED CHEESE SANDWICHES
More method than recipe, I heated up my panini maker one night to make a grilled cheese, only to find out that I'd left the waffle plates inside. Instead of changing out the plates, I used them anyway and I loved the outcome. The sandwich gets super crispy but the cheese is still soft and gooey inside the little squares. It's my 'go to' method for grilled cheese now. Serve with spicy pickled veggies on the side!

- Preheat a waffle iron according to manufacturer's instructions.
- Mix mayonnaise and Dijon mustard together in a bowl; spread onto 1 side of each bread slice. Sprinkle pepperjack cheese over mayo-mustard layer of 2 bread slices. Cover cheese layer with a second bread slice, creating 2 whole sandwiches.
- Place 1 sandwich in the waffle iron, taking care not to push down all the way. Wait until the bread begins to soften from the heat before starting to gently close the waffle iron, about 2 minutes. Apply more pressure to the top part of the iron, eventually closing it after a total of 3 to 4 minutes. Cook until browned, 2 to 3 minutes more. Repeat with the remaining sandwich.

- Lay 2 of the waffles on a counter or cutting board. Place a half-slice of cheese on top of each waffle. Spread some mustard over the cheese if using. Fold each ham slice in half, and place on top of the cheese slices. Layer another half-slice of cheese over each piece of ham. Top with the remaining waffles to form a sandwich.
- Heat a nonstick skillet or cast-iron pan over medium heat.
- Grease the skillet with some butter. Place the sandwiches in the pan, and cook until golden on the underside and the cheese starts to melt, 2 to 3 minutes. Flip the sandwiches, and cook until golden on other side and the cheese fully melts, about 2 more minutes. Serve hot or wrap in foil to pack for a school lunch or picnic.
- Make it Your Own: For an Italian spin on this sandwich, swap in prosciutto for the ham and mozzarella for the Swiss.
