Wacky Whole Grain Butternut Squash Mac and Cheese image

Traditional baked mac and cheese with my children-tested healthy twists. Beware: they now will not eat mac out of a box, and neither will you! When you remove from oven it should look a bit loose still; if it isn't it cooked too long. Lessen cooking time for next time. You can use any whole grain short pasta for this recipe.

1 (16 ounce) package whole grain elbow macaroni
½ cup water
¼ cup butter
¼ cup all-purpose flour
1 ½ cups skim milk
10 ounces shredded extra-sharp Cheddar cheese
4 slices American cheese
½ cup grated Parmesan cheese
2 ½ cups butternut squash soup
½ teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine elbow macaroni and water in the bottom of a 9x11-inch baking dish.
  • Melt butter in a large saucepan over medium heat. Whisk flour into melted butter until smooth. Gradually whisk milk into flour mixture; bring to a boil and cook, stirring constantly, until smooth and thick, about 2 minutes.
  • Stir Cheddar cheese, American cheese, and Parmesan cheese into milk mixture until cheeses are melted and mixture is smooth. Gradually stir butternut squash soup into cheese mixture. Season with salt and pepper to taste.
  • Pour cheese mixture over elbow macaroni and stir to combine.
  • Bake in the preheated oven until top begins to brown, about 50 minutes. Let cool for 10 minutes before serving.

WACKY MAC PASTA SALAD



Wacky Mac Pasta Salad image

This colorful, flavorful pasta salad makes a family-friendly side dish for any warm-weather gathering, and it's name, Wacky Mac, is fun for the kids, too.

Coarse salt and freshly ground pepper
1 bunch medium asparagus, trimmed
1 pound Wacky Mac spiral pasta
1 bunch watercress (about 3 cups)
3/4 pound red and yellow cherry tomatoes, halved
Zest of 1 lemon
1/2 cup extra-virgin olive oil
Juice of 2 lemons
1 cup feta cheese, crumbled

Steps:

  • Bring a large pot of water to a boil over high heat; generously salt water and return to a boil. Prepare an ice-water bath; set aside. Add asparagus to boiling water and cook until crisp-tender, about 3 minutes. Drain and immediately transfer to ice-water bath to cool. Drain and cut on the bias into 1-inch pieces.
  • Meanwhile, bring a second large pot of water to a boil over high heat; generously salt water and return to a boil. Add pasta and cook according to package directions. Drain and rinse under cold water.
  • Transfer pasta to a large bowl. Add asparagus, watercress, tomatoes, and lemon zest. Drizzle with olive oil and lemon juice and season with salt and pepper; toss to combine. Top with feta and serve.

This is an easy and pretty simple recipe. I kind of made it up as I went along. It is easily modified for your taste. Some times I add Rotel if I have it if not I don't. It's the base of the pasta salad and then I build from there. Enjoy

4 cups wacky mac pasta
12 ounces roasted garlic salad dressing
1 (12 ounce) can garbanzo beans
1 (12 ounce) can black beans
12 ounces edamame
1 teaspoon salt
1 teaspoon ground pepper
1 tablespoon onion powder

Steps:

  • Cook noodles according to package directions, drain and cool.
  • Add black beans, garbonzo beans and edamame mix. Add as much salad dressing as you like. Salt, Pepper and Onion Powder to taste. Chill and serve cold.
  • Variations - Rotel instead of edamame; black olives, green olives (if using olives, taste before using salt) Let your imagination run wild and put in what ever you like; celery, green peppers, onions, etc.

In all my years, I have never had tuna noodle casserole and truth be known, never had a big desire to even try it. I've been studying tuna noodle casseroles for a couple of weeks now. I changed (slighty) a recipe I found on "Desserts for Two" blog, and combined ingredients that I like to come up with this recipe. Well I've definitely changed my mind about tuna noodle casserole. SAUCE
3 tablespoon(s) butter
3 tablespoon(s) all purpose flour
1 1/2 cup(s) milk
1/2 cup(s) heavy cream
1/2 teaspoon(s) salt
1/2 teaspoon(s) pepper
1/4 teaspoon(s) nutmeg
FILLING
1 - (12-oz pkg) wacky mac noodles (sprial) cooked al dente according to directions (can use other pasta if desired)
1 tablespoon(s) white truffle oil (or vegetable oil of choice)
1/2 cup(s) onion, chopped
1 clove(s) garlic, minced
1/2 cup(s) celery, chopped
1/2 cup(s) fresh mushrooms, chopped
1/2 cup(s) green peas, frozen (i used green giant), rinsed and thawed
1 cup(s) cheddar cheese, shredded
2 - (5-oz) cans white water packed tuna, drained
1 teaspoon(s) everglades all purpose seasoning, (or season salt of choice)
- salt and pepper to taste
1/2 cup(s) panko bread crumbs
2 tablespoon(s) butter, melted

Steps:

  • Preheat the oven to 350. Grease 9 x 9 baking dish.
  • Make sauce first; melt 3 tablespoons of butter over medium heat in a saucepan. Whisk in the flour slowly and cook for 1-2 minutes while constantly stirring. Next, slowly pour in the milk and cream while whisking. Continue to cook over low heat until mixture thickens and comes to a bubble. Add salt, pepper and nutmeg; stir and set aside.
  • Meanwhile, boil the pasta in plenty of salted water until al dente. Drain and set aside.
  • In a large skillet, heat the oil over medium heat. Once hot, add the diced onion, garlic, mushrooms and celery. Saute while stirring occasionally for about 8-10 minutes, until the vegetables are tender. Add the peas, salt, pepper, everglade seasoning and drained tuna and remove from heat.
  • In a large bowl, combine the sauce, filling, cheese and noodles. Stir well to combine, then spoon into baking dish. Sprinkle the breadcrumbs on top, drizzle with the melted butter and bake for 30 minutes, or until bubbling. NOTE: I added a little salt and pepper to bread crumbs.

Wacky Mac image

This is a fun, colorful dish that is hearty and delicious. Great served with a simple salad or bread and butter. I use the hot chili, but mild would work fine too.

1 (16 ounce) package wagon wheel pasta
1 pound ground beef
1 ½ teaspoons chili powder
1 ½ teaspoons cayenne pepper
1 dash salt
½ onion, chopped
1 cup chopped green bell pepper
1 (30 ounce) can chili with beans
1 (12 ounce) can whole kernel corn, drained

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Place ground beef in a large, deep skillet. Season with chili powder and cayenne. Cook over medium high heat until evenly brown. Stir in onion and green pepper. Season with salt. Simmer until onion is tender and translucent. Drain excess fat. Stir in chili, corn and cooked pasta. Cover, and simmer for 10 to 12 minutes, stirring occasionally.
