SLOW COOKER OSSO BUCO
A beautiful, tender and mouth-watering meat casserole, so full of flavor. It forms a juicy and delightfully tasty gravy with carrots, celery and onion. Delicious served with boiled rice or couscous. My family couldn't get enough of this and were fighting to book the left-over bit for their lunch the next day. A real success.

Steps:
- Season the flour with salt and pepper to taste. Toss the veal shank slices with the flour until evenly coated. Melt the butter and olive oil in a large skillet over medium heat. Cook the shank slices in the hot butter until golden brown on all sides, about 10 minutes per side.
- Combine the onions, carrots, celery, and garlic in a large slow cooker. Set the meat slices atop the vegetables, then pour in the chicken stock and diced tomatoes. Season with oregano and the bay leaf.
- Cook on Low for 8 hours until the meat is falling off of the bone. Season to taste with salt and pepper before serving.

LEMON HERB VEAL STEW (CROCK POT)
From Slow Cookery. Use boneless veal shoulder or leg. Serve with pasta and nutmeg dusted baby carrots. If you have a newer model slow cooker, then the cooking time will be shorter (5-6 hours).

Steps:
- In a 3 quart or larger slow cooker, combine leek, garlic, tarragon, lemon zest, thyme, white pepper and sage.
- Coat veal cubes with flour, then add to slow cooker.
- Pour in wine and lemon juice.
- Cover and cook on low until veal is very tender when pierced (7-8 hours).
- In a small bowl, mix cornstarch and cream. Blend into stew.
- Increase cooker to high. Cover and cook, stirring 2 to 3 times, until sauce is thickened (about 15 minutes).
- Season to taste with salt.
- Garnish with fresh tarragon and lemon slices.
VLAD'S VEAL (CROCK POT)
This is my version of Hungarian goulash. My father was from Transylvania, so this would be a great meal to serve Vlad the Impaler, or Dracula.

Steps:
- Saute the veal the oil in a skillet until browned.
- Add the onions and the paprika and cook until browned.
- You add the paprika now to develop the flavor.
- Put the potatoes in the bottom of a crock pot.
- Add the browned meat, onions, and remaining.
- ingredients, placing the tomatoes on top.
- Cover and cook on low for 6 to 8 hours.
- The true Hungarian recipe calls for 1 cup of sour cream to be added at the end, right before serving.
- I leave this out since I don't mix meat with dairy.
- Serve with broad noodles.
