2 cups cooked ham, diced
1 cup celery, diced
1 cup sweet pickle relish
4 hard-boiled eggs, finely chopped
1/4 cup mayonnaise, plus
2 tablespoons mayonnaise
1 teaspoon prepared mustard
12 medium tomatoes
1 1/2 teaspoons salt
12 lettuce leaves (optional)

Steps:

  • Combine ham, celery, pickle relish, eggs, mayo and mustard; mix well. Chill.
  • Cut tops from tomatoes; scoop out pulp, leaving shells intact.
  • Sprinkle inside of each tomato with 1/8 teaspoons salt, invert on paper towels; drain.
  • Spoon ham salad into tomato shells.
  • Serve on lettuce leaves.

1 (14 lb) fully cooked spiral-cut smoked ham, on the bone
6 cloves garlic
8 1/2 ounces mango chutney
1/2 cup Dijon mustard
1 cup light brown sugar, packed
1 orange, zested
1/4 cup freshly squeezed orange juice

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the ham in a heavy roasting pan.
  • Mince the garlic in a food processor fitted with the steel blade.
  • Add the chutney, mustard, brown sugar, orange zest, and orange juice and process until smooth.
  • Pour the glaze over the ham and bake for 1 hour, until the ham is fully heated and the glaze is well browned.
  • Serve hot or at room temperature.

2 cups cubed fully cooked ham
1/2 cup sliced sweet pickles
4 hard-boiled large eggs, finely chopped
3/4 cup finely chopped celery
1/2 cup finely chopped sweet onion
1/4 cup mayonnaise
6 onion rolls, split

Steps:

  • Preheat oven to 350°. Place ham and pickles in a food processor; pulse until almost smooth. Transfer to a small bowl; stir in eggs, celery, onion and mayonnaise. Spread 1/2 cup over each roll bottom; replace tops. Wrap each in foil and place on a baking sheet. Bake until heated through, 10-15 minutes.

This was my quick lunch. Could easily feed two. I like ham salad, and especially with good ham. I buy blocks of Virginia Baked Ham and use it for this, and chop it up in my chef salads. You could easily double the recipe for more servings. Normally I add a hard boiled egg, didn't have any prepared to use today. This took a total of 5 minutes to whip together... Enjoy! My photos

Number Of Ingredients 9

4 ounce(s) ham. i use virginia baked from deli
1 teaspoon(s) ground dry mustard
1 heaping tablespoon(s) sweet onion, minced or chopped
1 ounce(s) sharp white american cheese, small cubed - use whatever kind you prefer
2 heaping tablespoon(s) mayonnaise dressing
1 small pickle, sweet or dill. i used dill
pepper - to taste
1 - boiled egg, chopped fine ( optional )
pinch - dried dill weed (optional)

Steps:

  • Place ham, pickle, onion and egg if using into food processor. Pulse till all is chopped fairly fine.
  • Scoop into bowl, add cheese, mayo, mustard , egg, pepper and stir until well combined. Eat with greens on a plate, or use in a sandwich. It's delicious either way. I have this typically for a low carb lunch. Enjoy!
  • I have also spread this on buns, and broiled in the oven, the cheese melts and makes it a delicious ham salad melt sandwich..
