VINNY'S SPECIAL CHICKEN SANDWICH

1/2 gallon mayonnaise
2 tablespoons paprika
1 ounce sun-dried tomatoes, chopped
1 quart vegetable oil
2 cups orange juice
6 tablespoons paprika
1 tablespoon ground black pepper
1 tablespoon salt
1 tablespoon garlic powder
1/2 tablespoon ground cumin
3 to 4 boneless skinless jumbo chicken breast halves
3 medium zucchini, sliced lengthwise into about 5 slices per zucchini
5 baguettes, each cut into 3 pieces and then split open
4 medium tomatoes, preferably beefsteak, cut into round slices
1 red onion, cut into round slices

Steps:

  • For the chipotle sauce: Blend mayonnaise, paprika and sun-dried tomatoes in a blender.
  • For the marinade: Combine vegetable oil, orange juice, paprika, black pepper, salt, garlic and cumin in a container and and blend with an immersion blender until the marinade becomes slightly thickened and bright orange, about 6 minutes. Slice chicken into thin slices with a deli slicer and place in marinade. Let marinate 8 hours or up to overnight in refrigerator.
  • For the sandwiches: Preheat a grill for cooking at medium-high heat. Grill chicken until fully cooked, about 3 minutes per side (see Cook's Note). Grill zucchini, 1 minute per side.
  • Preheat a panini press on medium heat. Spread chipotle sauce on bread bottoms, then top with tomato slices, rings of onion, grilled zucchini and grilled chicken. Place sandwiches on panini press until bread is crispy, approximately 2 minutes. Repeat with remaining sandwiches. Cut in half diagonally and serve.

2 pounds chicken wings
3 tablespoons apple cider vinegar
1 teaspoon garlic salt
1 teaspoon paprika
1 teaspoon crushed red pepper flakes
½ teaspoon onion salt
½ teaspoon ground black pepper
½ cup all-purpose flour
1 cup shortening
½ cup butter
1 clove garlic, minced
½ cup hot pepper sauce, or to taste

Steps:

  • Toss chicken wings in a large bowl with apple cider vinegar, garlic salt, paprika, red pepper flakes, onion salt, and black pepper to coat; cover bowl with plastic wrap.
  • Marinate chicken in refrigerator 1 to 4 hours.
  • Scatter flour over the chicken wings; toss to coat. Discard any remaining marinade.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat shortening in a large skillet over medium-high heat; fry chicken in hot shortening until golden, 5 to 7 minutes per side.
  • Arrange fried chicken pieces onto a baking sheet.
  • Bake chicken in preheated oven until no longer pink at the bone and the juices run clear, about 20 minutes; remove chicken to a platter lined with paper towels to drain.
  • Melt butter in a large skillet over medium heat. Cook garlic in melted butter until translucent, about 2 minutes.
  • Stir hot sauce into the butter and garlic mixture; reduce heat to low and simmer sauce 5 minutes. Transfer sauce to a large bowl.
  • Move drained chicken in batches to the bowl with the sauce and turn to coat. Drizzle any remaining sauce over wings to serve.

4 cups vinegar-based hot pepper sauce
¼ cup butter
6 tablespoons blue cheese salad dressing
3 pickled cherry peppers, thinly sliced
½ onion, finely chopped
½ teaspoon freshly ground black pepper
½ teaspoon crushed red pepper flakes
hickory wood chips

Steps:

  • Preheat an outdoor grill for medium-high heat. Soak hickory wood chips in water.
  • Use a large pot that can be placed on the grill to combine the hot sauce, butter, blue cheese dressing, cherry peppers, onion, black pepper, and red pepper flakes. Stir until well blended, and place on the grate of the grill. Bring to a simmer, and cook for 15 or 20 minutes.

¾ cup cornstarch, divided
2 lb chicken wings, rinsed and patted dry
¼ cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon cayenne pepper
2 teaspoons baking powder
2 teaspoons salt
1 teaspoon black pepper
⅔ cup water
peanut or vegetable oil, for frying
½ cup buffalo sauce
ranch or blue cheese dip, for serving
1 stalk celery sticks, for serving, cut into sticks

Steps:

  • In a bowl, toss ¼ cup (30 grams) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and let rest and dry out for 20 minutes, ideally in the fridge if you have space.
  • In a medium bowl, whisk together the remaining ½ cup of cornstarch, the flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper. Gradually whisk in the water, breaking up any lumps and mixing until smooth. The batter should be slightly runny.
