Vietnamese Shrimp and Glass Noodle Salad image

Provided by Nigella Lawson : Food Network

Categories     appetizer

Time 30m

Yield 4 servings

Number Of Ingredients 15

2 cloves garlic, minced or crushed
2 fresh long red chiles, seeded and finely diced or julienned
2 tablespoons finely minced fresh ginger
4 tablespoons fish sauce (nam pla)
1 lime, juiced
4 tablespoons water
1 tablespoon sugar
2 teaspoons groundnut oil
1 teaspoon sesame oil
8 ounces cooked small shrimp
6 ounces glass noodles
4 ounces sugar snap peas
4 ounces bean sprouts
3 scallions, sliced into thin circles
1/2 cup finely chopped fresh cilantro leaves, to garnish

Steps:

  • To make the Vietnamese Dressing, simply mix all the ingredients together. This will keep very well in a tightly sealed jar in the refrigerator for at least a week.
  • To make the salad, marinate the shrimp in 1/2 cup of the Vietnamese Dressing. While this is going on, soak the noodles in freshly boiled water according to packet instructions. Once re-hydrated, refresh the noodles in cold water, then drain. Put the sugar snaps and bean sprouts into a colander and pour over freshly boiled water from a kettle. Rinse them with cold water and drain well, just shaking the colander, so they're not actually wet.
  • In a large bowl, mix the marinated shrimp with the drained noodles, scallions, sugar snaps, and bean sprouts. Dress with 2 tablespoons more of the Vietnamese Dressing; add more dressing, to taste, if desired.
  • Sprinkle over the chopped cilantro and toss everything together well before arranging onto a large plate.

VIETNAMESE NOODLE SALAD

Vietnamese Noodle Salad image

This recipe draws on the delicate flavours of Vietnamese food and is great as a main or the star of a picnic

Provided by adamldraper

Time 35m

Yield Serves 2

Number Of Ingredients 15

A pinch of brown sugar
1 lime, rinsed
1 tsp of fish sauce
1 tsp of mirin
2 tsp of plain vegetable oil
½ clove of minced garlic
½ a red chilli chopped with seeds in
3 shredded spring onions
1 portion of dried rice/glass noodles
150g of finely chopped sweetheart cabbage
1 carrot peeled in to ribbons
4 finely sliced radishes
10g finely chopped fresh mint
20g of torn fresh coriander
1 cooked chicken breast, toen

Steps:

  • A pinch of brown sugar goes in to a small deep bowl, mixed with the juice of a lime and a teaspoon each of fish sauce and mirin (sweet rice wine). Add in 2 teaspoons of vegetable oil (or any other plain oil), ½ a minced garlic clove and half a red chilli chopped small with the seeds in. Give this Asian broth a stir to mix and add in 3 shredded spring onions. Leave to sit for an hour or so.
  • Put a portion of dried rice or glass noodles in a bowl of boiling water and leave to one side until soften.
  • As the noodles soften, chop 150g of sweetheart cabbage fairly finely and shred a carrot with a vegetable peeler and slice a couple of radishes, rough chopped 10g of fresh mint and tear up 20g of coriander and a cooked chicken breast.
  • When the noodles are softened drain and run through with cold water to cool them mostly, but a little warmth helps it take on flavour.
  • Mix all of the ingredients together well to coat in the noodles, vegetables and chicken in the piquant-Asian liquor. It works best if you leave it to stand for at least 30 minutes. If you're leaving to stand longer (over might for example) then cover and pop it in the fridge and only add the mint and coriander before serving, amkkng sure it's room temperature.
  • Apply to your face - preferably al fresco in a sunny park with crisp white wine on a lovely picnic.

Bun bo xa ot is a traditional Vietnamese dish of thinly sliced beef and rice noodles. Provided by Rie McClenny

Categories     Dinner

Yield 4 servings

Number Of Ingredients 28

1 lb lemongrass
2 ½ cups canola oil
¾ cup garlic, minced
½ cup shallot, minced
½ cup red pepper flakes
3 tablespoons fish sauce
3 tablespoons granulated sugar, plus more to taste
½ cup water
¾ cup water
7 tablespoons granulated sugar
1 garlic, smashed
3 ½ tablespoons fish sauce
1 tablespoon white distilled vinegar
1 lb hanger steak, or bavette steak
1 tablespoon rice bran oil
1 teaspoon fish sauce salt, or kosher salt
½ lb daikon radish, peeled and thinly sliced
½ lb carrot, peeled and thinly sliced
1 cup granulated sugar
½ cup white distilled vinegar
¼ cup water
1 tablespoon kosher salt, plus 1 teaspoon
14 oz fine rice vermicelli noodles, cooked according to package instructions
1 small head red leaf lettuce, thinly sliced
½ cup fresh thai basil, torn
½ cup fresh mint leaf, torn
½ cup store bought crispy fried shallots
½ cup roasted peanut

Steps:

  • Make the lemongrass chili oil: Chop the bottom 4 inches (10 cm) from the lemongrass stalks and discard the tops. Peel off any tough outer layers and discard, then thinly slice the remaining lemongrass. Process the sliced lemongrass in a food processor until very finely minced. You should have about 1 cup (130 g) total.
  • In a large enameled Dutch oven, heat the canola oil over high heat until it reaches 300°F (150°C). Add the garlic and lemongrass to the hot oil and cook until the garlic is golden brown and aromatic, about 10 minutes. Add the shallots. Reduce the heat to very low and add the red pepper flakes. Cook until extremely aromatic, about 2 minutes. Add the fish sauce, sugar, and water. Continue cooking for 2 hours, stirring occasionally to prevent the garlic from scorching at the bottom, until the oil has turned red. Remove the pot from the heat and let the chili oil cool, then transfer to an airtight container and refrigerate until ready to use, up to 3 weeks.
  • Make the pickles: Place the daikon and carrots in a deep bowl.
  • In a small pot, combine the sugar, vinegar, water, garlic and salt. Bring to a simmer over medium heat and stir until the sugar dissolves.
  • Pour the brine over the vegetables and let sit for at least 1 hour. The pickles can be stored in an airtight container in the refrigerator for up to 3 weeks.
  • Make the nuoc cham: In a small pot, bring the water and sugar to a simmer over medium heat. Add the garlic and stir until the sugar dissolves. Stir in the vinegar and fish sauce. Remove the pot from the heat and let the nuoc cham cool, then transfer to an airtight container and refrigerate until ready to use, up to 3 weeks.
  • Make the steak: Rub the steak with the rice bran oil and sprinkle salt on both sides.
  • Heat a large cast iron skillet over medium-high heat until smoking. Sear the steak in the hot skillet until the internal temperature reaches 130-135°F (54-57°C) for medium-rare, 6-10 minutes, turning the steak as needed to ensure even cooking. The timing of the steak will depend largely on the thickness of the meat. Remove the steak from the skillet and let rest for 10 minutes, then slice thinly against the grain.
  • To serve, add the rice noodles to a wide, shallow dish. Arrange the lettuce, basil, mint, pickles, fried shallots, and peanuts on top. Arrange the beef on top and spoon over some nuoc cham and lemongrass chili oil.".
  • Enjoy!

VIETNAMESE-STYLE RICE-NOODLE AND STEAK SALAD

Vietnamese-Style Rice-Noodle and Steak Salad image

Fish sauce and chilies play up the beefy nuances while peanuts add texture and a warm, toasted flavor to this Vietnamese-inspired cold steak and rice noodle salad. Use thin rice sticks to keep things as speedy as possible. They complement the flavors of the sauce and can be soaked instead of boiled.

Time 20m

Yield 4 servings

Number Of Ingredients 14

4 ounces (about 1/2 package) thin rice sticks (vermicelli)
1 large garlic clove, finely chopped
1 jalapeño, seeded and finely chopped
4 teaspoons granulated sugar
1/4 cup fish sauce
2 teaspoons freshly squeezed lime juice

VIETNAMESE NOODLE SALAD WITH LEMONGRASS SHRIMP

Vietnamese Noodle Salad With Lemongrass Shrimp image

No fresh lemongrass? It can be purchased in a tube in the produce department called Gourmet Garden, but if pushed, you can substitute an equal amount of lemon zest. Warm lemongrass-scented stir-fried shrimp contrast with the cool rice noodles, crunchy bean sprouts, and cucumbers in this one-dish meal, making an especially refreshing summer supper. A recipe from Mai Pham.

Provided by gailanng

Categories     One Dish Meal

Time 1h

Yield 4 serving(s)

Number Of Ingredients 18

8 ounces dried rice vermicelli
2 tablespoons vegetable oil
2 shallots, thinly sliced
1 garlic clove, minced
1 lb large shrimp, peeled and deveined
1 tablespoon minced fresh lemongrass
2 cups sliced white mushrooms
2 teaspoons fish sauce
1 teaspoon sugar
kosher salt or sea salt
2 cups washed and shredded romaine lettuce, red or 2 cups green leaf lettuce
2 cups fresh crisp bean sprouts
1 1/2 cups peeled peeled seeded and julienned cucumbers
1/3-1/2 cup mint leaf, rough chopped
1/3-1/2 cup basil or 1/3-1/2 cup Thai basil, rough chopped
2 tablespoons chopped roasted peanuts
12 sprigs fresh cilantro
vietnamese dipping sauce (Nuoc Cham)

Steps:

  • To cook the noodles:.
  • Bring a medium potful of water to a rolling boil. Add the rice vermicelli and, stirring often, cook them until the strands are soft and white, but still resilient, 3 to 5 minutes. Don't be tempted to undercook them, as they must be fully cooked to absorb the flavors of the dish. Rinse them in a colander under cold water just until they're cool and the water runs clear. Let the noodles drain in the colander for 30 minutes, and then set them aside for up to 2 hours, unrefrigerated.
  • To cook the shrimp:.
  • In a large skillet, heat the oil over high heat. Add the shallots and garlic, quickly stirring until fragrant, about 30 seconds. Add the shrimp and lemongrass; stir-fry for about 2 minutes. Add the mushrooms and sprinkle with the fish sauce, sugar, and a little salt. Stir-fry until the shrimp is cooked and the mushrooms are wilted, another 2 to 3 minutes. Remove from the heat.
  • To assemble the salads:.
  • Divide the lettuce, bean sprouts, cucumber, mint, and basil among four large soup or pasta bowls. Fluff the noodles with your fingers and divide them among the prepared salad bowls. Put the shrimp topping on the noodles and garnish each bowl with the peanuts and cilantro. Pass the nuoc cham at the table; each diner should drizzle about 3 Tbs. over the salad and then toss the salad in the bowl a few times with two forks or chopsticks before eating.

Bun Cha (Vietnamese Pork Meatball and Noodle Salad) image

Hanoi street food, adapted from a recipe by Lauren Shockey in "Four Kitchens" (Grand Central Publishing, 2011), published in Saveur. Shockey likes this dish for breakfast on the weekend.

Provided by zeldaz51

Categories     One Dish Meal

Time 1h40m

Yield 4 serving(s)

Number Of Ingredients 15

2 tablespoons sugar
5 tablespoons water
1 lb ground pork
1 large shallot, minced as small as possible
3 tablespoons fish sauce
1/4 teaspoon fresh ground black pepper
2 tablespoons fish sauce
2 tablespoons rice vinegar
1 -2 teaspoon brown sugar
1 cup water
1/2 teaspoon minced garlic (or grated)
1 red Thai chile, minced
1 lb thin rice noodles
1/2 head lettuce, torn into small pieces (use soft leaf lettuce, red adds more color, but green is fine)
2 cups loosely packed of a mixture of asian herbs (such as cilantro, mint, shiso, Thai basil, etc.)

Steps:

  • In a small saucepan, combine the sugar with 3 tablespoons water and cook over high heat until a dark brown caramel forms, about 8 minutes. Remove from the heat and add 2 tablespoons cold water, swirling the pot.
  • In a large mixing bowl, combine the pork, shallot, fish sauce, caramel sauce, and pepper, and marinate in the refrigerator for 90 minutes to six hours.
  • Meanwhile, combine all ingredients for the sauce in a large mixing bowl.
  • When the pork is through marinating, remove from the refrigerator and shape into small patties, about 15 to 20 in all. Heat a charcoal grill or a broiler to high. Bring a pot of water to a boil and cook the noodles according to the directions on their package. Drain, then rinse under cold water to halt the cooking process.
  • Meanwhile, grill or broil the pork patties until fully cooked and slightly charred, about 4 minutes per side.
  • Spoon the sauce into four bowls, then place the pork patties over the sauce. Place the herbs and lettuce in one large communal bowl and the noodles into another large communal bowl. To eat, dip some of the noodles into the sauce and eat with the patties and herbs.

VIETNAMESE RICE NOODLE SALAD

Vietnamese Rice Noodle Salad image

Make and share this Vietnamese Rice Noodle Salad recipe from Food.com.

Provided by gailanng

Categories     One Dish Meal

Time 25m

Yield 2-3 serving(s)

Number Of Ingredients 13

3 tablespoons fish sauce
3 tablespoons freshly squeezed lime juice
2 -3 light brown sugar
6 -8 tablespoons water, to taste
1 medium garlic clove, minced
1 fresh Thai chiles or 1 jalapeno pepper, minced
8 ounces thin rice noodles
3 -4 napa cabbage leaves, thinly sliced crosswise
1 medium carrot (shredded or cut into matchsticks)
1/2 cucumber, halved, seeded and thinly sliced
1 handful chopped fresh herb, preferably a combination of basil, cilantro and mint
8 ounces cooked pork, chicken (cut or chopped into bite-sized pieces) or 8 ounces shrimp (cut or chopped into bite-sized pieces)
1/2 salted peanuts, coarsely chopped

Steps:

  • To prepare the dressing, combine the fish sauce, lime juice, 2 tablespoons of the brown sugar, 6 tablespoons of the water, the garlic and the chile. Whisk well. Taste: if it's too pungent, add more water, 1 tablespoon at a time. If you'd like more sweetness, add more brown sugar, 1/2 tablespoon at a time. Remember that you're going to be putting this dressing on unsalted vegetables and noodles: you want the dressing to have a lot of flavor, but it shouldn't knock you over. Pour into a serving bowl. (Covered and chilled, the dressing will keep for 3 days to a week.).
  • Bring a large pot of water to a boil. Add the rice noodles, and cook for 4 to 5 minutes, until tender but not mushy. Immediately drain the noodles into a colander, and rinse them well with cold water. Lay out a clean kitchen towel on the countertop, shake the colander to drain away excess water and then spread the cooked noodles on the towel to drain further.
  • Divide the noodles between two or three good-sized bowls, depending on the number of diners, and top with the vegetables, herbs and meat. Scatter the peanuts on top. Allow each person to spoon on dressing to taste. Toss well, and eat. (Alternatively, you can present this salad family-style: Toss the vegetables, herbs and noodles in a mixing bowl and then mound them on a serving platter. Arrange the meat over the noodles, and top with peanuts. Each diner can scoop their own portion from the platter and dress it as they see fit.).

VIETNAMESE PRAWN & NOODLE SALAD WITH CRISPY SHALLOTS

Vietnamese prawn & noodle salad with crispy shallots image

Making the fried shallots for this superhealthy salad is optional, but well worth it - they're incredibly delicious

Provided by Jennifer Joyce

Categories     Dinner, Main course

Time 25m

Number Of Ingredients 14

200g thin rice noodle
200g large cooked, peeled prawn
1 small red onion , halved and sliced
1 small red chilli , sliced
1 small cucumber , shaved into ribbons (use a peeler)
1 large handful each coriander and mint
2 tbsp roasted peanut , roughly chopped
juice 3 limes
1 tbsp soft brown sugar
2 tsp fish sauce
1 garlic clove , crushed
5 shallots , thinly sliced
vegetable oil , for frying
flour , for dusting

Steps:

  • For the crispy shallots, heat 5cm of oil until hot in a wok. You will know the oil is hot enough when one piece of shallot sizzles as soon as it's dropped in. Toss the shallot slices with flour, shake off excess and fry in the oil until golden. They fry quickly, about 1 min. Drain on kitchen paper, sprinkle with salt and set aside.
  • To make the dressing, mix the lime juice, sugar, fish sauce and garlic and set aside. In a large mixing bowl, pour boiling water over the noodles. Leave them for 2 mins or until they are just cooked, then rinse under cold water. Drain well, shaking the sieve numerous times to get out the excess water, then place back in the bowl. Add prawns, onion, chilli, cucumber and herbs. Pour the dressing over, mix, then sprinkle with the shallots and peanuts.

1/4 teaspoon salt
1 (12 ounce) package extra firm tofu
2 teaspoons soy sauce
1 (8 ounce) package thin rice noodles
1 medium cucumber, sliced in thin half moons
1 small red onion, thinly sliced
4 ounces string beans, sliced in 1 inch pieces
2 cups mixed greens
1/4 cup thinly sliced mint leaf
1/4 cup peanuts, chopped
3 tablespoons finely chopped mint
1/2 lime, zest of

Steps:

  • Put water onto boil for the noodles.
  • Prepare the dressing by mixing all the ingredients together and stir vigorously, set aside.
  • Slice the tofu into 8 equal pieces widthwise then slice those rectangles corner to corner to form long triangles. Place in a single layer on a large plate and pour 6 tbsp of the dressing over top along with the soy sauce. Let marinate while you prepare everything else.
  • Your water should be boiling so add the noodles and cook accordingly to the package directions.
  • While the noodles are cooking prep all the veggies if that still needs to be done.
  • The noodles should be ready so drain them and run under cold water for about a minute to cool them down. Add all the veggies, greens, and mint to the noodles, combining well (use your hands if need be) and set aside.
  • Combine the gremolata ingredients in a small bowl, set aside.
  • Heat a cast iron grill or skillet over medium high heat, spray with nonstick cooking spray and grill the tofu on each side for about 4 minutes or until it starts to brown. Add the excess marinade to the noodles.
  • Assembly: Scoop the noodles into 6 bowls, add 2-3 pieces of tofu on the side of each bowl and sprinkle with the gremolata. Serve with extra lime wedges and extra chili garlic sauce.

Helen Rosner
In Lauren Shockey's culinary memoir Four Kitchens(Grand Central Publishing, 2011), in which this recipe appears, the author writes: "After pho, bun cha is one of Hanoi's most famous dishes and is a delicious summertime lunch or light dinner. In Hanoi, you'll know you're at a bun cha stand by the smoke wafting from the charcoal grills. Living in New York City, I don't have the luxury of cooking pork on a charcoal grill, but my stove's broiler works just fine."
SERVES 4
For the Pork Meatballs
2 tbsp. sugar
5 tbsp. water
1 lb. ground pork
1 large shallot, minced as small as possible
3 tbsp. fish sauce
1⁄4 tsp. freshly ground black pepper
For the Sauce and Serving
2 tbsp. fish sauce
2 tbsp. rice vinegar
1 tsp. brown sugar
1 1⁄2 cups water
1⁄2 tsp. minced or grated garlic
1 red thai chile, minced
2 tbsp. green papaya, cut into 1⁄4"-thick slices (optional)
1 lb. thin rice noodles
1⁄2 head red leaf lettuce, torn into small pieces
2 cups loosely packed selection of Asian herbs, such as cilantro, perilla, mint, sawtooth coriander, ngo herb, shiso, or Thai basil

Steps:

  • For the meatballs: In a small saucepan, combine the sugar with 3 tablespoons water and cook over high heat until a dark brown caramel forms, about 8 minutes. Remove from the heat and add 2 tablespoons cold water, swirling the pot. In a large mixing bowl, combine the pork, shallot, fish sauce, caramel sauce, and pepper, and marinate in the refrigerator for 1 1⁄2 hours. For the sauce: Combine fish sauce, vinegar, brown sugar, water, garlic, chile and green papaya in a large mixing bowl. Set aside to marry the flavors To assemble: Bring a pot of water to a boil and cook the noodles according to the directions on their package. Drain, then rinse under cold water to halt the cooking process. Shape marinated pork into small patties, about 15 to 20 in all. Heat a charcoal grill or a broiler to high. Grill or broil the pork patties until fully cooked and slightly charred, about 4 minutes per side. Spoon the sauce into four bowls, then place the pork patties over the sauce. Place the herbs and lettuce in one large communal bowl and the noodles into another large communal bowl. To eat, dip some of the noodles into the sauce and eat with the patties and herbs.
