Picture is of VIdalia's, but you can also use sweet Walla Walla's, or Maui's. This is a delicious sweet onion recipe,very quick and simple to make. Full of that great onion flavor. 2 large sweet onions...your choice
1 large chicken breast - split
1 can(s) 10.75 oz cream of mushroom soup
2 medium red potatoes - thickly sliced
2 Tbsp oil
paprika

Steps:

  • 1. brown chicken breasts in 2 Tablespoons of oil. Set aside on a paper towel . In a 1-1/2 quart greased casserole dish, layer the sliced potatoes on the bottom, follow with the sliced onions, chicken and then top off with the mushroom soup. Sprinkle with paprika. Bake in a 350 degree oven for 1 hour.
  • 2. You can scrub the potatoes and leave the skins on ...if you prefer. They can also be cut into medium chunks...you're choice.

10 ounces broccoli, frozen
1/3 cup vidalia onion, chopped
1/2 cup mushroom, sliced
2 teaspoons oil
1 cup cheddar cheese, grated
2 large eggs, slightly beaten
1/2 cup mayonnaise
1 cup water
1 cup rice, cooked
6 boneless skinless chicken breasts
3 teaspoons oil
1 tablespoon paprika

Steps:

  • Cook broccoli according to package directions.
  • Drain and set aside.
  • Saute onions and mushrooms in 2 teaspoons of oil until softened.
  • Drain and combine with broccoli.
  • Set aside.
  • Combine cheese, eggs, mayonnaise, water and rice.
  • Set aside.
  • Brown chicken breasts in 3 teaspoons of oil.
  • To Assemble:
  • Combine broccoli mixture with cheese mixture and pour into greased, shallow baking pan.
  • Place chicken breasts on top and sprinkle with paprika.
  • Bake uncovered in a 350 oven for 45 minutes.
  • NOTE- You may cut fat and cholesterol from this recipe with the following substitutions:
  • light skim milk.
  • 4 oz. of egg substitute for the 2 eggs.
  • light mayonnaise for regular mayonnaise
  • non-fat cooking spray for browning chicken.

4 boneless skinless chicken breasts
1/2 cup vidalia onion salad dressing (or enough to cover chicken)
2 cups marinated artichoke hearts, drained and chopped
1 cup stuffed green olive
3/4 cup grated parmesan cheese

Steps:

  • Preheat oven to 400 degrees F.
  • Pound chicken breasts to a uniform thickness.
  • In a baking dish, place chicken in a single layer.
  • Top chicken with dressing, artichoke hearts and olives.
  • Sprinkle evenly with grated Parmesan cheese.
  • Bake, uncovered, for 25 minutes or until cooked through.
