6 slices (about 1/2-inch thick) white Pullman loaf
6 tablespoons mayonnaise
1 tablespoon mustard (optional)
4 large leaves greenleaf lettuce
3 ounces thickly sliced deli turkey
6 strips thick-cut bacon, cooked until crisp
1 large beefsteak tomatoes (about 6 ounces), sliced
Salt and pepper

Steps:

  • Spread both sides of each bread slice with 4 tablespoons mayonnaise. Toast bread in 2 batches over medium heat, about 5 minutes, turning once halfway through cooking. Transfer to cooling rack.
  • Spread 4 slices of bread with remaining mayonnaise and mustard. To build sandwiches, arrange 1 lettuce leaf on 1 piece of mayo-mustard-spread toast. Top with turkey, then toast, then lettuce, bacon, and tomatoes. Season tomatoes with salt and pepper. Top with remaining slices of bread and secure each with 4 toothpicks. Cut each sandwich in quarters. Serve.

12 slices white bread
3/4 cup mayonnaise
8 romaine lettuce leaves
16 slices vine-ripened tomatoes
Kosher salt and freshly ground black pepper
16 slices crispy cooked bacon
16 ounces sliced roasted turkey
16 frill picks, or plastic cocktail swords
Potato chips
Sweet pickles

Steps:

  • Toast the bread in a toaster, or under a broiler on both sides. Cut the lettuce leaves in half crosswise and form into 8 neat stacks.
  • To make a double-decker club: On a clean work surface, arrange 3 bread slices in a row. Spread 1 tablespoon mayonnaise over 1 side of each bread slice. Place a lettuce stack on top of the first bread slice, top with 2 tomato slices, and season with salt and pepper, to taste. Place 2 slices bacon over the tomatoes (broken to fit neatly if necessary) and top with 1/8 of the turkey (without letting any hang over the sides). Season the turkey with salt and pepper, to taste. Repeat with the second bread slice. Carefully place the second layered bread slice on top of the first layered bread, turkey side-up. Cover with the third bread slice, mayonnaise side-down.
  • Pin the sandwich's layers together by piercing them with 4 frill picks or cocktail swords through the top bread slice, in 4 places in a diamond-like pattern, all the way to the bottom bread slice. Repeat entire process with the remaining ingredients to form 3 more sandwiches.
  • Using a serrated knife cut each sandwich, diagonally, into 4 triangular pieces (each piece should be secured in the center with a pick or sword). Serve with potato chips and pickles.

1 tomato, cut into 4 thin slices
1 cup shredded lettuce

Steps:

  • Spread 1 Tbsp. dressing evenly onto 2 toast slices; top with chicken. Cover each with second toast slice.
  • Top with bacon, tomatoes and lettuce; cover with remaining toast slices spread with remaining dressing.
  • Cut each sandwich into 4 triangles; secure with toothpicks.

3 slices toasted bread
Miracle Whip
sliced deli chicken breast
fresh lettuce
4 slices cooked crisp bacon
3 slices fresh tomatoes
1 slice American cheese
basil

Steps:

  • Cook bacon.
  • Toast bread.
  • Spread Miracle Whip on toast slices.
  • Sprinkle a little dried basil on the Miracle Whip on the toast slices.
  • On the first slice of toast add the chicken breast slices; add lettuce on top of chicken.
  • Add second piece of toast with the Miracle Whip side up; add bacon slices, add cheese slice, and add more lettuce. Top with tomatoes.
  • Put third slice toast Miracle Whip side down.
  • Cut sandwich in half; serve and enjoy.

Flipping the pages of my new EVERYDAY with Rachael Ray (May/2009) There it is....my favorite salad on bread!! I made a couple of additions.... Could it get any better?? :)

Number Of Ingredients 10

12 ounces bacon, thick cut
1 1/2 lbs chicken breasts, boneless and skinless
1 avocado, halved and pitted
1/4 teaspoon cayenne pepper (my addition)
2 tablespoons fresh lemon juice
1/3 cup mayonnaise
12 slices whole wheat bread
2 cups Baby Spinach
1 1/2 cups strawberries, hulled and sliced
1/2 red onion, sliced paper thin (my addition)

Steps:

  • In a large skillet, cook the bacon over med heat until crisp; drain on paper towels.
  • Pour off the fat from the skillet and heat the pan over med heat.
  • Season the chicken with salt, pepper and cayenne, add to pan, partially cover and cook, turning once, until golden on both sides and jus cooked through about 10 minutes, let rest for 5 minutes, then thinly slice.
  • Meanwhile using a food processor, puree the avocado with lemon juice.
  • Transfer to a bowl, stir in the mayo, then season with salt and pepper.
  • Spread 1 tbls avocado mixture on each slice of toast.
  • Divide the chicken among 4 toast slices and top each with 1/4 of the bacon.
  • Cover each stack with a toast slice, avocado side down.
  • Spread more avocado on top, then layer each stack with some spinach, strawberries, red onion and one of the remaining toast slices.
  • Cut each sandwich into quarters.
