SWEET ONION MUSTARD

French's use to make a mustard with tiny sweet onions in it and I loved it. They no longer make it so I found this recipe and it is kind of like that mustard. Really good on sandwiches and especially good on hot dogs. Can be canned for gifts also

1/3 c yellow mustard seeds
2 Tbsp dry mustard
1 c warm water
1/3 c cider vinegar
1 small sweet onion minced
2 clove garlic minced
1/3 c brown sugar
2 Tbsp honey
salt

Steps:

  • 1. Combine mustard seeds, dry mustard and warm water. Let sit for 4 hours.
  • 2. Combine vinegar, onions, garlic brown sugar and salt and cook over med heat for 15 minutes. Remove from heat. Stir in seed mixture. Blend until smooth with an immersion blender or food processor or blender.
  • 3. Stir in honey.
  • 4. If canning water bath for 15 minutes

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
2 cups warm 2% milk (110° to 115°)
3 tablespoons dried minced onion
3 tablespoons prepared mustard
2 tablespoons canola oil
2 tablespoons sugar
1-1/2 teaspoons salt
6 to 6-1/2 cups all-purpose flour
Optional: Beaten egg, poppy seeds and additional dried minced onion

Steps:

  • In a large bowl, dissolve yeast in water. Add the milk, onion, mustard, oil, sugar, salt and 4 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down; divide into 24 pieces. Flatten each piece into a 3-in. circle. Place 1 in. apart on greased baking sheets. Cover and let rise until doubled, about 45 minutes. If desired, brush with beaten egg and sprinkle with poppy seeds or dried minced onion. , Bake at 350° until golden brown, 20-25 minutes. Cool on wire racks.

Grilled Chicken Sandwiches with Mustard image

This flavorful departure from the usual sandwiches requires little work. It's a cinch to assemble the rest of your meal while this chicken in marinating.

1/4 cup plus 3 tablespoons whole-grain mustard
1/2 cup extra-virgin olive oil
1/3 cup chopped fresh dill
2 garlic cloves, minced (1 tablespoon)
Coarse salt and freshly ground pepper
2 chicken cutlets (6 ounces each)
1 large red onion, sliced into 1/2-inch-thick rounds
3 ounces aged cheddar cheese, thinly sliced
1 baguette, cut crosswise into 4 pieces and halved horizontally
3 tablespoons creme fraiche
3 sour pickles, thinly sliced lengthwise

Steps:

  • Mix 1/4 cup mustard, the oil, dill, garlic, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper in a medium bowl. Add chicken and onion, and toss to coat. Refrigerate, covered, for 30 minutes.
  • Preheat grill to medium-high. Grill onion, turning often, 8 to 10 minutes. Grill chicken on 1 side for 3 minutes; flip, top with cheddar, and cook 3 minutes more. Cut cutlets in half. Grill baguette, cut sides down, until crisp, 1 to 2 minutes.
  • Mix remaining 3 tablespoons mustard and the creme fraiche in a small bowl. Spread onto cut sides of baguette. Sandwich chicken, pickles, and onion between bread.
