SWEET CORN AND BLACK BEAN SALAD



Sweet Corn and Black Bean Salad image

This is an incredibly delicious version of a black bean and corn salad that is low in cal/fat and contains fiber and protein. The black pepper and lime juice really finish it off. This recipe actually came from Whole Foods but was tasty enough to take the time to post it here! This is definitely best served cold with raw ingredients.

2 cups corn kernels (thawed or fresh)
1/2 cup red onion, finely chopped
2 tablespoons rice vinegar, seasoned
1 tablespoon extra-virgin olive oil
1 tablespoon lime juice
1/4 teaspoon sea salt
1/2 teaspoon ground black pepper
4 cups no-salt-added cooked black beans, rinsed and drained
1 red bell pepper, cored, seeded and chopped
1/3 cup cilantro leaf, finely chopped

Steps:

  • Bring a medium pot of water to a boil.
  • Add corn and cook for 1 minute, then drain well, rinse in cold water, and drain again. (If using frozen and thawed corn, skip this step).
  • Rinse onions in cold water to remove some of their sharp, acidic flavor; drain well and set aside.
  • In a large bowl, whisk together vinegar, olive oil, lime juice, salt and pepper to make a dressing.
  • Add beans, corn, onion and bell pepper and toss until just incorporated. Cover and chill for about 2 hours.
  • Add cilantro and toss again before serving.

2 cups canned black beans, drained and rinsed
2 cups crisp canned corn, drained
1/3 cup chopped red onion
1/4 cup chopped fresh cilantro
3 tablespoons lime juice
1 teaspoon olive oil
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/8 teaspoon ground red pepper

Steps:

  • Mix all ingredients and chill overnight.
  • Spoon out 1/2 servings as needed.

1/2 cup lime juice
1/4 cup apple cider vinegar
1 tablespoon cumin
1 cup chopped cilantro
1 medium avocado
4 -5 tomatoes, diced
1 (14 ounce) can white shoepeg corn, drained
1/2-1 jalapeno, seeded and minced
1 (14 ounce) can black beans, drained and rinsed
1 red bell pepper, seeded and diced
salt, to taste

Steps:

  • Combine lime juice, vinegar and cumin in a small bowl.
  • Add tomatoes through beans to a large lidded container.
  • Pour lime juice mixture over vegetables and sprinkle in the salt, one teaspoon at a time, until it tastes right to you. I generally add about a tablespoon.

3/4 cup Italian salad dressing
3/4 teaspoon Tabasco sauce
1/2 teaspoon chili powder
1 tablespoon fresh lime juice or 1 tablespoon lemon juice
1 tablespoon cilantro
1 (12 ounce) can corn, drained
1 (15 ounce) can black beans, rinsed and drained
1 medium tomatoes, finely chopped
1/2 cup finely chopped red onion
1 red bell pepper, seeded and finely chopped
1/2 cup thinly sliced scallion
1 garlic clove, minced
1 jalapeno pepper, seeded and finely chopped

Steps:

  • Combine Italian dressing, Tabasco, chili powder, citrus juice and cilantro in a jar and shake well; set aside.
  • Combine remaining ingredients till evenly mixed.
  • Cover salad with dressing and chill at least 4 hours but the salad will be at its best if made the day before serving.
  • Serve cool or at room temperature.

It's very tasty, easy to make, and is a colorful salad that goes well with any Mexican-themed menu or grilled meat. Prep time does not include chilling time.

1/4 cup balsamic vinegar
1/4 cup cider vinegar
1 tablespoon brown sugar
1 1/2 teaspoons lime juice
1/2 teaspoon cumin

1 cup diced red bell pepper
3/4 cup onion, diced
1/3 cup cilantro, chopped

1 (11 ounce) can corn, drained
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/2 red onion, thinly sliced and quartered
1/4 cup pickled jalapeno pepper, slices,chopped
1/4 cup vegetable oil
1/4 teaspoon cumin
1/2 teaspoon salt
