Cook a pot of rice using chicken broth, tomato sauce, and a few seasonings to make this quick and easy Spanish Rice. It's the perfect base for rice bowls or a delicious side dish to your favorite Mexican entrees!

1 tablespoon extra-virgin olive oil
1 tablespoon butter
1 cup white rice
1 cup (APPROXIMATELY) chicken broth or stock (see NOTES below)
1 cup (APPROXIMATELY) tomato sauce or puree (see NOTES below)
1 1/2 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon garlic salt
1/2 teaspoon dried oregano
1/4 cup diced fresh tomatoes (seeded & drained (optional))

Steps:

  • In a medium saucepan set over medium heat, melt together olive oil and butter. Add rice and stir to coat with oil/butter. Cook, stirring frequently, for about 2 to 3 minutes, until rice is toasted.
  • Stir in chicken broth, tomato sauce, chili powder, cumin, garlic salt, oregano, and diced tomatoes (if using). Increase heat to high and bring to a boil, stirring occasionally. Stir well, reduce heat to low, place lid on pot, and cook at a gentle simmer for 20 minutes (or whatever amount of time is directed on your bag of rice; see NOTES below). If rice is not quite tender or liquid is not absorbed after 20 minutes, replace lid and cook for 2 to 4 minutes longer. Remove from heat, leave covered, and allow to rest for a few minutes. Fluff rice with a fork and serve.

My family loves a variety of ethnic foods, but this is one of their favorites. My niece, who is of Spanish descent, lives with us and has tweaked my old Spanish rice recipe to make it just like her grandma's. My mother-in-law has also added this recipe to her school meals menu (minus the jalapeno), and it is a hit with the students and faculty.

6 tablespoons butter
2 onions, chopped
2 jalapeno peppers, chopped
2 (14.5 ounce) cans Mexican-style diced tomatoes, undrained
1 cup uncooked white rice
salt and ground black pepper to taste
½ cup sour cream, or as desired
½ cup shredded Cheddar cheese, or as desired

Steps:

  • Melt butter in a large skillet over medium-high heat; cook and stir onions and jalapeno peppers in the butter until softened, 3 to 5 minutes. Stir Mexican-style tomatoes into onion mixture; add rice, salt, and black pepper. Bring rice mixture to a boil, reduce heat, cover, and simmer until rice is cooked, 40 to 45 minutes. Garnish with sour cream and Cheddar cheese to serve.

I wanted to create an easy spanish rice with ingredients I had on hand and this does not dissapoint. The Sazon is optional but very tasty...I've used both the tomato and the azafron flavor and both are good. I always use Uncle Bens converted rice for a fool proof dish every time! Covering the rice with a towel is an old mid-east trick that absorbs any excess water...it really works!

1 cup converted rice (preferably Uncle Bens)
2 1/4 cups water
2 teaspoons chicken base
1 teaspoon sazon seasoning (1 individual packet)
1/2 teaspoon garlic powder
1 cup chopped tomato
1/2 cup chopped green pepper
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup frozen peas
1/4 cup chicken broth
water
1/4 teaspoon chili powder
1/4 teaspoon cumin
1/4 teaspoon black pepper
1/8 teaspoon salt
1 tablespoon butter
olive oil

Steps:

  • 1. Bring 2 1/4 cups water, Sazon, garlic, and chicken base to a boil.
  • 2. Meantime, melt butter or oil and saute veggies with cumin, chili,salt,pepper and 1/4 cup chicken broth until tender crisp -- about 5 minutes or so.
  • 3. Add veggies, rice, and peas to boiling water mixture and simmer on very low for 20-25 minutes until liquid is absorbed. No peeking! Remove lid and cover pot with a clean dish towel and then put lid back on until ready to serve. Enjoy!
  • 4. NOTE* on occasion, I've topped this rice with more chopped tomato and green onion - crumbled bacon is also good.

My wife says this is the best Spanish Rice ever, thus the name. This is a simple compliment to any Mexican-style meal, or any meal for that matter. The secret? Jasmine rice instead of the typical long-grain rice.

1 cup jasmine rice (uncooked)
2 cups water
1 tablespoon olive oil
2 cups water
1 knorr caldo de tomate bouillon cube (or similar Tomato Bouillon with Chicken Flavor cube)

Steps:

  • In a microwave-safe dish (I use a 2-cup Pyrex measuring cup), add 2 cups water and 1 Knorr Caldo de Tomate bouillon cube. Microwave for 2 minutes to heat water. Use a wooden spoon to carefully crush and mix the cube of bouillon in the water. It does not have to be perfectly mixed in, but you do want to get it dissolved.
  • In a 4-quart or larger saucepan on medium-high heat, add 1 tablespoon olive oil.
  • Add uncooked jasmine rice and to the pan, and stir constantly until rice is browned slightly. This should take about 1 minute.
  • Add the water carefully, and bring to a boil.
  • Cover saucepan, reduce heat to low, and cook for 20 minutes.
  • At the end of cooking, fluff rice with a wooden spoon. If the rice looks too damp, leave uncovered and allow to cook for a few more minutes while stirring to prevent burning.
