Yield 3 Burgers

Number Of Ingredients 18

1 lb Venison
1 egg
6 slices of Hicory smoked bacon
1/2 lb of Blue Cheese
Sliced tomato
Arugla
Soft Bakery roll
Sauce
1/2 tablespoon olive oil
1/2 finely chopped onion
1 cup tomato ketchup
1/4 cup balsamic vinegar
1/8 cup honey
1/2 teaspoon liquid hickory smoke
1 tablespoons Worcestershire sauce
1 teaspoon chili powder
1 teaspoon curry powder
1/4 teaspoon tabasco

Steps:

  • Prepare the Sauce by heating the olive oil on low heat and cook the onion until clear. add the remainder of the sauce ingredients and simmer covered for 1/2 hour. Fry the bacon until it starts to become crispy. Chop bacon into fine peices and mix with the venison, add egg and mix well. Separate the venison into 3 equal balls and form 3 burgers Place on a hot barbecue, brush on sauce, and flip after 5 min and cook for an additional 2 min top with blue cheese and cook until done (2-5 min). Place on bun and top with tomato and arugula

Number Of Ingredients 12

1 lb Ground Venison
1/2 lb Ground Pork
Salt & Pepper to taste
1/2 medium Onion, chopped
1/4 cup Bread Crumbs
1 tablespoon Worcestershire sauce
2 tablespoons Olive oil
1 teaspoon minced garlic
1 Egg (beaten)
4 Thick slices Cheddar Cheese
4 Slices of Bacon
4 Hamburger Buns (not the cheap ones)

Steps:

  • 1. Cook bacon in a skillet over medium heat until browned and crispy. Remove bacon from pan, cut in half, and set aside. 2. In a large mixing bowl, combine venison, pork, Worcestershire sauce, salt, pepper, chopped onion, bread crumbs, minced garlic and egg, until evenly combined. Refrigerate for 20 minutes. 3. Preheat an outdoor grill at medium-high heat. 4. Remove the meat from the fridge and shape the mixture into 4 - 1/2lb patties. Brush burgers with olive oil (be careful because they will flame up) and grill about 4 minutes per side (time will very upon preference). Top each burger with a slice of cheddar cheese and two bacon strips. Serve Venison burgers on rolls with your choice of condiments.
