I NEVER would believe that I would post or better yet, enjoy anything made with Velveeta. However, when Kathy Grealy brought this to Girl's Night, we all dug in and thoroughly enjoyed this tasty and satisfying dip. And using three ingredients and a microwave, this couldn't be easier to whip up for any informal occassion.

1 (15 ounce) can hormel no-bean chili
1 (1 lb) package Velveeta cheese
8 ounces salsa

Steps:

  • Cut cheese into thin slices.
  • Mix all ingredients together in a large, microwavable bowl.
  • Microwave on High for 5 minutes; stir.
  • Microwave another 3 minutes; stir well.
  • Serve with Tortilla chips. (Best served warm).

Yet another recipe given to me by a friend after I had it at their house.

Number Of Ingredients 10

1 large onion, chopped finely
2 Tbsp vinegar
1 Tbsp sugar
1 tsp salt and pepper
2 tsp paprika
1 tsp minced garlic
1 Tbsp worcestershire sauce
1 can(s) 6 or 8 oz diced tomatoes (spiced ones would be good)
1 small can green chilies
2 lb loaf of velveeta

Steps:

  • 1. Combine all ingredients (EXCEPT the Velveeta) in a medium size sauce pan. Simmer for 1-1/2 hours;
  • 2. Melt cheese in microwave (if on stove slowly on low) and mix with ingredients that you've had simmering.
  • 3. This an be kept warm in a warming pot or crock pot; if gets too thick you can thin it with beer.
  • 4. Can be served with corn chips or lil smokies.

1 cube block (2lbs) Kraft Velveeta
1 can of mild salsa (20oz. Or less.)
1 can of Rotel tomatoes
1 lb. Ground beef, seasoned with taco seasoning
(optional) 1 onion, chopped and sautéed.

Steps:

  • Start by frying your ground beef up until it is cooked and brown, adding in taco seasoning to flavor. Concurrently, sauté your onions if you decide to, and add the two together. Slice your velveeta cheese into pieces, only in order to melt it more quickly. Put into separate pot and melt on low heat to ensure it doesn't burn. Add melted cheese into a big pot (or crock pot) along with sautéed onions, cooked meat, and salsa & rotel tomatoes. Keep this dish either in a crock pot on low heat or in the refrigerator.

I love this oldie but goodie just as much as I did the first time I had it back in the 70's as a kid! Still the perfect quick and easy dip for a casual football party get-together! I always use homemade chili rather than canned, but canned can work for you if you don't have homemade on hand. Otherwise, you can use a can of Rotel Tomatoes and Green Chili, a little chili powder and cumin, and 1/2-1 lb. Hot Italian or Andouille sausage! Just as good! 1/2 - lb. hot italian or chopped andouille sausage (i prefer johnsonville)
12 - oz. chunk mexican velveeta, cut up
2 - cups homemade chili, or about a 14-16 oz. can
- *toasted pita triangles, fritos scoops or white corn chips for dipping
- *sour cream, jalapenos and tomatoes for extra fun
- *one small crowd of hungry friends!

Steps:

  • In small frying pan, saute sausage til done breaking up as you go. *If using andouille, remove casings and pinch off pieces into pan. Drain grease. Pour into medium-sized bowl. Add cut-up Velveeta, pour chili over top. Microwave til cheese is melted stirring now and then til all is creamy. Serve with dippers and extra condiments of choice!
  • *If you don't have any leftover chili on hand, and can't stand the canned kind like me, you can sub a can of Rotel Tomatoes and Green Chilies, add a little chili powder and cumin to taste, and up the sausage if preferred.

Large (2 lb.) Velveeta, diced in small cubes
1 lb. ground beef
1/4 lb. sausage (I use Jimmy Dean traditional flavor)
1/4 cup diced onion
1 small can diced green chilis
1 can Rotel tomatoes w/chilis
1 can cream of mushroom soup
Garlic powder to taste

Steps:

  • Brown ground beef and sausage with onion. Drain and return to pan. Add remaining ingredients and cook over low heat until cheese is melted. Serve warm with tortilla chips or crackers. To reheat leftovers, add a small amount of milk if dip is too thick, and warm in microwave or in pan over low heat.

Steps:

  • BROWN AND CRUMBLE SAUSAGE. DRAIN AND PUT ASIDE CUT VELVEETA CHEESE INTO 1" CUBES AND MICROWAVE ALONG WITH ROTEL TOMATOES UNTIL MELTED. START OUT WITH 1 MINUTE AND THEN CHECK IN 15 SECOND INTERVALS. ADD THE SAUSAGE AND EAT UNTIL YOU ARE STUFFED.

1 lb ground beef

Steps:

  • Brown ground beef and drain grease.
  • Melt cheese in crockpot on low for about 3 hours. (Make sure to shred cheese or it will take a long time to melt.)
  • Add salsa and beef to crockpot.
  • Serve with tortilla chips.

Steps:

  • Variation #1:
  • Cube Velveeta into microwave-safe bowl and pour diced tomatoes & green chilies over. Microwave on high for 3 - 4 minutes and stir. Repeat until creamy and smooth. Serve with tortilla chips or corn chips.
  • Variation #2:
  • Cube Velveeta into a microwave-safe bowl pour diced tomatoes & green chilies over. Microwave on high for 3 - 4 minutes and stir. Repeat until creamy and smooth. 1/2 small onion, cut up fine
1 small -med green pepper, cut up fine
1 taco seasoning packet any flavor
1 can (15 oz.) refried beans
1 small can tomato soup
1/2 block Velveeta, cubed up

Steps:

  • Brown meat.
  • Add onion, green pepper and taco seasoning according to packet directions. Then add refried beans and tomato soup.
  • Then add the cubed Velveeta - stir until melted.
