SUMMER VEGGIE FLATBREAD

2 large naan breads or pocketless pitas (about 8-inch diameter)
1 bunch asparagus, trimmed and cut into 1 1/2-inch pieces
2 tablespoons olive oil
1 large clove garlic, minced
1 pinch crushed red pepper flakes
1 medium zucchini, shaved into long, thin ribbons with a vegetable peeler
Kosher salt
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 475 degrees F. Put the bread on a baking sheet lined with parchment paper.
  • Bring a medium pot of water to a boil. Add the asparagus and boil until just barely crisp tender, about 1 minute. Drain and run under cold water to stop the cooking.
  • Heat the oil in a small skillet or saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, 2 to 3 minutes. Brush about half the oil all over the top of the breads. Arrange the zucchini ribbons and asparagus on top and brush lightly with the remaining oil. Sprinkle with salt and top with the Parmesan.
  • Bake until the bread is crisp and the zucchini is lightly charred in spots, about 12 minutes. Cut into pieces and serve warm or room temperature.

2 whole grain naan flatbreads
2 teaspoons olive oil
1 medium yellow or red tomato, thinly sliced
1/4 cup thinly sliced onion
1/2 cup shredded part-skim mozzarella cheese
2 tablespoons shredded Parmesan cheese
1 tablespoon minced fresh basil
1/2 teaspoon garlic powder
1 teaspoon balsamic vinegar
1/2 teaspoon coarse sea salt

Steps:

  • Grill flatbreads, covered, over indirect medium heat 2-3 minutes or until bottoms are lightly browned., Remove from grill. Brush grilled sides with oil; top with tomato and onion to within 1/2 in. of edges. In a small bowl, toss cheeses with basil and garlic powder; sprinkle over vegetables. Drizzle with vinegar; sprinkle with salt. Return to grill; cook, covered, 2-3 minutes longer or until cheese is melted. Cut into wedges.

2 (8 ounce) packages crescent roll dough
8 ounces cream cheese
1/2 cup mayonnaise
2 tablespoons parmesan cheese
2 tablespoons horseradish
1 garlic clove, minced
2 cups mixed vegetables, finely chopped

Steps:

  • Unroll dough on 10x15 cookie sheet.
  • Press to seal seams.
  • Bake at 375* for 9 minutes.
  • Cool completely.
  • Mix filling ingredients
  • Spread on dough.
  • Sprinkle with finely chopped brightly colored vegetables.

½ small red onion , sliced into thin wedges
2 tbsp olive oil , plus an extra drizzle, to serve
70g cherry tomatoes
200g canned chickpeas , drained
1 small garlic clove , crushed
½ tbsp tahini
½ lemon , zested and juiced
1 flatbread
30g mixed pitted olives
20g vegetarian feta , crumbled
small handful of basil , shredded

Steps:

  • Heat the grill to its highest setting. Spread the onion wedges out on a baking tray and drizzle with 1 tbsp of the oil. Grill for 3-5 mins turning halfway through, then add the tomatoes to the tray, season and grill for a further 5 mins or until juicy and popping.
  • Put the chickpeas in a pan with the garlic and remaining 1 tbsp oil, then heat for 5 mins before crushing the chickpeas using a potato masher. Stir through the tahini, the lemon zest and juice along with 2 tbsp water. Season.
  • Warm your flatbread under the grill for a couple of minutes. Top with the crushed chickpeas, then the tomato and onion mixture. Finish with the olives, feta and basil, and a drizzle of olive oil.

1/2 pound sliced baby portobello mushrooms
1 large green pepper, julienned
4 cups fresh baby spinach (about 4 ounces)
1/4 teaspoon salt
1/8 teaspoon pepper
2 naan flatbreads or 4 whole pita breads
2 tablespoons olive oil
1/4 cup prepared pesto
2 plum tomatoes, sliced
2 cups shredded part-skim mozzarella cheese

Steps:

  • In a large skillet, heat butter over medium-high heat. Add mushrooms and green pepper; cook and stir 5-7 minutes or until tender. Add spinach, salt and pepper; cook and stir 2-3 minutes or until spinach is wilted., Brush both sides of flatbreads with oil. Grill flatbreads, covered, over medium heat 2-3 minutes on 1 side or until lightly browned., Remove from grill. Spread grilled sides with pesto; top with vegetable mixture, tomatoes and cheese. Return to grill; cook, covered, 2-3 minutes longer or until cheese is melted. Cut pizzas in half before serving.
