1 banana
2 slices wholegrain bread
1 tbsp peanut butter
½ tsp cinnamon
1 tbsp olive oil ((or coconut oil))

Steps:

  • Are you really looking for directions? Or just being lazy? It's a sandwich dude.
  • But fine:
  • Smear the peanut butter on both slices of bread.
  • Cut the banana into about 8mm thick slices and layer them over just ONE slice of bread.
  • Sprinkle cinnamon over them.
  • Place both slices on top of each other.
  • Add oil to the pan and fry both sides for 2-3 minutes until nice and brown and yummy and tasty and boom! Back to bed.

This recipe was passed along to me from my mom. Super tasty vegetarian dish! Enjoy! Recipe update: June 17 -- special thanks to those who noticed and reported the directions were messed up.

1 cup cottage cheese (can also use ricotta cheese)
1 1/2 cups saltine crackers, coarsely crushed (approximately 25 crackers)
1 teaspoon dried fine herb (Herbs of Provence or Italian Herbs)
2 -4 tablespoons butter, divided
3 medium yellow squash, thinly sliced
1 (10 ounce) package fresh spinach
3 medium tomatoes, sliced
4 slices mozzarella cheese, cut into strips

Steps:

  • Combine first 3 ingredients (cottage cheese, saltines and fine herbs) in mixing bowl and set aside.
  • Melt 2 tablespoons butter in a large skillet over medium high heat. Add squash slices, and saute 5 minutes. Spoon into a lightly greased 8 inch square baking dish.
  • Spread half of cheese mixture evenly over squash slices.
  • Place spinach in skillet and saute 3 minutes, adding 1 tablespoon butter if necessary to prevent sticking. Spoon spinach evenly over cheese mixture.
  • Spread the remaining cheese mixture evenly over spinach layer.
  • Slice tomatoes into 9 equal pieces. Saute, just enough to soften slightly. Layer them on top of the second cheese mixture.
  • Bake at 350 degrees for 20 minutes.
  • Arrange mozzarella cheese strips on top to resemble checkerboard, and bake 10 more minutes.
  • Remove from oven, and let stand 10 minutes: cut into squares. Serve immediatly.

6 slices stale brown bread
6 slices day-old white bread
butter or margarine, softened
1 (7 ounce) can tuna, drained
1/4 cup finely chopped celery
1 teaspoon dried onion flakes
1/8 teaspoon salt
1/4 cup salad dressing
6 hard-boiled eggs, chopped
2 tablespoons finely diced celery
1/2 teaspoon salt
1/2 teaspoon dried parsley flakes
1/4 teaspoon onion powder
1/4 cup salad dressing
1 (7 3/4 ounce) can salmon (red is best)
1/2 teaspoon dried onion flakes
1/2 teaspoon parsley flakes
1/8 teaspoon salt
1/4 cup salad dressing

Steps:

  • FOR THE SANDWICHES: Cut fancy shapes out of bread slices. A doughnut cutter works providing it comes apart. Cut 2 circles from EACH of the bread slices making 24 circles. Cut small circles from center of 6 white and 6 brown circles.
  • Spread SOLID circles with butter, then with filling and white over brown with buttered side down. They can be left this way with the filling showing through the center or tiny circles can be place in opposite colored tops-brown circle in white top and white circle in brown top. Makes 24.
  • FOR THE TUNA FILLING: Mix all ingredients together well. If dry, add more salad dressing. Makes 1 cup.
  • FOR THE EGG FILLING: Mix all together. If too dry, add a bit more salad dressing. Makes about 1 3/4 cups.
  • FOR THE SALMON FILLING: Remove round bones. Combine all ingredients in bowl. Add more salad dressing if too dry. Makes 1 cup.
