No meat or meat substitutes - great for winter days when fresh veggies are hard to find. Yummy vegetarian taco salad that even my 11 year old enjoys. Polenta corn chips have only 3.5g of fat per ounce - I use SOLEA polenta chips.

16 ounces kidney beans, rinsed and drained
8 3/4 ounces corn, drained
4 ounces green chilies
2 -3 roma tomatoes, diced
3 green onions, sliced
1 tablespoon taco seasoning
1/3 cup light sour cream
4 -5 cups mixed greens, shredded
5 ounces baked corn tortilla chips or 5 ounces polenta corn chips, broken

Steps:

  • Stir first seven ingredients (through sour cream) together in a large bowl until combined.
  • Gently stir in mixed greens (greens will wilt if there are leftovers, so I usually just throw the greens on the serving plate!).
  • Layer chips on serving plates and top with taco mixture.
  • Serve with your favorite taco toppings if desired, olives, shredded cheese, taco sauce, etc.

4 whole wheat tortillas (8 inches)
6 cups shredded romaine
1/2 cup canned pinto beans, rinsed and drained
1 small tomato, chopped
1/4 cup shredded reduced-fat cheddar cheese
1/4 cup chopped green onions
2 tablespoons sliced ripe olives, drained
Sliced jalapeno peppers, optional
DRESSING:
1/2 cup fat-free sour cream
2 tablespoons fat-free ranch salad dressing
1 teaspoon taco seasoning
1/4 teaspoon hot pepper sauce, optional

Steps:

  • Place four 10-oz. custard cups upside down in a shallow baking pan; set aside. Place the tortillas in a single layer on ungreased baking sheets. , Bake at 425° for 1 minute. Place a tortilla over each custard cup, pinching sides to form a bowl shape. Bake for 7-8 minutes or until crisp. Remove tortillas from cups to cool on wire racks., In a large bowl, combine the romaine, beans, tomato, cheese, onions, olives and jalapenos if desired. In a small bowl, whisk the dressing ingredients. Pour over salad ; toss to coat. Serve in tortilla bowls.

I wanted a salad like this but couldn't really find anything that fit the bill and decided to create one...this is it! The kids eat it like crazy! A really good taco pasta salad without meat...you could add it if you wanted to...but why when this is sooo tasty!! Please note that this salad gets better if made the day or even two before. If you don't like spicy you can use regular taco seasoning instead of the hot and spicy, and leave out the jalapenos. Not really sure how long to make this so it's a guess but that doesn't include the chilling time.

1 (18 ounce) package radiatore, cooked and drained
1 (16 ounce) bottle ranch dressing
1 (1 1/4 ounce) envelope of hot and spicy taco seasoning mix
1/4 cup Italian dressing (I use Paul Newmans Own Family)
1 teaspoon jalapeno, seeded and chopped
dried chipotle powder
2 (15 ounce) black beans (rinsed and drained)
2 (15 ounce) dark red kidney beans (rinsed and drained)
2 (15 ounce) corn (drained)
3 -4 green onions, chopped
1/2 red bell pepper, chopped
2 teaspoons garlic
1/4 red onion, chopped
Mexican blend cheese (I use sargentos)
2 (15 ounce) cans diced tomatoes with jalapenos (drained and squeezed)
black olives (optional. amount according to taste) (optional)

Steps:

  • Placed cooked radiatore in large bowl and add black beans, kidney beans, corn, green onions, red bell pepper, garlic and red onion, tomatoes, Black olives if your using them.
  • Sauce:.
  • in a bowl mix the ranch dressing, taco seasoning mix, Italian, jalapenos. Mix thourghly. I sprinkle the chipotle seasoning to taste.
  • pour sauce over the pasta bowl, add the cheese to your liking and stir till well coated.
  • Chill for 1 hour -- although this is better the more it ages so can be made a day or two ahead.
  • Note: You will probably have more dressing than you need, I used it as a dip with chips and cheese -- Yummy!

1/3 teaspoon ground cumin
1/4 teaspoon garlic salt
1/4 cup medium salsa
3 cups torn lettuce
1/2 cup drained canned black beans, rinsed
1/2 cup frozen whole kernel corn, thawed
1/4 medium red pepper, cut into thin strips
1 tablespoon chopped fresh cilantro
1 tablespoon lime juice

Steps:

  • Combine ground burger, cumin and salsa in microwaveable bowl; cover with paper towel.
  • Microwave on HIGH 1 to 2 min or until heated through, stirring after each 30 sec's
  • Place 1-1/2 cups of the lettuce on each of 2 salad plates; top evenly with the beans, corn, peppers and ground burger mixture.
  • Sprinkle with the cilantro and lime juice.

1 lb morningstar farms grillers burger style recipe crumbles vegetarian ground beef
1 package taco seasoning mix (I use Aroostooks' Taco Seasoning Mix)
1/4 cup water
1 cup cooked kidney bean
1 cup frozen corn kernels
1 (15 ounce) can diced tomatoes and green chilies
1 head green leaf lettuce or 1 head red leaf lettuce, torn into bite-size pieces.
1/2 cup shredded jalapeno jack cheese, shredded (optional)
1 package taco shell (I use El Lago)
1 cup nonfat yogurt (optional)
1 cup salsa (optional)
2 tablespoons mayonnaise (optional)

Steps:

  • Put diced tomatoes and taco seasoning mix into a pan on medium-low heat.
  • Rinse the diced tomato can with 1/4 cup water and add that to pan.
  • Stir taco mix in thoroughly.
  • Add the Prime Grillers Crumbles and the corn, and stir occasionally until heated through.
  • Add the beans and stir just until heated.
  • While mixture is heating, rinse and pat or spin dry the lettuce, and tear it into bite-size pieces.
  • Pile the lettuce onto plates, and top with taco mixture.
  • Top with grated cheese if desired.
  • Crumble two taco shells on top of each salad.
  • If you would like extra sauce, make and top with the optional dressing.

CREAMY VEGETARIAN TACO PASTA SALAD



Creamy Vegetarian Taco Pasta Salad image

I kinda fudged this recipe while using the stuff in my fridge for a side dish to make and take to a pig roast. I didn't use meat since the pork at the roast was the star of the show, but I'm sure you could cook up some taco flavored beef or chicken to add to this for a heartier salad. You can also adjust the temp of the salsa or use spicy taco seasoning to add a little more heat (I used medium since the kids were eating it and no one complained).

16 ounces spiral shaped pasta
1 cup light sour cream
1/2 cup mayonnaise
1 cup salsa
1 (1 ounce) envelope taco seasoning
1 (14 ounce) can black beans, rinsed and drained
1 (14 ounce) can corn, drained
1 (8 ounce) can sliced black olives, drained (optional)
1 cup shredded cheddar cheese or 1 cup shredded Mexican blend cheese
chopped lettuce, for serving
Doritos or regular tortilla chips, for serving

Steps:

  • Cook pasta according to package directions. When done, drain and rinse with cold water to stop it from cooking further.
  • While the pasta is cooking, mix sour cream, mayonnaise, taco seasoning and salsa in a medium sized bowl.
  • Place cooked pasta in a large bowl (I used the bowl that I am going to use to serve it) and add corn, black beans, and olives (if using). Stir to combine.
  • If serving immediately, go to the next step. If you are making ahead of time, cover the pasta mixture and sauce mixture in their separate bowls and keep in the fridge overnight or until you are ready to serve it (plus, this seems to make the sauce taste better).
  • About a half hour before serving (but probably not more than 2 hours before), add the shredded cheese to the pasta mixture and stir to combine.
  • Pour the sauce mixture overall and stir until well coated.
  • Serve with shredded lettuce and Doritos or tortilla chips to crush over the top of the salad. You can also stir these items in, but they get soggy and don't make for great leftovers.

2/3 cup Morningstar Farms Meal Starters Grillers recipe crumbles
3 cups romaine lettuce
2 -3 teaspoons taco seasoning
taco sauce

Steps:

  • Heat griller crumbles according to package, adding water according to your taste for consistency.
  • Add taco seasoning and let heat for 30 seconds longer so that the onion bits soften. I add extra cumin here for a smokier flavor, but you could also had a TINY bit of cayenne if you like the heat.
  • Top lettuce with "meat," then sprinkle on taco sauce.
  • Enjoy! :3 You could also top with shredded cheese, sour cream, or tomatoes, but I don't like any of those.

2 Tbsp. lime juice
2 Tbsp. honey
season to taste
Salad
8 cups lettuce, chopped
1 can (15 oz.) black beans, rinsed and drained
2 cups corn
2 cup cherry tomatoes, halved
1 red pepper, sliced
1 cup KRAFT Mexican Style Finely Shredded Taco Cheese
3 green onions, sliced
1 avocado, quartered
1 cup tortilla strips
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
season to taste

Steps:

  • In a small jar with a tight fitting lid, combine the dressing ingredients. Shake to combine.
  • In large salad bowl, combine the lettuce, black beans, corn, tomatoes, and red pepper. Toss with the dressing.
  • Plate the salad into four bowls.
  • Sprinkle 1/4 cup cheese, chopped green onions, 1/4 avocado, and 1/4 cup tortilla strips onto each individual salad.
  • Finish with sour cream, and season to taste.
  • Serve immediately.

Number Of Ingredients 6

1 15-ounce can no-salt-added black beans, rinsed and drained
1/4 to 1/2 cup salsa and 1/4 to 1/2 cup salsa (lowest sodium available), divided use
8 cups chopped lettuce
8 ounces baked tortilla chips (lowest sodium available) (about 2 1/2 cups), slightly crushed
3/4 to 1 cup shredded fat-free Cheddar or Monterey Jack cheese (3 to 4 ounces)
1/4 cup low-fat sour cream

Steps:

  • In a small bowl, stir together the beans with 1/4 to 1/2 cup salsa. Mash slightly with a potato masher or fork.
