VEGETARIAN SAUSAGE, CHEESE & EGG CASSEROLE
This is a Morningstar Farms recipe. Both my husband and I love their veggie breakfast sausage and will definitely try this recipe - it sounds delicious! Mozzarella, or any other cheese of your choice, may be substituted for cheddar. Egg Substitute (2 cups) may also be substituted for whole eggs for a healthier version.

Steps:
- In large bowl, beat together eggs, cottage cheese, milk, oregano, garlic powder, salt and pepper.
- Squeeze excess moisture from spinach. Stir spinach, Cheddar cheese, patties and onions into egg mixture. Pour into 9 x 13 x 2 inch baking dish, coated with cooking spray. Bake at 325 degrees F for 35 to 40 minutes, or until set. Let stand 10 minutes before serving.
- Cut into squares to serve. Garnish with cherry tomatoes and parsley, if desired.

VEGETARIAN BREAKFAST CASSEROLE WITH SPINACH AND MUSHROOMS
An easy breakfast casserole which you can prepare the night before... and a great vegetarian alternative to the traditional sausage and potato casseroles.

- Spray a 9x13-inch baking dish with nonstick spray. Layer bread cubes evenly across the dish.
- Beat eggs, milk, salt, and pepper in a large bowl. Pour mixture evenly over the bread cubes. Sprinkling in even layers, top with 1 cup Monterey Jack cheese, then spinach, then sliced mushrooms, then remaining cheese. Cover and refrigerate, 8 hours to overnight.
- Preheat the oven to 350 degrees F (175 degrees C).
- Remove casserole from the refrigerate and uncover. Bake in the preheated oven until set, 40 to 45 minutes.

This is a recipe I created after my boyfriend described an egg casserole I couldn't find a recipe for. He took this with him on a hunting trip and everyone loved it.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Beat eggs and milk together in a large bowl. Stir sausage, Cheddar cheese, spinach, and oregano into egg mixture; pour into prepared baking dish.
- Bake in the preheated oven until a knife inserted into the center of the casserole comes out clean, 30 to 40 minutes.

- Preheat oven to 350°. In a large skillet, cook sausage over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain and transfer to a greased 13x9-in. baking dish., In same skillet, heat butter over medium-high heat. Add onion and mushrooms; cook and stir 3-5 minutes or until tender. Stir in spinach. This casserole is a simple, easy to prepare, one-dish, meatless meal. Great for brunches. Be sure to drain the spinach really well. For non veggies, you can easily substitute ground breakfast sausage or crumbled bacon if you prefer.

- Thoroughly mix all ingredients.
- Pour mixture into a greased 9 inch pie plate (I have also used a square casserole dish as well).
- Bake at 350 for about 40 minutes or until center is set.
- Once out of the oven, I usually let it sit for 5 or 10 minutes.
- To serve, either cut into wedges, or squares, depending on what type of dish you used.
