These cauliflower fritters are super simple to make, versatile, and packed with fiber and plant-based protein. 1/2 small cauliflower head (cut into small florets)
1 (15 oz) can chickpeas ((rinsed and drained))
2 tbsp parsley (finely chopped)
2 cloves garlic (minced)
coconut oil (for frying)
1/2 heaped cup chickpea flour ((see notes))
1 1/2 tbsp ground flax seeds
1 tsp onion powder
1/2 tsp cumin (ground)
salt and pepper (to taste)

Steps:

  • Cook the cauliflower florets in salted water until tender (about 10-15 minutes), then discard the water.
  • Meanwhile, combine all dry ingredients in a bowl, and set aside.
  • Pulse all the wet ingredients (except the oil) in a food processor until combined (don't over-process, though. There should still be texture, not a paste).
  • Add the wet ingredients to the bowl of dry ingredients and combine with your hands.
  • Form 8-10 patties and fry them with a little oil in a large skillet on both sides (about 5 minutes each) until golden brown.
  • Serve with vegan sour cream, tzatziki, Ranch dressing, or tahini dressing,

Healthy Cauliflower Fritters image

Whip up this quick and easy recipe for healthy cauliflower fritters made with just six ingredients and topped with yogurt or sour cream.

1 large head cauliflower, cut into florets
1/2 cup whole wheat or all-purpose flour
2 large eggs, lightly beaten
3 cloves garlic, minced
3 Tablespoons minced scallions, plus more for garnishing
Olive oil
Yogurt or sour cream, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the cauliflower and cook it just until fork tender, 3 to 5 minutes. Transfer it to a cutting board and using a sharp knife, cut it into very small pieces. (The cauliflower pieces should be the size of peas or smaller.)
  • Measure out 4 cups of the chopped cauliflower. (Discard the remaining cauliflower or use for cauliflower tots or mashed cauliflower).
  • Combine the cauliflower, flour, eggs, garlic, scallions, 1/2 teaspoon salt and 1/4 teaspoon pepper in a bowl and stir until well combined.
  • Line a plate with paper towels. Heat a nonstick skillet over medium-low heat and lightly coat it with olive oil. Scoop out 2- to 3-tablespoon mounds of the cauliflower mixture into the pan, flattening the mounds slightly with a spatula and spacing them at least 1 inch apart.
  • Cook the fritters for 2 to 3 minutes, flip them once and cook them an additional 1 to 2 minutes until they're golden brown and cooked through. Transfer the fritters to the paper towel-lined plate. Serve them warm topped with yogurt or sour cream.

1 (2 lb) fresh cauliflower (broken into about 1-1/2-inch pieces)
3 large eggs, lightly beaten
1 tablespoon fresh minced garlic (or to taste)
2 -3 tablespoons minced onions, minced (optional)
1 teaspoon lousianna hot sauce (or Tabasco to taste)
1 tablespoon flour (might need a tablespoon more to hold together)
1 teaspoon baking powder
1/2 teaspoon paprika (or to taste)
1 -2 teaspoon seasoning salt (or to taste)
1/2 teaspoon black pepper (or to taste)
1 -2 tablespoon fresh parsley, finely chopped
oil (for frying)

Steps:

  • Cook the cauliflower for about 6-8 minutes or until soft enough to mash; drain very well.
  • Place the cauliflower in a large bowl and mash with a fork.
  • Add in the eggs and all the remaining ingredients; mix to combine (adjust all seasonings and hot sauce to taste, if you find that the mixture is too wet then add in a little more flour).
  • Heat a small amount of oil in a large skillet over medium-high heat.
  • Working in batches drop about a heaping tablespoonful of batter into hot oil; brown one side then turn and brown the other side (about 3 minutes per side).
  • Remove to a paper towel.
  • Repeat with remaining batter, adding in a little more oil if needed.
  • Serve with sour cream.
