8 slices bacon
2 heads fresh broccoli, chopped
1 ½ cups sharp Cheddar cheese, shredded
½ large red onion, chopped
¼ cup red wine vinegar
⅛ cup white sugar
2 teaspoons ground black pepper
1 teaspoon salt
⅔ cup mayonnaise
1 teaspoon fresh lemon juice

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and crumble.
  • In a large bowl, combine broccoli, cheese, bacon and onion.
  • Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice. Combine dressing with salad. Cover, and refrigerate until ready to serve.

1/2 cup Miracle Whip or 1/2 cup vegan mayonnaise
2 tablespoons red wine vinegar
2 teaspoons sugar (use less if you prefer less sweet taste)
4 cups broccoli, chopped
1/2 cup walnuts
1 cup craisins

Steps:

  • Combine miracle whip, vinegar and sugar in a small bowl.
  • Mix broccoli, walnuts, and craisins.
  • Pour dressing over broccoli mixture, mix to combine.
  • Chill one hour or overnight.

2 heads broccoli, cut into florets
1 head cauliflower, cut into florets
1 medium carrot, shredded
¼ medium red onion, minced
5 slices cooked and crumbled bacon
1 cup mayonnaise
¼ cup red wine vinegar
1 tablespoon cayenne pepper sauce (such as Frank's® RedHot®)
½ teaspoon garlic powder
salt and ground black pepper to taste

Steps:

  • Bring a large pot of water to a boil. Add broccoli and cauliflower florets to the boiling water and cook for 3 minutes. Drain, then transfer florets to a bowl of ice water to cool.
  • Whisk mayonnaise, vinegar, pepper sauce, garlic powder, salt, and pepper for dressing together in a bowl.
  • Remove florets from the ice water and put on paper towels to dry.
  • When ready to serve, transfer florets to a large bowl. Mix in carrot, onion, and bacon. Pour in dressing and toss until well distributed. Let rest for 5 minutes before serving.
