6 cups reduced-sodium vegetable broth
2 cans (14-1/2 ounces each) fire-roasted diced tomatoes
2 celery ribs, sliced
2 medium carrots, chopped
1-3/4 cups sliced baby portobello mushrooms
1 medium onion, chopped
1 medium parsnip, peeled and chopped
1 medium sweet potato, peeled and cubed
1 medium green pepper, chopped
1 cup uncooked wild rice
2 garlic cloves, minced
3/4 teaspoon salt
1/4 teaspoon pepper
2 bay leaves
2 fresh thyme sprigs, plus more for topping

Steps:

  • Combine all ingredients in a 6- or 7-qt. slow cooker. Cover and cook on high until rice and vegetables are tender, 5-6 hours. Discard bay leaves and thyme sprigs before serving. If desired, remove leaves from remaining thyme sprigs and sprinkle over soup when serving.

1 pound boneless skinless chicken thighs, trimmed and cut into 1-inch pieces
2 cups frozen corn (about 10 ounces), thawed
1 package (6 ounces) long grain and wild rice mix
1 medium sweet red pepper, finely chopped
2 medium carrots, finely chopped
1 medium leek (white portion only), finely chopped
1 celery rib, finely chopped
3 bacon strips, cooked and crumbled
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1/2 teaspoon salt
6 cups reduced-sodium chicken broth
1/3 cup dry sherry or additional broth
1 cup sour cream
1 tablespoon all-purpose flour
1 cup cut fresh asparagus (1-inch pieces)
Chopped green onions, optional

Steps:

  • Place first 12 ingredients in a 5- or 6-qt. slow cooker; stir to combine. Cook, covered, on low until chicken and vegetables are tender, 6-8 hours., Mix sour cream and flour until smooth; stir into soup. Stir in asparagus. Cook, covered, on high until soup is thickened and asparagus is tender, 20-25 minutes. If desired, serve with green onions.

From Penzy's Thanksgiving Catalog, submitted by Brohter Aelred. He notes 8 cups dark turkey meat chopped can replace the chicken breast. He highly recommends using the Parmesean cheese rind as it adda alot to the flavor of the soup. Prep and Cooking times do not include stock making time.

2 lbs chicken breasts, bone in
4 quarts water
1/2 medium onion, peeled
1 large carrot, cut into 2-3 pieces
1 large celery rib, cut in half
1 -2 bay leaf
4 tablespoons chicken base (or turkey base if using turkey)
4 ounces wild rice
3 large carrots, cut into 1/2-inch pieces
3 large celery ribs, large dice
1/2 medium onion, large dice
2 medium zucchini, large dice
1/2 lb mushroom, fresh, sliced
1 (15 ounce) can diced tomatoes, drained
parmesan cheese, rind cut into 3 square 1-inch pieces (optional)
black pepper, to taste

Steps:

  • For the stock - In a large stock pot, bring the chicken, water, onion, carrot, celery and bay leaves to a boil. Boil until the chicken is cooked through. Remove the chicken, shred and return to the pot. Discard the bones. Add the soup base and stir to dissolve. If starting with cooked turkey, mix with water, bay leaves and soup base and bring to boil.
  • For the soup - After returning the chicken to the pot, bring back to boil. Add the wild rice and cook for 15 minutes. Remove the stock veggies (onion, carrot, celery and bay leaves) and discard. Add the diced carrots, celery and onion and cook for 15 minutes. Add zucchini, mushrooms and tomatoes and cook for another 10 minutes. Add the Parmesean cheese rinds, if using, and the Pepper and cook for another 5-10 minutes more until the cheese gets melty.
  • Serve with biscuits or bread.

4 quarts water
1/2 medium onion, peeled
1 large carrot, peeled, 2-3 pieces
1 large rib celery, cut in half
1-2 whole turkish bay leaves
4 tablespoons chicken or turkey soup base
Soup:
4 oz. wild rice
3 large carrots, large dice {1/2" pieces}
3 large ribs celery, large dice
1/2 medium onion, large dice
2 medium zucchini, large dice
1/2 lb. fresh mushrooms, sliced
1 can diced tomatoes, drained
3 square inches of Parmesan cheese rinds, cut into 1/2" pieces {opt}
Freshly ground black pepper, to taste

Steps:

  • FOR THE STOCK: In an 8 quart stock pot, bring the chicken or turkey, water, onion, carrot, celery and bay leaves to a boil. Boil until the chicken is cooked through. Remove chicken, shred and return to the pot. Discard the bones. Add soup base and stir to dissolve. If starting with cooked turkey, mix it with water, bay leaves and soup base and bring to a boil. 3 carrots, sliced
1 red bell pepper, chopped
4 large portabella mushroom caps, chopped
3 celery ribs, chopped
1 large white onion, chopped
1 garlic clove, minced
1 (14 1/2 ounce) can no-salt-added diced tomatoes, in juice
1/2 head cauliflower, florets and stalks chopped
6 ounces fresh green beans, cut into small pieces
1 medium zucchini, sliced
1 cup wild rice, uncooked
7 cups water
1 chicken bouillon cube
1 small head cauliflower, cut into florets and chopped
salt and pepper, to taste

Steps:

  • Coat a stock pot with nonstick cooking spray and heat over medium heat.
  • Add first 6 ingredients and cook, stirring occasionally, until volume reduces by approximately 1/3.
  • Add the diced tomatoes and stir well.
  • Add the cauliflower, green beans, and zucchini.
  • Cover with 7 cups of water, bring to a boil.
  • Add bouillon and stir.
  • When bouillon dissolves, add the rice and simmer for 1 hour, stirring occasionally.
  • Add salt and pepper to taste.

4 stalks celery, chopped
1 medium onion, chopped
3 carrots, shredded
1/2 medium green pepper, chopped
2 (4 ounce) cans sliced mushrooms, drained, reserve liquid
9 slices bacon, cut into 3/4 inch pieces
2 tablespoons butter
1/2 cup flour
1/2 teaspoon pepper
1 teaspoon salt
6 cups chicken broth
2 cups cooked pheasant breast, chopped (or Chicken)
1 pint half-and-half
2 tablespoons parsley flakes
2 cups cooked wild rice

Steps:

  • While cooking rice, brown bacon pieces in a dutch oven or large pot.
  • Take out bacon pieces once browned and save for later.
  • Add butter to bacon drippings. Saute' celery, onion, carrots, green pepper and mushrooms until vegetables are tender.
  • Add flour, salt and pepper. Stir over heat until flour is of a pasty to bubbly consistency.
  • Add chicken broth and reserved mushroom liquid. Stir and cook until thickened(10 - 15 minutes).
  • Add bacon pieces, wild rice, half and half and parsley. Simmer about 15 minutes. Do not boil.

2 large onions, chopped (2 cups)
1 medium leek, rinsed, cut in half lengthwise and chopped, light part only (2 cups)
1 1/2 cups chopped celery

2 cloves garlic, finely chopped
1/2 teaspoon coarse sea salt

2 teaspoons chopped fresh thyme leaves
