1 large Spanish onion, sliced
2 Cornish hens
Cornbread Stuffing, recipe follows
Olive oil
Kosher salt
Freshly ground black pepper
4 tablespoons unsalted butter
1 cup yellow onion, chopped
2 1/2 cups cornbread
1 celery stalk, diced
1/4 cup chicken stock
2 tablespoons chopped flat-leaf parsley
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the sliced onion in the bottom of a roasting pan. Remove the giblets from the hens, and rinse them inside and out. Remove any excess fat and leftover pinfeathers and pat the outsides dry. Place the hens on top of the sliced onion.
  • Pack the cavities of the hens with the cornbread stuffing.
  • Tie the legs together with kitchen string and tuck the wing tips under the body of the hens. Rub the hens with olive oil and sprinkle with salt and pepper.
  • Roast the hens for 30 minutes, or until the juices run clear when you cut between a leg and thigh.
  • Melt the butter in a large saute pan. Add the onion and cook for 5 minutes over medium-low heat, until translucent. Break the cornbread into pieces and place the pieces in a large bowl. Add the onion mixture to the cornbread. Add the celery, chicken stock, parsley, salt and pepper, and mix together.

1/2 cup chopped celery
1/4 cup chopped onion
1/2 cup butter, divided
3 cups crumbled cornbread
3 cups soft bread crumbs
1 jar (2 ounces) diced pimientos, drained
1 cup chicken broth
1 large egg
1/2 teaspoon poultry seasoning
1 teaspoon salt, divided
1/2 teaspoon pepper, divided
2 Cornish game hens (20 to 24 ounces each)
1 garlic clove, minced
1 teaspoon grated lemon zest
3/4 teaspoon chopped fresh mint or 1/4 teaspoon dried mint flakes

Steps:

  • In a large skillet or saucepan, saute celery and onion in 2 tablespoons butter until tender. Remove from the heat. Stir in cornbread, bread crumbs, pimientos, broth, egg, poultry seasoning, 1/2 teaspoon salt and 1/4 teaspoon pepper; mix well. , Stuff each hen with 3/4 cup stuffing. Place extra stuffing in a greased 1-qt. baking dish; refrigerate. Place hens breast side up on a rack in a greased 13x9-in. baking dish. Cover loosely with foil; bake at 375° for 45 minutes. , Meanwhile, in a saucepan, melt the remaining butter; add garlic, lemon zest, mint and remaining salt and pepper. Brush over hens. Bake 15-30 minutes longer or until a thermometer reads 180° for hens and 165° for stuffing. Bake the extra stuffing, covered, for 30 minutes.

6 medium potatoes, quartered
6 medium carrots, cut in half lengthwise and cut into chunks
1 large sweet onion, cut into wedges
1/2 cup butter, melted
2 teaspoons dried oregano
2 teaspoons dried rosemary, crushed
1-1/2 teaspoons garlic salt
6 Cornish game hens (20 to 24 ounces each)
1 tablespoon olive oil

6 x 1 1/4 lbs Cornish hens
3 tablespoon olive oil -- plus more for drizzling over the hens
1 small yellow onion -- peeled and finely chopped (5 oz.)
2 small carrots -- peeled and shredded (4 oz.)
1 large celery rib -- finely chopped
1 1/2 teaspoon salt -- plus more for seasoning the hens
1/2 teaspoon black pepper -- plus more for seasoning the hens
1 medium zucchini -- trimmed and shredded (8 oz.)
1 small sweet potato (yam) -- peeled and shredded (8 oz.)
1 small baking potato -- peeled and shredded (11 oz.)
2 large garlic cloves -- crushed
1 tablespoon fresh ginger -- finely minced
2 garlic cloves -- crushed
9 tablespoon apricot jam
3 tablespoon honey

Steps:

  • Clean the Cornish hens well, rinse inside and out and pat dry. Season the insides with salt and pepper, place in a roasting pan and refrigerate until ready to stuff. For the stuffing, heat the olive oil in a large skillet over medium heat. Add the onion, carrot, celery, salt and pepper and sweat for 5 minutes. Add the zucchini, sweet potato, baking potato and garlic and cook, stirring, for another 15-20 minutes, until all of the vegetables have softened. Remove from heat, transfer to a bowl and cool completely. Once cool, you can start stuffing the hens. Preheat your oven to 400° F. Divide the stuffing among the hens, stuffing each cavity with about 1/2 a cup of stuffing. You can use string to tie the legs together, but it's not necessary. Once they're all stuffed, drizzle a little olive oil over each of them and rub the oil over them. Season with salt and pepper. Roast for 40 minutes. While the hens are roasting, mix all of the glaze ingredients together in a small bowl. After 40 minutes, brush each hen generously with the glaze. Roast another 10 minutes, then glaze again and roast another 10 minutes. Stick the point of a knife into the leg joint -- if the juices run clear, the hens are done. Let them rest for 5 minutes, then serve. If they need a little more cooking, baste with the juices then roast another 5-10 minutes, until the juices run clear.

Cornish game hens stuffed with a vegetable mixture, then roasted. A Cornish game hen recipe that I found and tweaked a bit for the taste and size of our small family, but it would be very easy to adjust it to fit your needs. It goes well with oven-roasted potatoes.

2 Cornish game hens
½ cup melted butter
½ onion, chopped
½ stalk celery, chopped
¼ green bell pepper, chopped
1 (4.5 ounce) can mushrooms, drained and chopped
2 cloves garlic, minced
1 tablespoon dried basil
1 teaspoon dried oregano
1 tablespoon chopped fresh parsley
¼ cup melted butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a small bowl combine the 1/2 cup melted butter, onion, celery, bell pepper, mushrooms, garlic, basil, oregano and parsley.
  • Season hens inside and out with salt and pepper to taste, then stuff with equal amounts butter/vegetable mixture. Place stuffed birds in a 9x13 inch baking dish, breast side up. Drizzle with 1/4 cup melted butter.
  • Cover dish and bake in the preheated oven for 1 1/2 hours. Remove cover and brown at 500 degrees F (260 degrees C).

2 tablespoons lemon-pepper
1 tablespoon dried basil
1 tablespoon poultry seasoning
2 tablespoons olive oil
6 Cornish game hens, about 1 1/2 pounds each, rinsed and dried thoroughly
1 green bell pepper, large dice
2 stalks celery, large dice
1 onion, large dice

Steps:

  • Preheat oven to 375 degrees F.
  • In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. This recipe is enough for 4 Cornish hens but if you are just cooking two put the rest of the stuffing in an oven proof dish and heat for about 25 minutes. In this way you can accommodate your vegetarians friends as well.

1 cup carrot, shredded
1 cup celery, finely chopped
1/3 cup leek, cleaned and finely chopped (white end only)

2 tablespoons butter or 2 tablespoons margarine
1/2 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon pepper
3 slices whole wheat bread, fresh crumbs

3 cups cooked bulgur (see recipe) at room temperature
3 tablespoons finely chopped parsley
1/4 cup corn, peanut or vegetable oil
1 tablespoon freshly squeezed lime or lemon juice
1/2 teaspoon poultry seasoning or finely chopped sage
1 clove garlic, peeled and crushed

Steps:

  • Preheat the oven to 350 degrees.
  • Sprinkle the hens inside and out with salt and pepper. Blend the bulgur and parsley in a mixing bowl.
  • Stuff each game hen with an equal portion of the bulgur mixture. Truss the hens.
  • Place a rack in a shallow roasting pan. Arrange the hens breast side up on the rack. To prepare a basting sauce, blend the remaining ingredients, salt and pepper.
  • Brush the hens with the basting sauce. Place in the oven and roast one hour, basting often with the sauce. Remove the trussing string and serve.

1 (6 1/4 ounce) package quick-cooking long grain and wild rice mix
2 celery ribs, chopped
1 small onion, chopped
2 tablespoons butter, divided
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
1 (4 ounce) can mushroom stems and pieces, drained
4 Cornish hens, 24 ounces each
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook the rice according to package directions.
  • In a small skillet, saute celery and onion in 1 tbsp butter until tender. Stir in the soup, mushrooms and prepared rice.

2 tablespoons slivered almonds
2 tablespoons chopped onion
⅓ cup uncooked wild rice
1 cup water
1 cube chicken bouillon
½ teaspoon salt
2 Cornish game hens
salt to taste
¼ cup melted butter

Steps:

  • Melt 3 tablespoons butter in a medium saucepan over medium heat. Stir in the almonds, onion, and uncooked wild rice. Saute 5 to 10 minutes. Mix in the water, chicken bouillon cube, and 1/2 teaspoon salt. Bring to a boil. Reduce heat, cover, and cook 45 minutes until rice is tender and easily fluffed with a fork.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Season the Cornish game hens inside and out with salt, and stuff with the rice mixture. Place the hens breast side up on a rack in a baking pan. Brush with 1/4 cup melted butter.
