This is one of my favorite soups. So hearty and flavorful! Wonderful on a cool fall evening!

Number Of Ingredients 12

2 lb pork meat, diced
6 medium diced potatoes
1 pkg frozen mixed vegetables
1 can(s) (15 oz.) diced tomatoes
1 small onion, diced
1 pkg frozen corn
2 c fresh shredded cabbage
5 c chicken broth
salt & pepper to taste
garlic powder to taste
2 bay leaves
canola oil for browning

Steps:

  • 1. Sprinkle pork with salt, pepper and garlic powder. Brown pork in oil, in a large skillet; drain off oil.
  • 2. Transfer pork to a 6-qt. slow cooker. Add the remaining ingredients except cabbage. Cover and cook on low for 6 hours or until meat is tender. Add cabbage in last hour of cooking. Discard bay leaves. Serve with biscuits or rolls.

1 boneless pork loin chop (4 ounces), cut into 1/2-inch cubes
1/4 pound smoked kielbasa or Polish sausage, chopped
1/4 cup chopped onion
1 celery rib, chopped
1 small carrot, chopped
1 teaspoon butter
1 garlic clove, minced
1/4 teaspoon paprika
2 cups reduced-sodium chicken broth
1 small tart apple, chopped
1 small red potato, chopped
1/4 teaspoon Chinese five-spice powder
1 teaspoon honey

Steps:

  • In a large saucepan, cook the pork, sausage, onion, celery and carrot in butter over medium-high heat for 5 minutes or until pork is no longer pink and vegetables are tender. Add garlic and paprika; cook 1 minute longer. , Stir in the broth, apple, potato and five-spice powder. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until pork is tender. Stir in honey; cook for 2 minutes or until heated through.

This delicious soup is inspired by Pork Sinigang (Sinigang Na Baboy) that I first tasted in the Philippines. It is full of vegetables and the lemon juice gives it a very interesting depth of flavor. If you like lemon you should enjoy this lemon flavored soup. The lemon grass and ginger are optional, the soup is still good...

Number Of Ingredients 14

1 Tbsp olive oil
1-1/2 c chopped onion
2 clove garlic, chopped
6 medium tomatoes, quartered
2 lemons, squeezed for juice
2 lb pork loin, cut into bite size pieces
6 c water
2 pieces lemon grass, bruised with a malat or rolling pin (optional)
4 slice dime size, ginger (optional)
2 c daikon radish, peeled & diced
1 rutabaga, peeled and diced
1 lb greens, chopped (spinach, chard, kale, etc.)
3 fresh whole hot green peppers
1 Tbsp patis or salt to taste (patis is fish sauce)

Steps:

  • 1. Saute onion in oil until translucent add garlic and cook 1 minute longer. Add tomatoes and lemon juice. Add pork and cook till browned, no longer pink.
  • 2. Add water, ginger, and lemon grass. Bring to a boil and simmer until pork is tender. When tender, add the radish and rutabaga and simmer until fork-tender.
  • 3. Add the green vegetable, whole hot peppers, and salt or patis to taste. Cook for another 5 to 7 minutes. Serve hot. Remove and discard the lemon grass, ginger, and hot peppers.

PORK NOODLE SOUP WITH GINGER AND TOASTED GARLIC



Pork Noodle Soup With Ginger and Toasted Garlic image

This soup, based mostly on pantry staples, can be made with a variety of proteins, noodles and greens depending on what you have on hand. Snow pea leaves are exceptional here, which can be found in many Asian grocers year-round, but spinach, Swiss chard or other dark leafy green would work well. Don't skip the raw onion, the soup's finished complexity depends on it.

3 tablespoons neutral oil, grapeseed, vegetable or canola
8 garlic cloves, thinly sliced
1 pound ground pork
1 1/2 teaspoons red-pepper flakes, plus more to taste
Kosher salt and black pepper
4 cups chicken broth
3 tablespoons soy sauce or tamari, plus more to taste
1 large bunch pea leaves or spinach, thick stems removed, leaves coarsely chopped
1 tablespoon finely grated fresh ginger (from about a 1 1/2-inch piece)
6 ounces rice noodles (thick- or thin-cut), cooked and drained
1/2 medium red, yellow or white onion or 3 scallions, thinly sliced
1 cup cilantro, leaves and tender stems, coarsely chopped

Steps:

  • Heat vegetable oil in a large, heavy-bottomed pot over medium.
  • Add garlic and cook, stirring occasionally, until the slices become nicely toasted and golden brown, 2 or 3 minutes. Using a slotted spoon, remove garlic and set aside.
  • Add pork and red-pepper flakes to the pot, and season with salt and pepper. Cook, using a wooden spoon or spatula to break up large pieces, until the pork is well browned and in small bite-size pieces, 5 to 8 minutes.
  • Add chicken broth, soy sauce and 4 cups water. Bring to a simmer and cook for about 5 to 8 minutes or so, until the pork is very tender and the broth tastes impossibly good. (Give it a taste and season with salt, pepper, red-pepper flakes and soy sauce, if you want.) Add pea leaves, half of the onion slices, and all of the ginger. Stir to wilt the leaves.
  • To serve, ladle soup over noodles and top with remaining onion, cilantro and toasted garlic.

Sinigang is soup cooked with sour vegetables, lemon, or lime. It is one of my favorite soups.

2 clove garlic, crushed
1 Tbsp cooking oil
1-1/2 c chopped onion
6 medium tomatoes, quartered
1 to 2 lemons, juiced
2 lb pork loin, cut into serving pieces
6 c water
3 yams, peeled and quartered
1 lb spinach or any green leafy vegetable
3 fresh, whole italian hot green peppers
1 Tbsp patis or salt to taste (patis is fish sauce)

Steps:

  • 1. Saute garlic in oil until brown.
  • 2. Add onion, tomatoes and lemon juice.
  • 3. Add pork and cook till brown.
  • 4. Add water. Bring to a boil and simmer until pork is tender. When tender, add the yams and simmer until fork-tender.
  • 5. Add the green vegetable, hot peppers, and salt or patis to taste. Cook for another 5 to 7 minutes. Serve hot.
