Jello Vegetable Salad image

A nice summery side dish, good at buffets, potlucks, or Sunday night suppers. You can use any colorful vegetable combination you like. We've made this in our family for years.

2 packages lime gelatin
1/2 cup finely diced red radish
1/2 cup finely diced green pepper
1/2 cup finely diced carrot
thousand island dressing

Steps:

  • Make jello according to package directions.
  • Pour into glass serving dish, or mold, which ever you prefer.
  • Let the jello thicken a bit, so your vegetables won't sink.
  • Stir in the vegetables, and chill until set.
  • Serve with Thousand Island dressing on the side.

We always used to have this at the holidays at our house when I was growing up...I really enjoy it alot, and so does my family...Try it, it's a great addition to any meal, especially Thanksgiving and Christmas...Enjoy!

1 (6 ounce) package Jello gelatin, any flavor that you like. I use orange, raspberry, cherry, prepared as directed on box
1/2 cup cabbage, shredded
1/2 cup carrot, shredded
1/2 cup celery, sliced, then chopped
1 cup walnuts, chopped

Steps:

  • Cut veggies and nuts and shred, slice and chop as directed. Set aside.
  • Make jello according to pkg. directions, and put in a jello mold or a glass dish, and put into refrigerator. Watch jello carefully.
  • When jello starts to gel, add the veggies and walnuts, mixing carefully to distribute throughout jello.
  • Let jello finish setting.
  • Cut into slices or squares.
  • Serve atop a lettuce leaf, or by itself with your favorite meal.

Mom made this for dinner at least once a week. When she first starting making it they had a Vegetable Jello Mix they quite making it so mom started using Lemon Jello and it works great! It's a good way to get kids to get their vegetables. You can use sugar free jello we did.

1 small pkg lemon jello (sugar free)
2 c boiling water
3 radishes, sliced
1 green onion, sliced thin
small amount shredded cabbage
1/2 c cheddar cheese, shredded (or american cheese)
1 Tbsp vinegar
a pinch of salt
1 c cottage cheese, small curd (not drained)

Steps:

  • 1. In a bowel put the Lemon Jello and the boiling water mix until the jello is dissolved. Add the vinegar and the salt.
  • 2. Chop all Vegetables.
  • 3. Add all other ingredients put in refrigerator until set. You can put a tablespoon of mayo on top if you like.

1 small package, lemon jello
1 c boiling water
16 oz cottage cheese
1 Tbsp onion (minced small)
1 Tbsp green pepper (minced small)
3 Tbsp carrot (minced small)
1/3 c mayo or salad dressing
1/2 tsp salt
1 c half & half cream

Steps:

  • 1. Dissolve jello in cup of hot water. Cool and add cottage cheese, 1/2 & 1/2, salt and salad dressing. When it starts to thicken, stir in carrots, onion and pepper.
