1 teaspoon olive oil
½ cup chopped onion
1 clove garlic, minced
½ cup diced green bell pepper
1 zucchini, halved lengthwise and cut in 1/4 inch slices
2 cups cooked and diced potatoes

2 tablespoons black olives
4 eggs
salt and pepper to taste
¼ teaspoon dried oregano
1 pinch cayenne pepper
½ small tomato, sliced

Steps:

  • Preheat the broiler on your oven.
  • In a frying pan with an ovenproof handle heat the oil and saute onion, garlic and green bell pepper over a low heat. Saute until vegetables are just tender but not browned. Add the zucchini and continue cooking, stirring occasionally, until crisp-tender. Add the potatoes, stir well to combine, and continue cooking, stirring frequently, until the potatoes are heated through and starting to stick to the pan.
  • Then add the tomatoes and black olives, stirring well to combine with the other ingredients, and cook just until the tomatoes have begun giving up their juice.
  • Beat the eggs with the salt, pepper, oregano, and cayenne. When all the vegetables are cooked, pour the eggs over them
  • Arrange the tomato slices over the top of the eggs, and sprinkle the mozzarella and Parmesan cheeses over the tomato slices. Cook gently over low heat until the eggs are almost set (they'll be firm around the edges and a bit runny in the middle).
  • Slip the pan under the broiler for a minute or two, until the eggs are fully set and the cheese has melted and begun to brown. Cut into wedges and serve.

2 tablespoons olive oil
1 large leek (white part only), chopped
1 teaspoon salt, divided, or as needed
1 jalapeno pepper, seeded and diced
1 ½ cups (1/2-inch) sliced zucchini
1 ½ cups (1/2-inch) pieces asparagus
1 cup baby spinach
1 ½ cups sliced cooked potatoes
12 large eggs
1 pinch cayenne pepper
½ teaspoon freshly ground black pepper
4 ounces crumbled goat-milk feta cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in heavy 10-inch skillet over medium heat. Cook leek with a pinch of salt, stirring occasionally, until leeks soften and start to turn translucent, 5 to 6 minutes. Add jalapeno and zucchini; season with pinch of salt. Cook until zucchini start to get tender and pale green, about 5 minutes. Add asparagus and cook until bright green, about 1 minute. 3/4 cup 2% reduced-fat cottage cheese
4 ounces smoked gouda cheese, shredded (about 1 cup)
1 teaspoon minced fresh rosemary
3 cloves garlic, thinly sliced
2 tablespoons extra-virgin olive oil
1 medium onion, chopped Kosher salt
1 16-ounce package frozen mixed vegetables (broccoli, cauliflower and carrots), thawed
2 tablespoons grated parmesan cheese
1 scant teaspoon paprika
4 slices multigrain bread

Steps:

  • Position a rack in the upper third of the oven and preheat to 450 degrees F. Whisk the whole eggs and whites in a bowl. Add the cottage cheese and whisk until almost smooth. Whisk in the gouda and rosemary.
  • Cook the garlic in the olive oil in a 10-inch nonstick ovenproof skillet over medium-high heat until it starts to brown, 1 to 2 minutes. Add the onion, season with salt and cook 2 minutes. Add the vegetables, increase the heat to high and cook until just tender, about 5 minutes.
  • Reduce the heat to medium. Spread the egg mixture evenly in the pan. Cook, undisturbed, until a thin crust forms on the bottom, about 2 minutes. Run a rubber spatula around the edge to release the egg from the pan. Continue cooking until the bottom is golden, 2 to 3 more minutes. Sprinkle with the parmesan and paprika; transfer to the oven and bake until just set, 5 to 7 minutes. Remove from the oven, cover and let sit, 5 to 7 minutes. 1 yellow bell pepper, seeded and 1 1/2-inch diced
1 red onion, 1 1/2-inch diced
1/3 cup good olive oil
Kosher salt and freshly ground black pepper
2 teaspoons minced garlic (2 cloves)
12 extra-large eggs
1 cup half-and-half
1/4 cup freshly grated parmesan cheese
1 tablespoon unsalted butter
1/3 cup chopped scallions, white and green parts (3 scallions)
1/2 cup grated gruyere cheese

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the zucchini, peppers and onion on a sheet pan. Drizzle with the olive oil, sprinkle with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and toss well. Bake for 15 minutes. Add the garlic, toss again and bake for another 15 minutes. Remove from the oven and turn the oven to 350 degrees F.
  • Meanwhile, in a large bowl, whisk together the eggs, half-and-half, parmesan, 1 teaspoon salt and 1/2 teaspoon pepper.
  • In a 10-inch ovenproof saute pan, melt the butter and saute the scallions over medium-low heat for 1 minute. Add the roasted vegetables to the pan and toss with the scallions. Transfer the pan to the oven and bake the frittata for 20 to 30 minutes, until puffed and set in the middle. Sprinkle with the gruyere and bake for another 3 minutes, until the cheese is just melted. 1/4 cup fresh basil or parsley leaves, or 1 teaspoon chopped fresh tarragon or mint leaves, or any other herb
2 or 3 eggs
1/2 cup freshly grated Parmesan cheese (optional)

Steps:

  • Put olive oil in a skillet (preferably nonstick or well-seasoned cast iron) and turn heat to medium. When fat is hot, add onion, if using, and cook, sprinkling with salt and pepper, until it is soft, 3 to 5 minutes. Add vegetables, raise heat and cook, stirring occasionally until they soften, from a couple of minutes for greens to 15 minutes for sliced potatoes. Adjust heat so vegetables brown a little without scorching. (With precooked vegetables, just add them to onions and stir before proceeding.)
  • When vegetables are nearly done, turn heat to low and add herb. Cook, stirring occasionally, until vegetables are tender.

2 cups vegetable stock
1 cup parsnips, peeled and diced into roughly 1/2-inch cubes
1 cup cauliflower, broken into florets
1 cup zucchini, cut into roughly 1/2-inch slices
1/2 cup quinoa, uncooked
1/2 cup red plum tomato, cored and diced
2 teaspoons Herbs de Provence (or equal parts thyme, oregano, marjoram, basil and sage)
2 teaspoons Roquefort or other blue cheese
4 eggs

Steps:

  • Preheat oven to 375 degrees.
  • Heat stock in a saucepan over medium heat to boiling. Add parsnips and cook 5 to 7 minutes, until al dente. Remove parsnips from stock with a slotted spoon and put in large bowl. Reserve stock; it will be used to cook other frittata ingredients.
  • Add cauliflower to heated stock and cook 5 to 7 minutes, until al dente. Remove cauliflower and add to bowl with parsnips.
  • Add zucchini to stock and cook about 1 minute, then remove and add to vegetables in bowl.
  • Add quinoa to simmering stock, bring to a boil and cook about 5 minutes, or until al dente. Remove the quinoa from the stock and add to vegetables in bowl. (The broth, enriched with flavor and vitamins from the vegetables, can be stored and re-used.)
  • Add diced tomato, herbs and Roquefort to the cooked vegetables and quinoa. Mix until the cheese combines completely with the other ingredients.
  • In a small bowl, whisk the eggs with a fork until whites and yolks are mixed. Add the eggs to the vegetable mixture and stir gently.
  • Rub 1 teaspoon butter on the bottom of a 10-inch nonstick ovenproof fry pan (or coat with nonstick spray). Heat the pan on the stovetop on medium until the butter is frothy, lower the temperature to medium-low and add the frittata mixture. Cook for a few minutes, then finish in the oven until done to your taste. (Leaving them slightly runny makes for a velvety texture.)
  • Flip onto a plate by holding the plate upside down on top of the pan and flipping pan and plate together. You can brush the top of the frittata with melted butter and serve with toast.

⅔ cup 1-inch pieces broccoli florets
½ red bell pepper, chopped
½ sweet onion, chopped
6 marinated olives, chopped
2 eggs
2 egg whites
2 tablespoons whole milk
1 pinch salt and ground black pepper to taste
¼ cup crumbled sheep's milk feta cheese

Steps:

  • Heat olive oil in a 10-inch skillet over medium heat. Cook and stir broccoli, bell pepper, and sweet onion in hot oil until hot, about 3 minutes. Place a cover on the skillet and continue cooking until the vegetables begin to soften, about 5 minutes more. Stir olives into the vegetable mixture.
  • Beat eggs, egg whites, milk, salt, and pepper together with a whisk in a small bowl; pour over the vegetable mixture in the skillet. Sprinkle feta cheese over the egg mixture.
  • Replace cover on the skillet, reduce heat to medium-low, and cook until the egg is lightly browned on the bottom, 3 to 5 minutes. Carefully flip the frittata and cook until the bottom is again lightly browned, 1 to 2 minutes more.

More-Vegetable-Than-Egg Frittata (Mark Bittman) image

This is a healthy frittata from Mark Bittman's New York Time's column) with more vegetables than eggs. You can use whatever veggies you like or have on hand. If you use asparagus or broccoli, parboil them first; spinach works well, chop and cook it until dry. As in a conventional frittata, cook the eggs slowly, so they stay tender. If the top remains runny, run it under the broiler. Serves 2 to 4.

2 tablespoons olive oil or 2 tablespoons butter
1/2 onion, sliced (optional)
salt & fresh ground pepper
4 -6 cups of any raw vegetables or 4 -6 cups barely cooked vegetables, chopped or sliced
1 teaspoon mint leaves or 1 teaspoon any other herbs
2 -3 eggs
1/2 cup freshly grated parmesan cheese (optional)

Steps:

  • Put olive oil or butter in a skillet (preferably nonstick or well-seasoned cast iron) and turn heat to medium. When fat is hot, add onion, if using, and cook, sprinkling with salt and pepper, until it is soft, 3 to 5 minutes. Add vegetables, raise heat and cook, stirring occasionally, until they soften, from a couple of minutes for greens to 15 minutes for sliced potatoes. Adjust heat so vegetables brown a little without scorching. (With precooked vegetables, just add them to onions and stir before proceeding.).
  • When vegetables are nearly done, turn heat to low and add herb. Cook, stirring occasionally, until vegetables are tender.
  • Meanwhile, beat eggs with some salt and pepper, along with cheese if you are using it. Pour over vegetables, distributing them evenly. Cook, undisturbed, until eggs are barely set, 10 minutes or so; run pan under broiler for a minute or 2 if top does not set. Cut into wedges and serve hot, warm or at room temperature.

3 medium potatoes
1 tablespoon olive oil
1 red onion, chopped
250 g broccoli, chopped
2 medium red peppers, sliced
8 eggs, lightly beaten
1/4 cup grated parmesan cheese
1/4 cup grated tasty cheese
1/4 cup fresh chives, chopped

Steps:

  • Grease a deep 22cm round cake pan and cover the base with baking paper.
  • Cut potatoes into small cubes.
  • Heat the oil in a non-stick pan and add the potatoes and onion and cook for 10 minutes or until potatoes are just soft.
  • Lightly steam the broccoli and peppers.
  • Combine potato mixture with the broccoli and peppers and pour into the prepared pan.
  • Combine all of the remaining ingredients in a bowl and pour over the vegetables in the pan.
  • Bake in a moderate oven for about 45 minutes or until set and cooked.
  • Stand 10 minutes before turning out of pan.
  • Serve warm or at room temperature with a salad or as a side for chicken or fish.

  • In an 8-in. ovenproof skillet, cook the bacon until crisp. Drain, reserving 2 tablespoons drippings in the skillet. Remove bacon to paper towel. , Add hash browns, broccoli, green pepper, onion and rosemary to the skillet; cover and cook over low heat until hash browns are golden brown and vegetables are tender, about 10 minutes. Remove from the heat and set aside. , In a large bowl, whisk the eggs, water, salt and pepper; pour over hash browns. Top with bacon and paprika. 1 1/2 tablespoons olive oil or 1 1/2 tablespoons canola oil
1 clove garlic, minced
1/2 cup chopped red onion
2 cups thinly sliced fresh mushrooms
1 1/2 cups finely chopped fresh broccoli
8 eggs
1/4 cup milk
3/4 cup grated mozzarella cheese or 1 Italian cheese blend
1/2 teaspoon salt (I use seasond salt)
1/8 teaspoon pepper

Steps:

  • Heat oven to 350 degrees F In a 9 inch oven proof skillet, warm oil on med.
  • heat.
  • Add garlic and onion; saute' for 1 minute.
  • Add vegetables; saute' for 5 minutes.
  • Beat eggs with milk, add 1/2 cup cheese, salt, and pepper.
  • Add egg mixture to skillet with vegetable mixture.
  • ***Place in oven on upper rack.
  • Bake until golden brown, approximately 30 minutes.
  • Remove from oven and sprinkle on remaining 1/4 cup cheese.
  • Slice into wedges and serve.
  • ***you may also use a 9-inch baking dish if you do not have an oven proof skillet.

8 ounces Italian turkey sausage, casings removed
1 medium zucchini, thinly sliced
1 large bell pepper (red or green, or combination of both)
8 large eggs
4 ounces mozzarella cheese, shredded (1 cup)

Steps:

  • Heat oil. Add sausage and cook, breaking up chunks, until no longer pink (2 to 3 minutes).
  • Add zucchini and bell pepper and saute 3-4 minutes or until vegetables are tender.
  • Whisk eggs in a bowl until well combined. Stir in cheese. Pour over sausage mixture. Stir gently to distribute eggs.
  • Cook frittata on the stove 4 to 6 minutes until set on the bottom and sides. Heat broiler.

Roast Vegetable Frittata image

A great dish for entertaining, appeals to all and can be eaten hot or cold.

Number Of Ingredients 11

3 courgettes
1 aubergine
3 peppers (red, yellow & green)
8 shallots (or one red onion in chunks)
12 tips of asparagus
3 cloves of garlic, finely chopped
12 eggs (large)
3 tbs thick double cream
150g goats cheese
150g Feta cheese
1 tbs olive oil

Steps:

  • Chop all vegetables into large pieces and place in large roasting dish. Sprinkle over the garlic and coat well in the olive oil. Place in a pre-heated oven at 175 centigrade. Roast for 20-25 minutes. Set aside while you make the egg mixture.
  • Beat the eggs together with the cream and season with salt and pepper. Take a large (approx. 10 inch/25 cm diameter) ovenproof dish and grease with oil or butter. Put a layer of roasted vegetable in the dish and on top of this add the cubed goats cheese. Add the remainder of the vegetables, crumble the feta cheese on top and then pour over the beaten egg & cream mixture.
  • Place in the oven for 30 - 40 minutes and cook until firm, but be careful not to over-cook - the centre should still be slightly moist. Set aside for 10 minutes to continue to set and serve.
