1 lb beef stew meat
2 carrots, sliced
2 stalks celery, sliced
1 cup chopped yellow onion
2 garlic cloves, minced
5 cups beef stock or 5 cups broth
1 (11 1/2 ounce) can spicy tomato juice
1 teaspoon Worcestershire sauce
3/4 teaspoon salt, to taste
fresh ground pepper
6 ounces medium mushrooms, thickly sliced
1/4 cup uncooked orzo pasta
1 cup fresh peas or 1 cup frozen peas
fresh grated parmesan cheese

Steps:

  • In a large pot, over high heat, add the first 10 ingredients; stir to combine.
  • Bring to a boil.
  • Lower heat to medium-low, cover, and simmer for 1 hour, 15 minutes.
  • Add in the mushrooms and orzo.
  • Simmer covered for 10 more minutes.
  • Add in peas, stir; cook uncovered for about 10 more minutes or until ingredients are tender; adjust seasoning to taste.
  • Ladle into individual soup bowls and sprinkle with parmesan cheese.

1 1/2 lbs ground beef (80/20 is best)
1 cup chopped onion
2 garlic cloves
6 cups water
1 large can crushed tomatoes
6 beef, bouillons or 4 teaspoons beef base
1/4 teaspoon pepper
1/2 cup orzo pasta
1 (16 ounce) bag frozen mixed vegetables

Steps:

  • Cook beef (draining fat occasionally). Add the onion and garlic and cook just before onion is translucent.
  • Add tomatoes, water, beef base and pepper. Simmer 20 minutes.
  • Add orzo and veggies, simmer again for 15 minutes.
  • DIG IN!

2 lb beef chuck roast cubed
1/2 c corn starch
3 Tbsp canola oil
1 Tbsp cumin,paprika & onion powder
1 Tbsp sumac, or lemon zest
2 large yellow onions chopped
2 large red onions chopped
1 large green bell pepper, chopped
4 stalk(s) celery chopped
28 oz can crushed tomatoes
1 lb whole carrots peeled & cut up
46 oz vegetable juice
64 oz beef broth
2 c red wine, ( i used sweet)
1 1/4 c orzo pasta
2 bay leaves
1 1/2 Tbsp each garlic powder & steak seasoning

Steps:

  • 1. My husband helped me with this soup because I wasn't feeling well, he seared all of the meat, in 3 different batches, but didn't take any pictures of it being seared. I am sorry. You do not need to over crowd the pot, or the meat will steam instead of sear on all sides. I originally made a crusty bread to serve with this soup but it was all gone before I could take a picture of it with the soup, hence the crackers you see in the picture.
  • 2. Add all the spices to a small bowl.
  • 3. Stir to blend together.
  • 4. Season meat generously with spice blend.
  • 5. Add cornstarch to meat and coat on all sides. Sear meat in batches. By adding canola oil to large pot, then heat till hot, then drop enough of the beef into the pot to cover the bottom, being careful not to overcrowd. Brown on all sides, then remove meat with a slotted spoon to a large platter, and repeat till all the meat has been browned.
  • 6. Wash, peel and chop all of the veggies and leave in pan till needed.
  • 7. Add all of the seared meat back into the large pot.
  • 8. Add the crushed tomatoes, & vegetable juice & bay leaves.
  • 9. Stir to mix together till blended together in pot.
  • 10. Add beef broth.
  • 11. Then add the 2 cups of red wine. LOWER heat and continue to cook for at least 2 to 2 and a half hours till meat becomes very tender.
  • 12. After about 1 and a half hours into cooking time add the chopped vegetables, and continue to cook for an additional half hour, stirring periodically to prevent mixture from sticking to bottom of the pot.
  • 13. After 2 hours add the orzo pasta, and stir to blend, but continue to cook until pasta is tender about 10 to 15 minutes or so.DO NOT FORGET TO STIR TO PREVENT STICKING IN BOTTOM OF POT.
  • 14. Ladle soup into serving bowls.
  • 15. Serve with your favorite crusty bread or crackers as desired.

1 1/2 lbs round steaks or 1 1/2 lbs chuck steaks, cut into small cubes
2 cups chopped carrots
1/2 cup diced celery
1 large onion, chopped
4 quarts water
3 tablespoons beef base
2 tablespoons tomato paste
salt & fresh ground pepper
8 ounces orzo-small shell pasta
grated parmesan cheese

Steps:

  • In a large soup pot, brown the beef cubes on all sides with the onion. Season with salt and pepper. Add the water Bring to a boil. Skim off any residue that is on the top of the water. Lower the heat to medium and cook for an hour.
  • Add the beef soup base according to instructions on the brand you use. Add the carrots and celery. Continue to simmer on medium, while the pan is covered for an additional 30 minutes,or until the vegetables are tender.
  • Taste and add more pepper and salt if needed. In another pan cook the pasta till just done as instructed on the package. Drain and add to the soup pot. Serve with Parmesan cheese on the side.

2 tablespoons olive oil
1 1/2 lbs boneless beef chuck
1 onion, unpeeled, halved
1 bay leaf
8 cups water
1 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped carrot
1 garlic clove, crushed
1 lb mushroom, trimmed and coarsely chopped
salt
fresh ground pepper
1/4 cup chopped parsley
1 (10 ounce) package frozen mixed vegetables, thawed
1/4 cup orzo pasta

Steps:

  • Heat 1 tbsp oil in a large heavy saucepan.
  • Brown the beef; add the onion and brown lightly on the cut side.
  • Add the bay leaf and water.
  • Heat over medium heat until almost boiling.
  • For a clearer broth, do not let boil.
  • Cook, uncovered, at a gentle simmer for 2 hours.
  • Strain broth through a sieve lined with dampened paper towels.
  • Chill overnight and finish soup next day or continue with recipe.
  • Pull meat into strings; set aside.
  • Heat the remaining oil in saucepan.
  • Add chopped onion, celery and carrot.
  • Sauté until golden, about 10 minutes.
  • Stir in garlic, sauté 1 minute more.
  • Add the mushrooms, sauté until golden, about 10 minutes.
  • Season with salt and pepper.
  • Add the shredded meat and broth to the sautéed vegetables; stir in parsley, frozen vegetables and orzo.
  • Heat to boiling.
  • Simmer, uncovered, until orzo is tender, about 15 minutes.
  • Season to taste with salt and pepper.

1/2 cup beef bouillon granules
12 medium red potatoes (about 3-1/2 pounds), cubed

3 cups (about 15 ounces) frozen corn
3 cups (about 12 ounces) frozen peas

  • In a large stockpot, heat 1 tablespoon oil over medium heat. Brown beef in batches, adding additional oil as necessary. Remove with a slotted spoon. Add onions to drippings; cook and stir until tender. Discard drippings; return beef to pot. Stir in water, tomatoes, tomato sauce, Worcestershire sauce and bouillon. Bring to a boil. 1 tablespoon olive oil
1 lb beef sirloin steak, cut into 3/4 inch pieces
1/2 cup pitted kalamata olive, drained,halved
2 (14 1/2 ounce) cans diced tomatoes
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
2 (14 ounce) cans beef broth
3 1/2 ounces uncooked dried orzo pasta (1/2 cup)
4 ounces crumbled feta cheese
2 tablespoons chopped fresh parsley

Steps:

  • Heat oil in 4-quart saucepan until sizzling.
  • Add beef pieces, cook over medium-high heat, stirring occasionally, until browned (7 to 10 minutes).
  • Add all remaining ingredients except cheese and parsley.
  • Continue cooking until mixture comes to a boil (3 to 5 minutes).
  • Cook, stirring occasionally, until orzo is tender (10 to 12 minutes).
  • To serve, top each serving with cheese and garnish with parsley.
