VEGAN BLACK BEAN BURGERS
Easy black bean burgers for everyone! You don't need to follow the recipe or amounts exactly. I never do. Serve with your favorite burger fixings and sweet potato fries.

- Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- Mash black beans in a bowl; add onion, garlic, carrots, and green bell pepper. Mix.
- Whisk cornstarch, water, chile-garlic sauce, chili powder, cumin, seafood seasoning, salt, and black pepper together in a separate small bowl. Stir cornstarch mixture into black bean mixture.
- Mix whole-wheat bread into bean mixture. Stir flour, 1/4 cup at a time, into bean mixture until a sticky batter forms.
- Spoon 'burger-sized' mounds of batter onto the prepared baking sheet, about a 3/4-inch thickness per mound. Shape into burgers.
- Bake in the preheated oven until cooked in the center and crisp in the outside, about 10 minutes on each side.

VEGAN BLACK BEAN BURGERS WITH OATS
Crispy outside, soft inside. Place burgers on buns and add condiments and toppings of choice, e.g. lettuce, pickles, tomato, raw or grilled onion, grilled mushrooms, avocado, jalapenos, bell peppers, ketchup, mustard, barbecue sauce, etc.

Steps:
- Process black beans in a food processor or blender with just enough of the reserved can liquid to get the processor going. Place into a large bowl.
- Blend oats in the food processor until they become oat flour; add to the large bowl. Blend sunflower seeds until finely ground; add to the bowl. Blend mushrooms, bell peppers, and onion in batches in a food processor and add to oat mixture. Mix in parsley, Worcestershire, salt, pepper, onion powder, garlic powder, and cumin thoroughly using your hands or a rubber spatula, adding more processed oats if needed to hold shape.
- Roll mixture into 15 tight balls, flatten, and cup the sides to ensure the patties do not have cracks. Place on wax or parchment paper.
- Heat oil in a large skillet to 350 degrees F (175 degrees C), or over medium heat. Place patties carefully into the hot oil using your hands or a spatula, working in batches. Cook until browned and crispy, 3 to 5 minutes on each side. Remove and place onto a paper towel-lined plate to drain excess oil, about 2 minutes. Repeat with more oil until all burgers are cooked.

CHIPOTLE BLACK BEAN BURGERS (VEGAN!)
These were just an experiment made quickly with what was on-hand in the food processor--but a great success served on whole wheat buns with guacamole! You can easily modify to suit your own preferences. I added one chipotle from a can of chipotles-in-adobo sauce. In case you're wondering what to do with the rest of that can: I separate a few chiles with some sauce into tiny plastic containers (you know those ones you never use?) and keep them in the freezer until needed. Just a minute in the microwave dethaws! Note that the cornmeal is the main binder/thickener for this recipe--add it a bit at a time, and don't be afraid to add a few tablespoons more if your burger mix is still a bit runny. I've found that leaving a bean burger mix alone to absorb moisture for a few minutes can also be helpful before trying to form patties.

- Preheat your oven to 400 F and spray a baking pan lightly with oil.
- Add the first five ingredients (chili through rice) to your food processor and pulse to chop. Then add the drained, rinsed black beans and process until beans are mostly broken down.
- Now begin adding the corn meal in small amounts, pulsing as you go. The mixture will likely remain somewhat "sticky"--that's fine. But you do want it to be "dry" enough to handle without it sticking to your hands. As you add the final bit of cornmeal, add salt and pepper and give the mix a taste for seasoning and make adjustments if necessary.
- Once you've incorporated the cornmeal and seasoned, pour into a separate bowl and allow to sit in the refrigerator for 10-15 minutes.
- Remove the chilled mix from the refrigerator, and portion by hand into four separate, burger-shaped patties. (I like to add a sprinkle of steak seasoning to the exterior at this point.) Place your shaped patties onto your prepped baking tray and slide them into the preheated oven. You will want to cook them about 8-10 minutes on this side, then take them out and flip before cooking an additional 5 minutes.

SPICY (ALSO VEGAN VERSION) BLACK BEAN VEGGIE BURGERS
I wanted to make my own to save money, to include Vegan version and to spice it up different ways. Can use Italian seasoning instead of spicy ingredients. Also, have made these burgers with pasta and spaghetti sauce.

- To keep them from falling apart. Use the food processor for the onion, garlic and pepper mixture and then strain juices through a fine strainer to remove any excess water. Put back in food processor. Rinse the black beans and dry them off before they go in the food processor.
- Blend everything in the food processor, beginning with onions, peppers, and garlic, bread crumbs (or rolled oats), eggs (or flaxseed mixture) and spices and then the beans last. If mixture needs to be firmer, add cooked brown rice, mix by hand.
- Note: put a little oil on your hands when shaping the patties to prevent sticking.
- Divide mixture into four patties. (Can make them smaller, into 6 patties and serve them with a salsa dip or with a pasta dish.).
- So patties are easier to handle: Freeze patties and grill them frozen.
- For grilling: Preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. Place patties on foil, and grill about 8 minutes on each side.
- For Oven Baking: Preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet. Place patties on cookie sheet, and bake about 10 minutes on each side.

- 1. Sautee the onion, bell pepper, zucchini and a pinch of salt in a skillet until tender (about 10 min). Place the beans in a bowl and mash with a fork. You want about 1/2 mash and 1/2 beans. Add the vegetable mixture and the remaining ingredients. Form into 4 patties and broil about 10 min each side.
- 2. You may have to add more oats depending on how wet your mixture is. You want them to be moist yet form-able.

- Bring 1 1/2 cup water to a boil in a saucepan; add oats. Reduce heat to low and simmer, stirring constantly, until oats have absorbed water, 1 to 3 minutes.

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.

Steps:
- Put half) of the breadcrumbs in a large mixing bowl.
- Finely chop the onion and grate the carrot.
- Fry the onion gently in a tablespoons of oil until softened.
- Add the grated carrot and fry for another 2 or 3 minutes, then add the onions and carrot to the breadcrumbs in the mixing bowl.
- Rinse the kidney and cannellini beans thoroughly and drain.
- Mash them roughly with a fork and stir into the carrot mixture with the chillies, salt and pepper.
- Put the remaining half of breadcrumbs in a shallow bowl with the flour, herbs, salt and pepper.
- Shape the bean mixture into 6 burgers.
- Thoroughly coat each burger in the flour and breadcrumb mixture.
- Heat 3 tbsps. oil in a frying pan, and carefully add 3 burgers.
- Fry each side for about 5 minutes until golden brown.
- Repeat with the other 3 burgers.
