1 large ripe banana (around 150g)
2 tbsp golden caster sugar
¼ tsp fine salt
2 tbsp vegetable oil , plus extra for cooking
120g self-raising flour
½ tsp baking powder
150ml oat, almond milk or soya milk
syrup , sliced banana and berries, to serve (optional)

Steps:

  • Mash the banana in a mixing bowl. Stir in the sugar, salt and oil. Add the flour and baking powder and mix thoroughly. Make a well in the centre and gradually whisk in the milk. The batter should be a thick, droppable consistency.
  • Heat a little oil in a frying pan over a medium heat. Add 2 tbsp of the batter to make American-style pancakes. You will be able to make about 4-5 at a time. Fry on each side for 2-3 mins until golden. Serve with syrup, sliced banana and berries, if you like.

3 medium bananas, mashed
1/2 cup walnuts, chopped

Steps:

  • Sift together first 5 (dry) ingredients.
  • In a separate bowl combine soy milk and vinegar. let sit for five minutes.
  • Mix bananas and other wet ingredients until pretty smooth. Poor wet into dry -- but don't overmix! Fold in the walnuts.
  • Brush a large nonstick skillet with canola oil and heat over moderate heat.
  • Pour about 1/4 cup batter per pancake into hot skillet and cook until bubbles appear on surface and undersides are golden brown, 1 to 2 minutes. [You should get nine pancakes, allow three per serving].
  • Flip pancakes with a spatula till cooked through, 1 to 2 minutes more.

1 1/2 teaspoons baking powder
1/2 teaspoon baking soda

1 teaspoon vinegar (let sit for 5 min)

2/3 cup gluten free oats ground in blender to become oat flour
2/3 cup water
1 teaspoon baking powder
2 teaspoons flax seed meal
1 teaspoon cinnamon

2 teaspoons honey
1 banana, use 1/4 in recipe, smashed and 1/4 to top pancakes
1/2 teaspoon salt

Steps:

  • Stir batter together, may have lumps, that is OK.
  • let sit 1 min while you heat skillet to medium.
  • dissolve 1 tsp of coconut oil in skillet, pour in batter. Cook until bubbles form/pop and edges of pancake get browned, flip cook 1-2 mins more.
  • Top with very thin slices of banana on each pancake and serve with warm maple syrup. AMAZING! Makes approx 6 pancakes.

¼ cup oats
1 banana, reserve peel and set aside
1 teaspoon cinnamon
1 teaspoon nutmeg
1 tablespoon maple syrup
1 tablespoon vegan protein powder, optional
fresh berry, or frozen
any desired topping

Steps:

  • Boil water and add in the banana peel. Cook for 10 minutes or until soft . In a separate bowl, mix the oats and milk
  • Add in half of the banana and mash it all together Then, add in your protein powder, cinnamon, nutmeg and maple syrup and stir
  • Remove the banana peel from the boiling water, drain the water and tear the peel up into pieces and add it to the pancake mixture
  • Mix the peel in and let it break up further until you can no longer see many bits. Then, add your berries to the mixture.
  • Cook the pancakes on medium heat on a pan for 3-4 minutes on each side, until each side is crispy and light golden brown. You can separate the mixture into 4 or 5 mini pancakes or make a large one. However, you will need to cook this for longer on each side.
  • Remove from the pan and assemble on a plate with all your favorite toppings.
  • Cut up the remaining half of the banana and place the pieces on top. Serve warm.

1 tablespoon chia seeds
4 tablespoons water (to soak chia)
2 ripe bananas
1 cup flour (I used a gluten free blend of equal parts Almond, Amaranth, Rice, and Fine Corn Meal)
1/4 cup crushed pecans or 1/4 cup walnuts
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon baking powder
1 tablespoon oil, for pan (coconut, sunflower, butter, etc.)
maple syrup

Steps:

  • Soak the chia seeds in water to hydrate. This will take about five minutes.
  • Blend together the dry ingredients (flour(s), nuts, cinnamon, salt, baking powder).
  • Once the chia is hydrated, add the bananas to the chia water mixture. Mash the bananas well.
  • Mix the wet ingredients into the dry ingredients.
  • The batter may be dry depending on the flour or flour blend you use. Add a small amount of water or nut milk one tablespoon at a time until the batter is wet, but not runny.
  • Spoon one to two tablespoons of batter onto an oiled, heated pan or skillet. Spread the pancakes to 1.2 centimeter thickness. Cook the pancakes over medium heat for 5 to 10 minutes until golden brown on both sides.
  • Serve warm with maple syrup. Bon Appetit!
