VEGAN APPLE COOKIES

This is my healthier version of a cookie that is sold at one of our local bakeries. These are not your normal cookie as they stay in nice little soft mounds packed with little bits of dried apples and nuts without being overly sweet. **This is an original recipe and the amount of apple juice is always between 1/3 and 1/2 cup so you will have to use your baking skills when making these.

1 1/2 cups whole wheat flour
2 cups old fashioned oats
1/2 cup Splenda brown sugar blend
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 1/4 teaspoons cinnamon
4 teaspoons flax seed meal
5 ounces dried apple rings, finely chopped
1/2 cup walnuts, chopped
2 tablespoons vegetable oil
1 cup unsweetened applesauce
2 teaspoons vanilla
1/3-1/2 cup unsweetened apple juice (1/3 is a little dry and 1/2 is a little wet)

Steps:

  • pre heat oven to 350°F.
  • In large bowl stir together flour, oats, brown sugar, baking powder, baking soda, salt, cinnamon, and flaxseed meal.
  • Add chopped dried apple and walnuts to flour mixture.
  • In small bowl whisk together applesauce, vanilla, oil and 1/3 cup apple juice.
  • Stir liquid into dry ingredients without over working **over stiring will make them though** adding a little more apple juice if need be.
  • Drop a cookie scooper full or generous tablespoon full of dough onto Silpat(can use paper-lined or greased baking sheet But silpat works best), these cookies won't spread much so you can get a few more per baking sheet.
  • Bake in the preheated oven at 350 F for 12-15 minutes or until toothpick inserted in the center comes out clean. These cookies are more cake-like, so they will not get crisp and will only color slightly.
  • Allow to cool on the baking sheet for 5 minutes and then remove to wire racks to cool completely.

ok, so first i wanted to make apple cinnamon buns, but i didnt have enough sugar, so i had chopped apples and was going to make apple oatmeal cookies, then half way through, i realized i didnt have enough sugar still so i needed to be creative. i hope you enjoy it :)

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup unsalted butter, softened
1 cup sugar
1/2 cup applesauce
2 teaspoons vanilla
1 1/2 cups of quaker instant apple and cinnamon oatmeal
1/2 cup of quaker instant cinnamon roll oatmeal
1 cup peeled and chopped apple

Steps:

  • Preheat oven to 350°.
  • Whisk dry ingredients; set aside.
  • Combine wet ingredients with a hand mixer on low.
  • To cream, increase speed to high and beat until fluffy and the color lightens.
  • Stir the flour mixture into the creamed mixture until no flour is visible.
  • (Over mixing develops the gluten, making a tough cookie.) Now add the oats and apples; stir to incorporate.
  • Fill cookie scoop with dough.
  • (Use a #40 cookie scoop; it measures 2 tablespoon of dough) Press against side of bowl, pulling up to level dough.
  • Drop 2-inches apart onto baking sheet sprayed with nonstick spray.
  • Bake 11-13 minutes (on center rack), until golden, but still moist beneath cracks on top.
  • Remove from oven; let cookies sit on baking sheet for 2 minutes before transferring to a wire rack to cool.

3/4 cup sweetened applesauce (unsweetened will work)
1 cup whole wheat flour
1 teaspoon baking powder
1 pinch salt
1 cup rolled oats
cinnamon, to sprinkle on top

Steps:

  • Preheat oven to 375°F.
  • Mix sugars and applesauce.
  • Add flour, baking powder, and salt and mix well.
  • Add rolled outs.
  • Drop by rounded teaspoons onto a lightly greased cookie sheet.
  • Sprinkle with cinnamon.
  • Bake for 10 minutes.

RAW VEGAN APPLE COOKIES

From Matt Amsden's RAWvolution. I just made these and they are great! Even my non-raw family liked them! I will warn you, they are a bit messy, so only make them if you don't mind getting your hands a little dirty. ;) Cook time is dehydrator time.

6 apples, cored and peeled (I used Fuji)
1 cup agave nectar
1 3/4 cups almonds, ground
1 1/4 cups raisins
1/4 cup ground cinnamon

Steps:

  • Slice half of the apples and place in a mixing bowl. Shred the remaining apples in the food processor, then add the shredded apples to the sliced apples in the mixing bowl.
  • Add the agave nectar, ground almonds, raisins, and cinnamon to the bowl. Mix well.
  • With your hands, shape this mixture into about 20 round, flat cookies approximately 3 inches thick, and lay them on dehydrator sheets.
  • Dehydrate at 105 degrees for approximately 24 hours.
