Steps:

  • Preheat oven to 300 degrees F (175 degrees C). Grease and flour a bundt pan.
  • Cream butter or margarine; add sugar, and beat until smooth. Add eggs, one at a time, beating well after each addition. Stir in crushed vanilla wafers alternately with milk. Add coconut and pecans, and mix until blended. Pour batter into prepared pan.
  • Bake for 1 1/2 hours. Cool.

6 eggs
2 cups sugar
One 12-ounce box vanilla wafers, crushed
1 cup sweetened flaked coconut
1 cup chopped pecans, or your favorite nut
1/2 cup milk
Butter, optional
Whipped cream, optional
Berries, optional
Caramel sauce, optional

Steps:

  • Preheat the oven to 350 degrees F and grease and flour a tube or Bundt pan.
  • In a large bowl, beat the eggs well. Mix the sugar, vanilla wafers, coconut, pecans and milk into the eggs.
  • Pour the mixture into the tube or Bundt pan. Bake until a toothpick inserted in the center comes out clean, about 1 hour. Let sit in the pan for 10 minutes, and then turn out onto a plate. Allow to cool completely.
  • If desired, heat 1 tablespoon butter in a small saute pan. Cut a 1-inch slice of cake, butter both sides and toast in the butter. Add a dollop of whipped cream and serve with berries. Drizzle with caramel sauce. Repeat with remaining cake slices.

1 cup ground pecans

1 ½ cups white sugar

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch fluted tube pan such as a Bundt®. Mix together the coconut and ground pecans; set aside.

1 package (12 ounces) vanilla wafers, crushed
1/2 cup whole milk
1-1/2 cups sweetened shredded coconut

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each until light and fluffy. Add wafers to creamed mixture alternately with milk. Fold in coconut and nuts. , Pour into a greased and floured 10-in. tube pan with a removable bottom. Bake at 350° for 1-1/2 hours, testing after 1 hour. Cool on wire rack 15 minutes before removing from pan. Cool completely. If desired, garnish with whipped cream or ice cream.

This recipe was given to my mother by an old family friend when I was a young girl. I don't like traditional fruit cake very much, but this one is a great variation with the vanilla wafers. It could be classified somewhere between a cake and a candy.

1 box of vanilla wafers.
2 c coconut, shredded
1 c pecans, chopped
1/2 to 1 c maraschino cherries, chopped
1 c raisins
1 c dates, chopped
1 can(s) of condensed sweetened milk

Steps:

  • 1. First, you must save the vanilla wafer box for this recipe. Pulverize the vanilla wafers to a powder consistency in a food processor. Drain the cherries well on a paper towel and then chop. Except for the condensed milk, mix all the other ingredients into the powdered vanilla wafers throughly..
  • 2. You will need plastic gloves for the next method since it is a sticky method. Pour in the condensed milk and mix until completely mixed and wet. Place mixture back into the vanilla wafer box and beat down evenly into a square.
  • 3. Allow the fruit cake to set about 4 days to a week. Tear off the vanilla wafer box and cut into small squares. It is rich, so be conservative. Serve. Leftovers should be refrigerated.

45 vanilla-wafer cookies, pulsed in a food processor until finely ground (1 1/2 cups)
1/2 cup unbleached all-purpose flour
1 teaspoon baking powder
1/4 teaspoon kosher salt
1 stick unsalted butter, softened
3/4 cup granulated sugar
2 large eggs, room temperature
3/4 cup whole milk
1 cup sweetened shredded coconut
1 teaspoon unflavored gelatin
1 cup cold heavy cream
2 tablespoons confectioners' sugar
1/4 teaspoon pure vanilla extract
1 1/2 cups mixed fresh berries, such as blueberries, raspberries, and blackberries

Steps:

  • Preheat oven to 350 degrees. Line a standard muffin tin with paper liners. Whisk together cookie crumbs, flour, baking powder, and salt.
  • Beat butter with granulated sugar on medium speed until pale and fluffy, about 1 minute. Beat in eggs, one at a time. Reduce speed to low and add flour mixture in 3 batches, alternating with milk, beginning and ending with flour mixture and beating until combined after each addition. Fold in coconut.
  • Divide batter among cups. Bake until cupcakes are golden brown and centers bounce back when gently pressed, 22 to 24 minutes. Let cool completely in tin on a wire rack.
  • Add 2 tablespoons water to a small saucepan. Sprinkle with gelatin; let stand until thick, about 5 minutes. Gently heat over medium until gelatin has dissolved. Remove from heat; let cool 5 minutes (but don't let it set).
  • Beat together cream, confectioners' sugar, and vanilla on medium speed until very soft peaks form, 1 to 2 minutes. Add gelatin mixture; beat on medium until stiff peaks form, about 1 minute more.
  • Remove cupcakes from tin and arrange on a platter in a three-by-four rectangle. Spoon frosting over each row of cupcakes; using an offset spatula, smooth to cover tops, forming a rectangular shape. Refrigerate at least 1 hour and up to 3 hours. Sprinkle with berries before serving.

1 pound vanilla wafer cookies, broken into rough pieces, 7 cups
1/4 teaspoons salt
1 1/4 cup sugar
12 tablespoons unsalted butter, softened, 1 1/2 sticks
six large eggs
1/2 cup whole milk
2 cups sweetened shredded coconut
1 cup pecans, toasted and chopped

Steps:

  • 1. adjust the oven rack to the middle position and heat the oven to 300°. Grease a 9 inch springform pan and set aside.
  • 2. Process half of the cookies in a food processor to fine crumbs, about one minute. Transfer crumbs to a bowl. Repeat with remaining cookies. Stir in the salt and set aside.
  • 3. In large bowl, beat the sugar and butter together with an electric mixer on medium-high speed until light and fluffy, 3 to 6 minutes. Beat in the eggs, one at a time, until incorporated, scraping down the bowl and beaters as needed. Reduce the mixer speed to low and add one third of the cookie crumbs followed by 1/4 cup of the milk. Repeat with half of the remaining cookie crumbs and the remaining 1/4 cup milk, and finish with the remaining cookie crumbs. Fold in the coconut and pecans.
  • 4. Give the batter a final stir with a rubber spatula to make sure it is thoroughly combined. Scrape the batter into the prepared pan, smooth the top, and gently tap the pan on the counter to settle the batter. Bake until the cake is Golden Brown and a toothpick inserted in the center comes out with a few moist crumbs attached, one hour and 20 minutes to 1 hour and 40 minutes, rotating the pan halfway through.
  • 5. Cool cake in the pan for 15 minutes. Run a small knife around the edge of the cake, then remove the sides of the pan. Cool the cake on a wire rack to room temperature, 2 to 3 hours, before serving.

⅓ cup milk
½ cup flaked coconut
1 (16 ounce) package vanilla wafers, crushed

½ cup evaporated milk
6 tablespoons butter
½ teaspoon vanilla extract
½ cup chopped walnuts

Steps:

  • Cream shortening and 1 cup white sugar together. Blend in beaten eggs. Combine crushed vanilla wafers and baking powder: mix into the creamed mixture alternately with milk. Stir in nuts and coconut. Pour batter into two greased and floured 8 inch round pans.

2 c granulated sugar

1/2 c milk
12 oz box vanilla wafers, crushed
7 oz coconut, flaked

  • 1. Preheat oven to 325. Grease very well then flour a tube pan. Crush vanilla wafers. Melt butter.
  • 2. Combine melted butter and sugar. Add one egg at a time mixing well after each addition. Now add remaining ingredients and combine well.
  • 3. Pour into prepared "well" greased tube pan and bake at 325 for approximately 1 hour and 30 minutes or until done. Test with cake tester or spaghetti noodle. Let cool in pan then turn out.
