2 cups half-and-half cream
¾ cup white sugar
1 tablespoon vanilla extract

Steps:

  • In a large bowl, combine the heavy cream and the half and half. Gradually whisk in the sugar until blended.
  • Whisk in the vanilla. Refrigerate, covered, until very cold, at least 3 hours or as long as 3 days.
  • Whisk the mixture to blend and pour into the canister of an ice cream maker. Freeze according to the manufacturer's directions. Eat at once or transfer to a covered container and freeze up to 8 hours.

3/4 cup cold 2% milk
1 package (3.4 ounces) instant pistachio pudding mix
1 quart vanilla ice cream, softened
1 carton (8 ounces) frozen whipped topping, thawed
2 packages (1.4 ounces each) Heath candy bars, crushed

Steps:

  • In a small bowl, combine cracker crumbs and butter. Press into an ungreased 9-in. square baking pan. Bake at 325° for 7-10 minutes or until lightly browned. Cool on a wire rack., Meanwhile, in a large bowl, whisk milk and pudding mix for 2 minutes (mixture will be thick). Stir in ice cream; pour over crust. ½ cup melted butter
½ gallon vanilla ice cream, softened
2 (3 ounce) packages instant pistachio pudding mix
1 ½ cups milk
1 (12 ounce) container frozen whipped topping (such as Cool Whip®), thawed
¼ cup chocolate-covered toffee bits (such as Heath®), or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

2 cups heavy whipping cream
2 cups 2% milk
3/4 cup sugar
1/8 teaspoon salt
1 vanilla bean
6 large egg yolks

Steps:

  • In a large heavy saucepan, combine cream, milk, sugar and salt. Split vanilla bean in half lengthwise. With a sharp knife, scrape seeds into pan; add bean. Heat cream mixture over medium heat until bubbles form around sides of pan, stirring to dissolve sugar. , In a small bowl, whisk a small amount of the hot mixture into the egg yolks; return all to the pan, whisking constantly. Cook over low heat until mixture is just thick enough to coat a metal spoon and temperature reaches 180°, stirring constantly. Do not allow to boil. Immediately transfer to a bowl. , Place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes; discard vanilla bean. Press waxed paper onto surface of mixture. Something about the salty, buttery cracker combined with creamy peanut butter and sweet jam brought me so much joy. This recipe takes that treat to the next level by turning it into a homemade ice cream sandwich. Peanut butter and raspberry jam are swirled into vanilla ice cream, hen sandwiched between Ritz crackers and rolled in peanuts for a delightful dessert.

1/2 cup creamy peanut butter
1 pint vanilla ice cream, softened at room temperature for about 10 minutes
1/3 cup raspberry jam
30 Ritz crackers
1 cup crushed salted peanuts, optional

Steps:

  • Line a small rimmed baking sheet with several layers of plastic wrap, making sure to thoroughly cover the baking sheet, leaving about 6 inches of plastic wrap hanging over the two long sides.
  • Place the peanut butter in a small microwave-safe bowl and microwave until melted, about 15 seconds.
  • Spread the softened ice cream into an even layer on the baking sheet. Dot with jam and drizzle with melted peanut butter. Using a knife, create swirls on the top of the ice cream. Fold the plastic wrap overhang over the ice cream to cover the surface and freeze for at least an hour and up to overnight.
  • Carefully remove the frozen ice cream from the baking sheet and place on a cutting board. 1 stick margarine or butter
2 packages instant vanilla pudding
1 1/2 cup milk
1/2 gallons vanilla ice cream
8 ounces Cool Whip

  • Let ice cream sit out to get soft. Crush Ritz Crackers. Reserve 1/2 cup for the top. Mix the rest of the crushed crackers with margarine. Put on the bottom of a 9X13-inch oblong pan. This is an oldie I've had for years. Someone gave to me along the line years ago. It is very good and gets inhaled quickly.

crust:
2 cups crushed ritz crackers
1/2 cup melted butter
3 tablespoons sugar
mix together well and pat firmly into a 9x13 pan and refrigerate while preparing filling.
filling:
2 small boxes french vanilla instant pudding mix
2 cups cold milk

Steps:

  • 1. Mix filling ingredients in bowl. (pudding mixture will be thick). Mix in: 1 quart of softened ice cream (vanilla, butter pecan), or any other flavor. Use electric mixer on low speed to mix in. Pour over crust.
  • 2. Chill for awhile and top with 8 oz. tub of cool whip. Cover the top with toffee bits or desired crushed candy bars.
  • 3. Refrigerate until serving time.
