3 cups packed brown sugar
3/4 cup canola oil
3 eggs
2 2/3 cups flour
2 1/4 teaspoons baking powder
2 1/4 teaspoons baking soda

1 1/2 cups milk
1 1/2 cups water
1 1/8 cups cocoa powder
1 1/2 pounds sweet butter, soft
3 cups sifted powdered sugar
2 tablespoons vanilla extract
1 pinch salt
1 1/4 cups semisweet chocolate chips
3/4 tablespoon light corn syrup
3/4 cup heavy cream

Steps:

  • To make the cake: Preheat the oven to 350 degrees F. Oil 3 (10-inch) cake pans and line the bottom with parchment paper. Alternately, oil the pans and then flour them.
  • In the bowl of an electric mixer, combine the brown sugar and oil. Turn on the mixer to a low speed and mix in the eggs. Let the sugar, oil, and eggs mix while sifting together the flour, baking powder, soda, and salt in a separate bowl. Set this mixture aside.
  • In another small bowl, mix the vanilla into the milk and set this aside as well. Bring the water to a boil and pour over the cocoa and whisk it until it is smooth. To the egg mixture, alternately add the flour mixture and the milk mixture beginning and ending with flour. With the mixer off, scrape down the sides of the bowl after each addition. With the mixture at a low speed add the cocoa. Scrape down the sides of the bowl and pour this mixture into the prepared cake pans. Bake the cake for approximately 15 minutes or until tester comes out clean. When cake layers have cooled, remove from pans and refrigerate until cold.
  • To make the frosting: In an electric mixing bowl place the soft butter and beat it on a low speed while adding powdered sugar. When all the sugar is mixed in, turn off the mixer and scrape down the sides of the bowl. Add in the vanilla and salt and let the mixer beat for 5 to 7 minutes on a medium speed. Fill and frost the cake and refrigerate it for 10 to 20 minutes to set up the frosting.
  • To make the ganache: In a heatproof bowl, place the chocolate chips and the corn syrup. Bring the heavy cream to a full boil. Pour the cream over the chocolate and whisk it until smooth then set it aside.Pour ganache over the top of the cake and, with a cake spatula, smooth the top of the cake and allow ganache to spill over the sides. Refrigerate for 20 minutes or longer.
  • Serve the cake cold or allow it to come to room temperature before serving.

1 1/2 cups heavy cream
3 cups sugar
1/4 cup light corn syrup
1/4 teaspoon salt
2 teaspoons pure vanilla extract

Steps:

  • Butter an 8-inch square baking pan; line with parchment paper, allowing a 1-inch overhang. Butter parchment paper, and set aside. Check the calibration of the candy thermometer. Put butter into a large bowl, and set over a wire rack; set aside. Put cream, sugar, corn syrup, and salt into a medium heavy saucepan.
  • Cook over medium-low heat, stirring constantly, until sugar has dissolved, about 10 minutes. Raise heat to medium. Bring mixture to a boil, washing down sides of pan with a wet pastry brush to preventsugar crystals from forming. Attach warm thermometer to pan; continue to cook, without stirring, until mixture registers 238 degrees (soft-ball stage), 10 to 15 minutes.
  • Immediately pour mixture into bowl with butter (do not scrape out the bottom of the pan). Attach thermometer to bowl. Let mixture cool, undisturbed, until it registers 110 degrees, about 1 1/2 hours.
  • Remove thermometer. Transfer bowl to a work surface and addvanilla extract. Using a wooden spoon, begin to gently stir mixture until it thickens, lightens in color, and loses its sheen,about 6 minutes.
  • Pour into prepared pan. Using a small offset spatula, quickly spread fudge to sides of pan, and smooth top. Let fudge cool in pan on a wire rack, about 1 hour. Cover with plastic, and refrigerate untilcompletely set, about 8 hours. Run a sharp knife around nonparchment sides to loosen; lift fudge out. Cut into 64 one-inch pieces.

410g of Evaporated Milk
500g Caster Sugar
150g of Butter
2tsp of Vanilla Flavouring

Steps:

  • In a reasonably large pan with a thick bottom, pour the evaporated milk, sugar and butter. (Tip: cut your butter into small cubes so it melts quicker.)
  • Heat the mixture on medium heat and stir constantly until the sugar has dissolved and the butter has melted.
  • When it bubbles and is boiling, cook at exactly that heat for around 20 minutes. Make sure to keep stirring.
  • When the mixture is quite thick and a glossy, golden brown colour, turn off the heat. If the mixture starts to look brown in some places, take it off the heat immediately and stir vigorously till the brown bits are gone.
  • Cool for 5 minutes.
  • Then beat it with an electric mixer until it loses some of its gloss and becomes thicker. This should take 5-10 minutes.
  • Then, add your vanilla essence. Whisk again so it is no longer visible and pour into a tin lined with tin foil or grease proof paper.
  • Leave to cool for 2-3 hours, and then slice into cubes and enjoy!

Steps:

  • Whisk first 7 ingredients in large bowl to blend. Stir 6 tablespoons warm water and espresso powder in small bowl until powder dissolves. Stir chocolate and butter in heavy medium saucepan over low heat until melted and smooth. Remove from heat. Whisk in oil, vanilla and espresso mixture. Cool to lukewarm.
  • Whisk eggs, then 1 1/4 cups buttermilk and ground hazelnuts into chocolate mixture; add to dry ingredients and whisk to blend well.
  • Preheat waffle iron to medium heat, following manufacturer's instructions. Pour about 1/2 to 3/4 cup batter (depending on size of waffle iron) into center of waffle iron; spread evenly with spatula. Close waffle iron and cook until waffle is cooked through but still soft and color on outside darkens, about 4 minutes (time will vary, depending on waffle iron). Using spatula, transfer waffle to rack. Repeat with remaining batter. (Can be prepared 6 hours ahead. Let waffles stand at room temperature.   • Stir liqueur into warm Fudge Sauce. Cut each waffle diagonally in half, forming triangles. Arrange 3 waffle triangles on each of 6 plates. Dust with powdered sugar. Place scoop of ice cream atop waffle triangles. Pour Fudge Sauce over waffles and ice cream. Sprinkle with toffee bits and chopped hazelnuts.

450g (1lb) granulated sugar
85g (3oz) butter
150ml (¼ pt) milk
175g (6oz) evaporated milk
Few drops of vanilla extract
A little vegetable oil

Steps:

  • Tip the sugar, butter, milk and evaporated milk into a heavy based pan and heat gently, stirring frequently, until the sugar has dissolved.
  • Bring to the boil and as the temperature rises, stir the fudge occasionally (be careful as the mixture is very hot) so that the sugar doesn't stick and burn.
  • Continue boiling until a temperature of 116C is reached on a sugar thermometer. If you don't have one of these, you can test if the fudge is at this temperature by spooning a small amount of the syrup into some iced water, it should form a soft ball.
  • Remove the pan from the heat and stir in the vanilla extract.
  • Pour into an 18cm shallow square tin brushed with a little vegetable oil, and leave for 10-15 mins or until almost set. It will set quicker in the fridge.
  • Mark the fudge into 36 squares with a sharp knife and leave to cool completely.

450g golden caster sugar
400g double cream
50g butter
1 tbsp glucose syrup
1 tbsp vanilla bean paste

Steps:

  • Line a 20 x 20cm cake tin with baking parchment. Tip the sugar, cream, butter and glucose syrup into a medium to large saucepan. Heat to dissolve the sugar and melt the butter, stirring now and again.
  • Once dissolved, put a sugar thermometer in the pan, making sure the end is completely covered by the syrup - if not, transfer the mixture to a smaller pan (with enough space for the syrup to bubble up). Increase the heat and bring the syrup to a steady boil. Keep bubbling, stirring occasionally to stop the sugar from catching, until the mixture reaches 116C - this is known as the soft ball stage.
  • Remove the pan from the heat and leave to sit, undisturbed, for 5 mins, until the temperature drops to 110C. Stir in the vanilla and a good pinch of salt.
  • Keep the sugar thermometer in the pan and begin beating the mixture with a wooden spoon, quite vigorously, until the temperature cools to about 60C. By this time the fudge will be really thick and will have lost it glossy shine. Remove the thermometer and continue beating for a few mins more. This process is very important when making fudge, as it creates small sugar crystals, which give the fudge its lovely smooth and creamy texture (see 'fudge know-how', below).
  • Before it sets completely, quickly pour the fudge into your prepared tin and smooth over the surface. Leave to cool at room temperature overnight - don't put the fudge in the fridge as it will become sticky and won't set properly. Cut into bite-sized pieces and pop in a box to give as a present. Will keep, in a sealed container, for up to 2 months.

4 egg yolks, room temperature

1/4 cup all-purpose flour
5 egg whites, room temperature
1 pint premium-quality vanilla ice cream
2 tablespoons rum

Steps:

  • Position rack in center of oven and preheat to 450°F.
  • Butter a 1-quart soufflé dish and sprinkle with sugar.
  • Melt butter with chocolate, stirring until smooth.
  • Blend in ¼ cup of sugar, yolks, coffee mixture and vanilla; stir in flour (can be prepared several hours ahead and set aside at cool room temperature. Reheat before continuing.) Beat whites in large bowl until soft peaks form; gradually add remaining ½ cup sugar, beating, until whites are stiff but not dry.

  • Preheat the oven to 375°F Butter and flour the walls of two 9-inch round cake pans and then line each pan with a circle of parchment paper.
  • To make the cake, sift the flour, baking powder and salt together 3 times into a bowl or onto a piece of parchment and set aside.
  • In a mixer fitted with the whisk attachment, beat the butter on medium speed until its light and fluffy, 3 to 5 minutes. Add the granulated sugar and whip until it's blended.   • Meanwhile, make the frosting. In a mixer fitted with the whisk attachment, whip the butter on medium speed until it's light ans fluffy, 3 to 5 minutes. With the mixer on low speed, add the powdered sugar gradually. Mix in the melted chocolate, then the vanilla. Add the milk by spoonfuls until the frosting is spreadable but still thick and fudgy.
  • Remove the parchment from one of the cake layers and place the cake on a serving platter. Using an offset or small icing spatula, spread the top with some frosting. Place the second cake layer on the first, bottom-side up so the cake has a nice flat top. Remove the parchment and press down slightly to secure the layers. Frost the top and sides of cake.

1/2 cup butter
2 cups white chocolate chips (best quality 12-oz. pkg.)
1 (7 ounce) jar marshmallow creme
3/4 cup macadamia nuts, chopped
1 teaspoon vanilla extract
1/4 teaspoon coconut extract

Steps:

  • Line 9-inch-square baking pan with foil, extending foil over edges of pan.
  • Grease foil with butter.
  • Butter sides of 3-quart heavy-duty saucepan.
  • Combine sugar, coconut milk and 1/2 cup butter in prepared saucepan.
  • Cook over medium heat, stirring frequently, until mixture boils.
  • Clip a candy thermometer to side of pan, making sure the bottom of the thermometer does not touch bottom of pan.
  • Reduce heat to medium-low.
  • Continue boiling at a moderate, steady rate without stirring, until thermometer registers 238° F., softball stage (about 15 minutes).
  • Adjust heat as necessary to maintain a steady boil. Remove from heat.
  • Stir in morsels until melted and smooth. Stir in marshmallow crème, nuts, vanilla and coconut extracts until well combined. Transfer mixture to prepared baking pan; cool for 3 to 4 hours or until firm.
  • Lift from pan; remove foil.
  • Cut into 48 pieces.
  • Store tightly covered.

3/4 cup butter, softened
2 eggs
2 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups sugar
2 teaspoons vanilla
1 1/4 cups buttermilk or 1 1/4 cups sour milk
2/3 cup chocolate flavored syrup

Steps:

  • Allow butter and eggs to stand at room temperature for 30 minutes.
  • Meanwhile, grease and lightly flour a 10-inch fluted tube pan.
  • In a medium bowl stir together flour, baking powder, baking soda, and salt.
  • Set aside.
  • In a large mixing bowl beat butter with an electric mixer on low to medium speed about 30 seconds.
  • Add sugar and vanilla; beat until fluffy.
  • Add eggs one at a time. Add milk and flour mixture alternately. Beat on high for 2 minutes.
  • Reserve 2 cups batter.
  • Pour remaining batter into prepared pan.
  • In a mixing bowl combine chocolate syrup and reserved 2 cups batter.
  • Mix well.
  • Pour chocolate batter over vanilla batter in pan.
  • Do not mix.
  • Bake in a 350° oven about 50 minutes or until wooden toothpick inserted near center comes out clean.
  • Cool 15 minutes on wire rack.
  • Remove from pan: cool completely on wire rack.
  • Drizzle cake with Semisweet Chocolate Icing recipe #45105.

VANILLA NUT FUDGE

My son just loves this fudge. I believe it is from an old church cook book. It reminds you of a maple type fudge.

4 cups brown sugar
6 ounces Carnation Evaporated Milk
2 tablespoons butter
1/4 cup corn syrup
1/4 teaspoon salt
1 teaspoon vanilla
1/2 cup chopped walnuts

Steps:

  • Bring all ingredients except vanilla and nuts to a full boil and time boiling for 4 minutes.
  • Add vanilla.
  • Beat with electric mixer for 10 minutes.
  • Stir in nuts.
  • Spread into greased 8" pan.
  • Cut into squares before it cools completely.
  • Store in air tight container.

Water, vegetable oil and eggs called for on brownie mix box
1 package (8 oz) cream cheese, softened
2 eggs
1 vanilla bean, split lengthwise, seeds scraped (discard bean)
1/2 cup caramel sauce
1 tablespoon coarse sea salt

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 9-inch square or 11x7-inch pan with shortening or cooking spray.
  • In large bowl, beat Brownie ingredients with whisk as directed on box until smooth. Pour batter into pan; spread evenly.
  • In small bowl, beat cream cheese, eggs and vanilla seeds with electric mixer on low speed until smooth. Spoon over brownie batter in pan. Use knife to cut cheesecake mixture into brownie batter, creating slight swirl pattern.
  • Bake 40 to 45 minutes or until brownies pull away from sides of pan. Cool 10 minutes.
  • Spread caramel sauce over brownies. Sprinkle with sea salt. Cool completely, about 1 hour.
  • For bars, cut into 4 rows by 3 rows.

1 package white cake mix (regular size)
1-1/4 cups water
1/3 cup canola oil
2 large eggs
1 teaspoon vanilla extract
1/2 cup white baking chips, melted
FUDGE FILLING:
1 cup semisweet chocolate chips
3 tablespoons butter
2 tablespoons 2% milk
1/4 cup confectioners' sugar
2 tablespoons light corn syrup
1 teaspoon vanilla extract
MOUSSE TOPPING:
1-1/2 cups cold 2% milk
1 package (3.3 ounces) instant white chocolate pudding mix
1 carton (8 ounces) frozen whipped topping, thawed
1 teaspoon vanilla extract
Chocolate curls, optional

Steps:

  • Preheat oven to 350°. Grease a 13x9-in. baking pan. In a large bowl, combine cake mix, water, oil, eggs and vanilla; beat on low speed 30 seconds. Beat on medium 2 minutes. Stir in melted chips until combined., Transfer to prepared pan. Bake 25-30 minutes or until a toothpick inserted in center comes out clean. Meanwhile, in a small saucepan, melt chocolate chips and butter with milk over low heat. Stir in confectioners' sugar, corn syrup and vanilla until smooth. Spread over warm cake. Cool cake completely in pan on a wire rack., For mousse topping, in a large bowl, whisk milk and pudding mix 2 minutes. Let stand 5 minutes or until soft-set. Fold in whipped topping and vanilla until combined. Spread over cake. If desired, top with chocolate curls. Refrigerate leftovers.
