My husband told me one day "I hate salmon! It's so fishy." So I made it my mission to prove him wrong. We just got married and he hasnt had the chance to have my salmon patties! So I made some for him without him knowing I was using salmon. I told him I used canned chicken then he took the first bite and says this isnt chicken...

Number Of Ingredients 16

SALMON PATTY MIXTURE
1 large egg
6 oz pink salmon (canned)
3 Tbsp garlic salt
2 Tbsp black pepper
1/3 c minced onion (dried)
5 Tbsp sugar
1 c shredded munster cheese
1/3 c yellow mustard
1/2 pkg saltine crackers
3 Tbsp pimiento's
OPTIONAL SAUCE (THIS IS A THIN SAUCE)
1/3 c apple juice
1/3 c ketchup
5 Tbsp lime juice
FOR COOKING YOU WILL NEED OLIVE OIL FOR YOUR PAN

Steps:

  • 1. Salmon Patty-In a large bowl combine the "Salmon Patty Mixture" ingredients together. This will be a little dry.
  • 2. Sauce-If your making the sauce combine all ingredients together in a small seperate bowl.
  • 3. Cooking!- Use a frying pan on your stove top. Set the heat to medium high and give a splash of olive oil in the pan. When you can start to see the olive oil thinning it should be warm enough to cook with. Roll your salmon patty mixture into balls of your desired amount. I would not go any bigger than a 3 inch ball. Then flatten the ball in your hand to about 1/4 to 1/2 inch thick. Let it cook on one side for about 5 minutes. The patty should have golden brown spots and be crispy on the one side. Flip and cook 5 minutes on the other side. Adjust temps on the stove top to achieve a more crunchy and toasted look to the patty.
  • 4. Serves- About 2-3 people Perfect side's for lunch- Baby dill pickles!!! Perfect side's for dinner- Mac & cheese, Salad

The sweet from the honey, and the little spice from the pepper.

2 - 12 in cedar planks, untreated
1/4 cup(s) pineapple juice
1/3 cup(s) soy sauce
2 tablespoon(s) white vinegar
1 tablespoon(s) olive oil
2 tablespoon(s) lemon juice
3/4 cup(s) honey
1/4 cup(s) packed brown sugar
1 teaspoon(s) ground black pepper
1/2 teaspoon(s) cayenne pepper
1/2 teaspoon(s) paprika
1/4 teaspoon(s) garlic powder
6 - 6 oz skinless boneless salmon fillets

Steps:

  • Soak the cedar planks in warm water for 1 to 2 hours. Add a splash of bourbon to the water if desired.
  • Bring the pineapple juice, soy sauce, vinegar, lemon juice, olive oil, and honey to a simmer in a saucepan over medium-high heat. Reduce the heat to medium-low, and stir in the sugar, 1 teaspoon black pepper, cayenne pepper, paprika, and garlic powder. Simmer, stirring occasionally, until the sauce has reduced to a syrupy consistency, about 15 minutes. Set the sauce aside.
  • Preheat an outdoor grill for medium heat. Place the planks on the grate. They are ready to cook on when they start to smoke and crackle just a little. Season the salmon with a light sprinkling of salt and pepper. Place the fillets onto the smoking cedar planks, close the lid of the grill, and cook for 10 minutes. Spoon a small amount of the sauce over the salmon fillets, and continue cooking until the fish turns opaque in the center, about 5 minutes more. Serve with the remaining sauce.
