This is my favorite oatmeal - I'll eat it for breakfast or lunch! Very filling and super tasty with the dried cranberries, almonds and orange marmalade. Be sure to add the dried cranberries right away as they rehydrate while cooking which makes them very flavorful. If I'm not that hungry I'll reduce the oats to 1/4 cup and leave the other ingredients the same. Milk can be substituted for water if desired - when we ate oatmeal as little kids it was because we were out of milk for our cereal, so I always make my oatmeal with water.... personal preference is everything! *Note: 1 tablespoon of Smucker's sugar-free orange marmalade has 10 calories WW points = 3

1/3 cup old fashioned oats
1/2 cup water
1 tablespoon sugar-free orange marmalade
1 tablespoon sliced almonds (toasted if you have the time)
1 tablespoon dried cranberries

Steps:

  • Mix all ingredients in microwave safe dish.
  • Microwave on high for 1 minute and stir, then microwave for another 2 minutes stirring every 30 seconds until your desired consistency is reached. In my 1200wt microwave it takes 2 minutes and 30 seconds for my liking - it does thicken a little as it cools.

2 cups all-purpose flour
1/2 teaspoon table salt
1/2 teaspoon ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon pure vanilla extract
3 tablespoons milk
2 large eggs
1/2 pound (2 sticks) unsalted butter, room temperature
1 cup packed light-brown sugar
1/2 cup granulated sugar
3 cups old-fashioned oats
1 cup dried cranberries

Steps:

  • In a medium bowl, whisk together flour, salt, cinnamon, baking powder, and baking soda. Set aside. In a small bowl, whisk together the vanilla, milk, and eggs. Set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine the butter with both sugars, and beat on medium speed until light and fluffy. Reduce speed to low, gradually add milk mixture, and beat well. Add the flour mixture, and beat until just combined. Remove bowl from the electric mixer, and stir in the oats and cranberries. Place dough in the refrigerator until firm, at least 2 hours or overnight.
  • Preheat oven to 350 degrees. Line several baking sheets with parchment paper, and set aside. Shape 2 tablespoons of dough into a ball; place on one of the prepared sheets. Repeat with the remaining dough, placing 3 inches apart. Press with the bottom of a glass to flatten dough into 2-inch-diameter rounds.
  • Bake until golden but still soft in center, 16 to 18 minutes, rotating halfway through. Remove from oven; transfer with parchment to a wire rack to cool. Store in an airtight container at room temperature for up to 1 week.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.

Another delicious breakfast from Quaker Oats. This one is my favorite yet! It's so much better than storebought oatmeal mixes, and if you use soy milk it's dairy-free! I've also tried using part soy milk and part water to make it a little lighter and using brown sugar in place of the maple syrup, and it still turned out great!

3 1/2 cups milk or 3 1/2 cups soymilk
1/4 teaspoon salt (optional)
2 cups oats (quick or old fashioned, uncooked)
1/2 cup dried cranberries (such as Craisins)
1/3 cup maple syrup
1/4 cup toasted wheat germ

Steps:

  • In medium saucepan, bring milk and salt to a gentle boil (Watch carefully).
  • Stir in oats, cranberries, and maple syrup.
  • Return to a boil; reduce heat to medium.
  • Cook 1 minute for quick oats, 5 minutes for old fashioned oats or until most of milk is absorbed, stirring occasionally.
  • Let stand until desired consistency.
  • Stir in wheat germ.
  • Spoon oatmeal into four cereal bowls.
  • Drizzle with additional syrup, if desired.
  • Serve with milk or yogurt, if desired.
  • MICROWAVE DIRECTIONS: In 3-quart microwaveable bowl, combine all ingredients except wheat germ.

I made a few changes to a recipe on the back of a canister of oats. Now this is the only one I use. I often use hazelnuts in place of the pecans, and they are just as good. I hope you enjoy them as much as we do. You can make these larger or smaller; simply adjust the baking time. Keep loosely covered, and they will maintain their chewiness for several days, if they last that long.

1 cup unsalted butter at room temperature
1 ½ cups light brown sugar
2 teaspoons vanilla extract
2 large eggs
2 cups old-fashioned rolled oats
1 ½ cups all-purpose flour
1 teaspoon baking powder

1 ½ teaspoons coarse kosher salt

½ cup dried cranberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place an oven rack in the upper third of the oven. Line baking sheets with parchment paper.
  • Place unsalted butter and light brown sugar into the work bowl of a stand mixer and mix on medium-slow speed until very fluffy, 3 to 4 minutes. Beat in the vanilla extract, followed by eggs, one at a time. Reduce mixer speed to lowest speed and leave running.

These cookies that I adapted from another recipe call to mind ones my mother used to bake. Instead of stirring in raisins like she did, though, I add bright red cranberries for festive flair.
