Miracle Salmon Loaf image

I got this recipe from a 26-year-old issue of 'The Workbasket' magazine. I don't know the particular reason the original submitter named it 'Miracle' Salmon Loaf, but I have made it and can attest that it is quite good, - flavorful and moist. 1/2 c mayonnaise
1 c cream of celery soup, undiluted
1 egg, beaten
1/2 c chopped onion
1/4 - 1/2 c chopped green pepper
chopped jarred pimento to taste
1 Tbsp lemon juice
1 tsp salt
2 c salmon, fresh cooked or canned, flaked
1 c soft, fine bread crumbs

Steps:

  • 1. Combine mayonnaise, soup, egg, onion, green pepper, pimento, lemon juice and salt. Add salmon and bread crumbs to mixture. Bake in a greased 3 x 5 inch loaf pan at 350 degrees for 45 minutes to one hour, or until heated through and flavors are blended.
