This is such an easy and delicious recipe for rolled cookies for your favorite cookie cutters. Not sure of the origin of the recipe, but we used it at a preschool where my children attended. It is simple and no-fail.

Number Of Ingredients 6

1 cup butter
2/3 cup sugar
1 egg
1 teaspoon vanilla extract or 1 teaspoon almond extract
2 1/2 cups sifted flour
1/2 teaspoon salt (if using unsalted butter)

Steps:

  • Cream together butter and sugar. Beat in egg and extract. Combine and add flour and salt.
  • Wrap dough well and chill or freeze until you are able to handle it easily. Can also make day ahead and place in fridge wrapped in plastic wrap.
  • To bake: Preheat oven to 350. Roll out and cut with cookie cutters. Place on either a greased cookie sheet or one lined with a silpat liner or parchment paper. Bake 8-10 minutes for thin cookies or 15 minutes+ for thick cookies or cookies on a stick. When they are lightly browned, they are ready. Cool on pan for 1-2 minutes, transfer to a cooling rack to cool completely before decorating. Use your favorite icing recipe.

POPE'S VALENTINE COOKIES

Rich and delicious cut-out cookies - wonderful for special holiday celebrations! These are the best cut-out cookies the long line of bakers in our family has ever found.

½ pound butter, softened
2 ½ cups sifted all-purpose flour
1 cup sifted confectioners' sugar
1 tablespoon milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F (170 degrees C).
  • Mix butter in a mixer until light, add remaining ingredients.
  • Knead until velvety. Roll one-half of the dough at a time to about 1/4 inch thickness using the smallest amount of flour possible.
  • Cut out and bake on a lightly greased pan for 12 minutes. Cookies will be almost white when cooked.

VALENTINE SUGAR COOKIES

These cookies are better than Grandma's! It's important to use both shortening and butter in this recipe. The butter makes them soft on the inside, and the shortening makes them crisper on the outside. To frost them, I use equal parts of butter and cream cheese, 1 tablespoon of vanilla, and enough powdered sugar to pull it together.

6 1/2 cups flour
1 tablespoon baking powder
1/2 cup butter
1/2 cup shortening
4 ounces cream cheese
2 cups sugar
3 eggs
1 cup sour cream
2 teaspoons baking soda
1 1/4 teaspoons salt
1 tablespoon vanilla

Steps:

  • Mix flour, baking powder and salt together. Set aside until ready to use.
  • Add butter, shortening, cream cheese, and sugar in a large mixing bowl and cream together for 3 minutes.
  • Add the eggs, sour cream. Mix completely.
  • Add in the baking soda, salt, and vanilla. Mix well.
  • Add the flour mixture and blend together. If dough is too moist, add more flour to accomodate.
  • Chill dough for about 1 hour.
  • Roll out the dough, cut in desired shape.
  • Bake in a 375 degree oven for about 8 minutes or until edges are slightly browned.
  • Decorate as desired with frosting and sprinkles.

2 stick butter, softened
2/3 c sugar
1 egg
1/2 tsp vanilla extract
1/2 tsp almond extract
2 1/2 c flour
1/2 tsp salt
OPTIONAL INGREDIENTS
1/2 tsp lemon zest
1 Tbsp cinnamon
2 Tbsp poppy seeds

Steps:

  • 1. Preheat oven to 350.
  • 2. Cream together butter and sugar add egg, vanilla, and almond extract, mix well.
  • 3. Sift together flour and salt. Add in one of the optional ingredients if using.
  • 4. Add dry ingredients to butter mixture and mix until just combine.
  • 5. Chill for 3-4 hours.
  • 6. Roll dough out to about 1/8 inch thicknes, cut into shapes and bake for 8-10 minutes (you want little to no color on them).
