1 lb lean ground beef
1/2 cup chopped onion
2 garlic cloves, minces
1 jalapeno pepper, seeded & minced
1 sweet green pepper, chopped
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried oregano
1 (10 ounce) can black beans, drained & rinsed
1 (28 ounce) can diced tomatoes
1/3 cup tomato paste
1 cup corn kernel
1 cup broken baked tortillas or 1 cup corn chips
3/4 cup shredded cheddar cheese
1 green onion, thinly sliced

Steps:

  • Using a very large nonstick ovenproof skillet, saute beef over medium-high heat, breaking up with a spoon, until no longer pink, about 5 minutes; drain off fat.
  • Add onion, peppers, seasonings and cook until softened, about 3 minutes.
  • Add beans, tomatoes & paste and bring to a boil; reduce heat & simmer, stirring occasionally, until slightly thickened, about 10 minutes.
  • Stir in corn and sprinkle chips & cheese over the top.
  • Bake in preheated 375F oven until cheese is melted, about 15 minutes; sprinkle with onion.

1 (12 ounce) package Velveeta shells and cheese dinner
1 lb ground beef
1 (1 1/4 ounce) package taco seasoning mix
3/4 cup sour cream
3/4 cup shredded cheddar cheese, divided
3/4 cup salsa
1/2 cup coarsely crushed tortilla chips

Steps:

  • HEAT oven to 400°F Prepare Dinner as directed on package. While Macaroni is cooking, cook meat with taco seasoning as directed on package.
  • STIR sour cream into prepared Dinner. Spoon 1/2 of Dinner mixture into 8-inch square baking dish; top with layers of meat mixture, 1/2 of Cheddar and remaining Dinner mixture. Cover.
  • BAKE 15 min.; top with salsa, remaining Cheddar and crushed chips. Bake, uncovered, 5 minute.

1 (14 1/2 ounce) can diced tomatoes, undrained
1/2 cup water
1 (1 1/4 ounce) package taco seasoning mix
3/4 cup sour cream, divided
6 ounces tortilla chips (7 cups)
1 1/2 cups shredded cheddar cheese
1 green onion, sliced

Steps:

  • Heat oven to 350 deg. F.
  • Brown meat in large skillet; drain. Return meat to skillet.
  • Add tomatoes, water and seasoning mix; stir. Cook 10 minute stirring occasionally.
  • Stir in 1/4 cup sour cream.
  • Place half the chips in 13x9-inch baking dish, cover with layers of half each of the meat mixture and cheese. Repeat layers.

1 can (19 oz) Progresso™ Vegetable Classics hearty tomato soup
1 can (15 oz) Progresso™ kidney beans, drained
1 can (11 oz) whole kernel corn with red and green peppers, undrained
6 cups tortilla chips
1 cup shredded Cheddar or Monterey Jack cheese (4 oz)
1 large tomato, chopped (1 cup)
1 cup shredded lettuce
1/3 cup sour cream

Steps:

  • Heat oven to 350°F. In 12-inch skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • Stir in taco seasoning mix, soup, beans and corn; heat to boiling. Reduce heat to low; simmer uncovered 8 to 10 minutes, stirring occasionally, until sauce is slightly thickened.

1 package (8 oz) refrigerated prechopped tricolor bell pepper mix
1 jar (16 oz) Old El Paso™ Thick 'n Chunky mild salsa
1 can (2 1/4 oz) sliced ripe olives, drained
3 cups shredded pepper Jack cheese (12 oz)
1 bag (11 oz) tortilla chips
1/2 cup unsalted butter, melted, cooled
2 cups shredded iceberg lettuce
1 cup diced tomatoes
1/4 cup sliced green onions (4 medium)
Sour cream, if desired

Steps:

  • Heat oven to 375°F. In 12-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked. Add onion and bell peppers; cook about 5 minutes, stirring occasionally, until tender.
  • Add salsa, olives and 1 1/2 cups of the cheese to beef mixture; stir gently to combine. Spoon into ungreased 13x9-inch (3-quart) glass baking dish.
  • Place tortilla chips in resealable food-storage plastic bag; seal bag and crush with rolling pin or flat side of meat mallet until coarse crumbs form. Add melted butter; seal bag and shake until combined. Sprinkle over beef mixture. Top with remaining 1 1/2 cups cheese.

  • Mix beans with cooked ground beef.
  • Layer ground beef in casserole pan.
  • Spread sour cream over beef.
  • top with shredded cheese.
  • cover with aluminum foil.

1 (16 ounce) jar taco sauce or 1 (16 ounce) jar salsa
salt and pepper
1 minced onion
1 (16 ounce) can refried beans
12 ounces sour cream
1 (6 ounce) can black olives, drained and diced
1 red pepper, diced
1 green pepper, diced
16 ounces shredded cheese, cheddar or 1 cheddar cheese, blend
1 (16 ounce) bag tortilla chips

Steps:

  • Preheat oven to 350°.
  • Season ground chuck with salt and pepper to taste.
  • Brown ground beef with minced onion.
  • After fully cooking ground beef add taco sauce (or salsa) and beans.
  • Layer mixture in the bottom of baking dish.
  • You probably will need a large one.
  • Spread sour cream on top.
  • Spread cheese on next.
  • Top with diced vegetables.
  • Cover with foil.
  • Bake for 15-20 minutes.
  • Remove foil and bake another 5 minutes, until cheese is melted and bubbly.
